One pot chicken pasta

 

As any home cook knows, the best recipes are the ones that combine as many of the following characteristics as possible:

  • Delicious – the family will eat it
  • Fast – not too much prep or cook time
  • Cheap – won’t break the budget
  • Easy cleanup – because who likes dishes?
  • Healthy – because duh

Luckily for you, this recipe combines all those things! In one pan, in under 30 minutes, using frozen, canned, and pantry items, you can have a family-pleasing, heart-healthy, budget and waistline friendly meal on the table.

Ingredients:

  • 2 large frozen chicken breasts (or thawed)
  • 2/3 cup lentils (or other bean if canned)
  • 1 can diced tomatoes
  • 1 cup water or stock
  • 1 pound pasta
  • 1 cup chopped veggies and/or fresh spinach
  • Seasonings of choice – I used garlic salt and some dried onion

Step 1: In a pan, combine the lentils, water, tomatoes, and chicken. Bring to a boil, then simmer covered. Cook for 10-15 minutes and turn chicken.

Step 2: Add the pasta (and more water if you need it) and bring back to a boil. Simmer covered another 7-8 minutes.

Step 3: Add in any fresh chopped veggies for the final 5 minutes or so of cooking.

The spinach I threw in last. You could also make this in a crock pot on low for several hours. Make sure the chicken is fully cooked (cut into it and be sure there is no pink) before serving.

If you want to turn this into a soup, you could do so easily by adding more water. If you want a thicker sauce, let boil uncovered a few minutes to thicken.

Turkey BLT – SNAP Meal

 

The BLT is a classic sandwich, and when turkey bacon goes on sale for $1.99 per pound, you cannot pass it up. With a garden supplying fresh greens and tomatoes, this sandwich is otherwise quite cheap. Even if you don’t have a garden, spinach is often on sale for $1 per pound, and one roma tomato is less than 50 cents.

You can of course use more or less bacon to taste, or omit it entirely if you are vegetarian/vegan. Alternatively, you can use strips of tofu which sometimes go on sale for $1 per pound. Just drain, slice it up, and fry in a pan.

Ingredients:

  • 2 slices of bread
  • 4 slices of turkey bacon
  • 1/2 roma tomato, sliced
  • 1 small handful baby lettuce/spinach

Step 1: Cut the bacon strips in half and fry in a pan. This should take 5-7 minutes per side.

Step 2: On the bread, layer the bacon, tomato slices, and lettuces. Enjoy!

I had my sandwich with a small handful of grapes growing wild behind my house. It actually made enough for two sandwiches, or one thick one.

Without considering the tomato and spinach, the cost is $0.33. If you make it into two sandwiches, the cost is $0.21 each. Even if you add in a few cents for the veggies, it is crazy cheap for a delicious and healthy lunch.

Better than take-out Beef & Broccoli

 

Ever want the addictive taste of Chinese take-out, but not want the MSG, additives, preservatives, sugar, salt, and calories??

The answer of course is, duh! Yes!

Good news! Making your own Beef & Broccoli at home is super simple, cheap, and nearly as fast as dialing and waiting for delivery. Try this easy weeknight favorite for yourself, and save the tip for a treat for yourself.

Ingredients:

  • 1 pound beef cubes (can use chicken or tofu too)
  • 1 bag frozen broccoli cuts (or 1 head fresh broccoli chopped)
  • 1 cup rice
  • 1/4 cup apple cider vinegar
  • 1/4 cup fish sauce
  • 1/4 cup soy sauce
  • Dash garlic
  • 1 inch piece of fresh ginger, or 1 tbsp ground ginger
  • 2 tbsp sriracha, or to taste

Step 1: Mix all but first three ingredients in a small bowl. If you have time, marinate the meat for 1-6 hours in refrigerator.

Step 2: Cook the beef in a frying pan 5-10 minutes until browned but not completely chewy. Meanwhile, use a sauce pot to boil rice, or a rice cooker.

