Recipes starring eggs (may or may not be vegetarian)

Breakfast Burritos for the Busy

I always say breakfast is the most important meal of the day. However I also understand mornings can be the busiest time of the day. This is why I have become quite talented at whipping up fast, hot, filling breakfasts in under 30 minutes. Sometimes, I even make several breakfasts I can leave in the fridge or freezer, then reheat and run out the door.

If you have a few minutes to spare in the AM or some time on Sunday to get ahead for the week, this a perfect idea to make filling your belly in the mornings easy. I made two, but you can scale this to whatever size you want.
.
Ingredients:
2 tortillas
2 eggs, scrambled
1/4 cup cooked beans (I used canned kidney)
1/2 cup veggie (sliced zucchini featured here)
2 slices cheddar cheese

Step 1: In a sprayed or non-stick skillet, cook the veggies (I’ve used peppers, onion, cauliflower, broccoli, zucchini, squash, carrots…). Add the beans just to heat them, then pour in the beaten eggs.

Step 2: Cook the eggs until fully done. Sprinkle on some salt or other seasonings if you like.

Step 3: Heat the tortilla for 10-15 seconds in the microwave, then add the cheese and half the egg mixture. Fold both ends of the tortilla in, then roll it up. I ate one that morning and saved the other for the next day.

Please do get creative, you could add refried beans, black beans, spinach, sriracha… the possibilities are endless so you never get bored. These are also a quite affordable source of some major protein.

What’s your favorite wrap combination?

Bacon & Egg Breakfast Biscuits

.
We all have heard how breakfast is the most important meal of the day. Yet busy mornings, waking up late, or a lack of energy in the a.m. can stymie any attempts to be culinarily courageous before noon. This recipe is an easy weekend project which can make a few dozen little bacon-wrapped breakfast packages you can store and re-heat for a quick breakfast on the go all week long. If you can keep yourself from eating them all at once.
.
Ingredients:
1 pound bacon
1 1/2 dozen eggs
2 packages biscuits
Shredded cheese (optional)

Step 1: Line some muffin tins with a strip of bacon.

Curl it around so the bacon makes a little cup.

Step 2: Crack an egg into each bacon cup. Cover with the biscuits. Add cheese if you want.

Step 3: Bake at 350 for ~40 minutes, until egg is cooked fully and biscuit is crispy and golden brown.

These little biscuits are absolutely perfect. The biscuits are buttery and crispy, the bacon is of course bacon, and it all comes together for a handheld protein powerhouse. The bacon does make it a little greasy so beware of that.

How do you get breakfast on busy mornings?

Steak & Eggs 2 ways

Men everywhere be jealous… I was moving and had 4 packs of frozen steaks I needed to use, so I had steak at every meal for 3 days straight. =) With baked potatoes and caramelized onions, in fajitas, and for breakfast, it was a very beefy few days and I loved it. Unfortunately I forgot to take pictures of the dinners, but trust me in that they were good enough to repeat sometime, so they may show up at a later date. Here are my 2 favorite breakfasts with marinated cow muscle…

Ingredients:
2 thin steaks
4 eggs
2 slices cheese (or 1/4 cup shredded)
2 tbsp worchestershire sauce
2 tbsp soy sauce
2 tbsp balsamic vinegar
(optional: 1 tbsp hot sauce and/or fish sauce)

Day 2: add a tortilla

Step 1: Marinate the steaks in worchestershire, soy sauce, fish sauce and vinegar overnight.

Step 2: Place steaks in a sprayed frying pan over medium heat. Cook about 5 minutes, until browned, then flip and cook another 2-3 minutes.

Step 3: Beat the eggs in a separate bowl, and add the cheese. Remove the steaks from the frying pan and add the eggs. Cook the scrambled eggs, stirring often, until the consistency you like.

Day 1: A steak separate from the eggs to enjoy one bite at a time.

Day 2: Cut the steak into slices before cooking. Wrap the steak and eggs in a tortilla and sprinkle the cheese on top.

Both ways are delicious, the tortilla has the added benefit of being slightly portable. The marinade is simple yet delicious and compliments steak well. Both a delightful protein-packed ways to make your taste buds feel pampered at breakfast. Or any time of day really. I wouldn’t be mad about this at dinner time.

Breakfast Pitas

A friend had bought several wheat pitas and didn’t want them all so she gave me a few. Being that I was moving in three days and didn’t have much food left in the fridge, I used up the rest of my eggs to make breakfast pitas! So between this post, my breakfast strata, country-style skillet and short cut, you have no excuse to not be well-fed in the mornings!

Ingredients:
1 wheat pita
2 eggs
1 tbsp sriracha
1/4 cup shredded cheese

Step 1: Break the eggs into a sprayed frying pan and cook until whites harden. Flip and cook on the other side another 2 minutes.
Step 2: Cut one half of the pita open to create a pocket. Stuff the cheese into it, and then the cooked egg on top.
Step 3: Squeeze on a little bit of sriracha (or Tabasco, or salsa, whatever). Then fold one open end over, rolling the pita into a little football-shaped taco. Enjoy!

The nice thing about pitas is that they are portable, and more spill-proof than burritos, which tend to leak out the end.

Breakfast Strata

This breakfast strata is filling, delicious, cheap and surprisingly easy and customizable. All your typical breakfast favorites make an appearance: eggs, milk, bread, cheese. Then you add in some breakfast meats if that’s your thing (bacon, sausage, ham) and/or some vegetables if you like that sorta stuff (spinach, onion, peppers, asparagus), bake it up nice and warm and gooey and enjoy! Whatever you like and have on hand can be mixed in. This turned out divine!

Ingredients:
6-8 eggs, lightly beaten
2 slices bread
1-2 cups cheese (cubed, sliced or shredded)
1/4 cup milk
4 slices ham (or bacon or crumbled sausage)
1/2 cup chopped spinach

Step 1: Beat the eggs and add the milk, mix well. Lay the bread in a sprayed 8×8 oven safe pan.

Step 2: Layer the meat, veggies and cheese on top of the bread.

Step 3: Pour the eggs over top.

Step 4: Bake at 350 for about 40 minutes, until the eggs are fully cooked. Let it cool a few minutes, cut into pieces and enjoy!

Tastes even better than it looks, which is pretty darn good!

The bread is slightly mushy but holds texture, and the flavor combination was just perfect. This can easily be vegetarian, but it’s just not the same without eggs so I’m not sure if it can be vegan. Maybe a tofu egg substitute? I’ll have to dabble more in vegan cooking in the future.

Faster breakfast skillet: Corned beef hash & eggs

This is the short-cut version of my breakfast skillet recipe. Because sometimes we have an extra 10 minutes in the morning, but not 30. By using canned beef & potatoes you eliminate the time needed to dice up and pre-cook the potato.

Ingredients:
1 can corned beef hash
2 eggs

sprinkle shredded cheese

Step 1: Open the can and put it in a frying pan. Doesn’t that look tempting? Haha… but we will eat it anyways!

Cook the beef and potatoes about 5 minutes, until the potatoes start to crisp and turn brown. Put half the mixture into a bowl and save the other half.

Step 2: In the same pan, spray with cooking spray and crack 2 eggs. Cook a minute until the whites harden. Flip the eggs and cook on the other side. If you like runny yolks, you can cook just a minute and place on top of your beef hash. I like my yolks cooked through so I left it in the pan about 5 minutes total.

Step 3: Slide the eggs on top of the hash and sprinkle on some cheese if you like.

I’m sure the health level of this is questionable at best, but you can’t beat it for a hearty, stick-to-your-ribs breakfast in only 10 minutes!

Country style breakfast skillet

Weekends are great for me, because I can both sleep in AND have lots of time for cooking awesome breakfasts. I’m not normally a ‘breakfast person’, but sometimes the mood strikes and I want something big and filling and delicious in the AM. I had plenty of potatoes, that’s usually a staple in my breakfast favorites. I also had some frozen turkey bacon (go ahead and groan, any males reading this, but it tastes delicious. As long as you don’t expect ‘real’ bacon taste) and ground beef. Kind of just making it up as I went, I came up with a restaurant-worthy breakfast skillet.

Ingredients:
1 pound ground beef
1/2 pound turkey bacon (go ahead and use real if you have it)
1/2 cup corn or other veggie (if you like that kind of thing)
2 potatoes, diced
1/2 onion, diced
4 eggs
Spray on vegetable oil or 2 tbsp oil

Step 1: Dice up the potato and onion, spray the pan with oil. Microwave the potato for 5-8 minutes to soften. Cook on medium heat for at least 10-15 minutes, until the onion and potato chunks are soft.