Step 3: Add the sauce to the meat. Microwave the broccoli 3 minutes, or cook in the frying pan, covered, for 5-7 minutes.

Step 4: Mix beef and broccoli, serve over rice with extra sauce.

You can add cornstarch or a little flour if you like a thicker sauce, or add more water/fish sauce/vinegar for a thinner sauce. I added a little extra sriracha with servings because I like a little kick! Enjoy never having to stop for take-out again.

 

Vegetarian Breakfast Strata

I’ve said many times, and I’ll say it again, breakfast is the most important meal of the day.
I’ve also said many times that I love easy, make-ahead meals. This breakfast strata could be put together or baked the day before and stored in the fridge if needed. It is super simple and could incorporate any type of veggie or bean you prefer. You can make it completely vegan by using egg substitute and no cheese too.
 
Ingredients:
3 slices bread
1 can beans, slightly mashed
1/2-1 cup vegetable (spinach here)
8-10 eggs, beaten
sprinkle of cheese

Step 1: Lay the bread in an oven-safe pan sprayed with oil. Layer on the mashed beans, cheese and spinach.

Step 2: Add the egg mixture.

Step 3: I sprinkled more cheese on top. Bake at 350 for 45-50 minutes, until eggs are fully cooked.

Mmmmmmm! Hot, healthy, and protein packed breakfast. Actually this doesn’t necessarily have to be for breakfast, you could have this any time of the day.

Kidney bean and quinoa burgers

Well, this one came from a combination of boredom, hunger and a determination to not go to the grocery store this week. I had half a can of kidney beans in the fridge, and some googling brought up this blog’s recipe: http://sweetbeetandgreenbean.net/2009/02/04/kidney-bean-and-quinoa-burgers/

So of course I made my own version of it.

Ingredients:
1/2 cup kidney beans
1/2 cup quinoa
1/2 cup chicken stock
2 tbsp flour
1 tbsp olive oil
Garlic salt, burger seasoning, Nature’s Seasoning, and cumin

Step 1: Add the chicken stock to the quinoa and microwave for 10 minutes. Then add the rinsed and drained kidney beans, and microwaved another 10 minutes.

Step 2: Mash the beans and quinoa together, and add the spices, flour and olive oil.

Step 3: Put some oil in a frying pan, shape 4 patties from the mixture, and fry them for about 5 minutes per side, until golden brown.

Step 4: Drain the patties on a paper towel, and man they are delicious! 

You seriously need to try this. I put a patty on a slice of whole wheat bread with baby romaine and grilled bell peppers. Seriously, try it!

Lentil soup

Cooking with Herbs Lavender and Lovage
This soup was inspired by the place I waitress at for the soup base (which I forget the fancy name of) and a version which adds sausage. Omit it if you want something vegetarian. It is healthy and hearty, perfect for a nippy fall evening. It makes quite a bit, so be prepared to share, store or eat it for every meal for a few days!
Ingredients:
1 medium potato, diced
2-3 carrots, diced
1 can diced tomatoes
2-3 mild sausages, sliced (omit for vegetarian)
2 cups lentils
3 cups water or stock of your choice
3 celery ribs
1/2 medium onion
4 sprigs parsley
4 cloves garlic
a handful fresh basil
a few tbsp olive oil
black pepper to taste
 
1. In a large pot, get the water or stock boiling.
2. While heating the water, in a blender, combine the celery, herbs, onion, garlic and a few tbsp olive oil and liquefy into a paste. This is the base of the soup, and adds an indescribably fresh and delicious flavor!
3. Add the base to the pot, along with all the veggies and 2 cups of lentils.
4. Brown the sausage (loose or sliced, I cut mine into slices) in a pan. Add those to the pot.
5. Let the whole thing simmer at least 1 hour. Alternatively, you can put all the same ingredients into a Crock Pot on high for 4-6 hours.
6. Enjoy! It tastes even better after sitting in the fridge overnight or a few days!