Step 2: Cut up the bacon and add it and the ground beef to the pan. Cook until the ground beef is thoroughly browned. Add vegetables if you’re using any. Transfer the cooked skillet to another bowl and keep warm.

Step 3: Spray the pan again and add 2 eggs. Let them cook a few minutes, until the whites thicken. Carefully flip them to cook the other side.

Step 4: Put about a cup of the skillet mix into a bowl, slide the cooked sunny-side up eggs on top. Viola!

This was amazingly delicious, hearty and filling. If I had the time, I’d make breakfast like this every day! But then I’d also probably weigh 50 pounds more than I do now… Anyways, enjoy!

Salmon Latkes

When you have a mission to eat only (or at least mostly) food you already have for a month, it is certain that you will come up with some… interesting… combinations. That is exactly what I’ve decided to do, due to moving situations, I have 2 boxes of canned/boxed food and handfuls of frozen meat that I am determined to get through. Since pork chops and rice can only be tolerated so many days a week, I decided to get creative with tonight’s dinner. I had some frozen fish fillets and most of a 5 pound bag of potatoes, so I said, self, salmon patties are delightful, and latkes are good. What happens when I put a fish inside a baked potato patty? Turns out, something quite delicious happens.

Ingredients:
2 small potatoes
1 large salmon filet (8-10 oz)
2 eggs
1 1/2 cups spinach
2 tbsp sour cream (optional)
2 slices old bread, torn up
2 inch square chunk feta (you can use whatever cheese you like, or none at all)
Garlic salt
Paprika
Parsley

Step 1: Wash the potatoes, poke holes all over with a fork. Microwave 6-8 minutes, until slightly soft. Then dice and boil another 8-10 minutes until mashably soft. (That’s a word now.)

Step 2: Microwave the salmon 2 minutes per side and cut into small pieces.

Step 3: Mash the potatoes in a large bowl. Add the salmon pieces.

Step 4: Put all remaining ingredients into a bowl and mash together well. I just dug right in with my hands.

Step 5: Get about 1/4 cup oil hot in a frying pan over medium heat. Form palm-sized patties with the salmon-potato mixture. Place into the oil and enjoy the sizzle. Cook about 5-7 minutes per side, until nicely browned and cooked through.

These were delicious, it really is like a mashed potato with a slightly fishy flavor. You can add whatever other spices you like, take out the spinach, add other veggies if you want. If you want it vegetarian, just take out the cheese, sour cream and egg, and use some of the potato cooking water to hold it all together. I guess technically the salmon makes it pescatarian. Maybe lacto-ovo if you leave the egg and sour cream. You can also use bread crumbs, cooked old rice, or oats as a binding agent if you don’t want bread or the potatoes.

I topped these with salsa, sour cream, and sriracha and served over a bed of mixed baby greens. Yum!

Grilled ham, egg & cheese

I wanted something different for breakfast one morning, and had a craving for grilled cheese. Eggs are highly recommended as a breakfast food to keep you full longer, so I figured I’d put an egg on it too. Something seemed to be missing, and when I realized I had sliced ham in my freezer the perfect breakfast had taken shape!

At less than 10 minutes to make, this hot, melty breakfast sandwich is perfect any day of the week.

Ingredients:

  • 2 pieces bread
  • 2 tbsp butter
  • 1 egg
  • 1 slice ham
  • 1 slice cheese

Step 1: Butter one side of both pieces of bread and begin heating a small frying pan on medium.

Step 2: Crack the egg, you can beat it if you like scrambled or leave the yolk if you like it messier. Spray the pan and pour in the egg. Let cook until nearly solid, then flip and cook 1 minute on the other side.

Step 3: Put one slice of bread butter-side down in the pan, the egg on top of the bread, ham and cheese on top of the egg. Top with the other bread slice, butter-side up.

Step 4: Cook for ~2 minutes, until bread is brown and toasty. Flip with a spatula, and cook on the other side until golden brown. Slice diagonally and enjoy!

If I had the ingredients, I would probably add tomato or avocado too, just to see what it was like. This was melty, cheesy, hot and delicious!

Hearty Mexi-Breakfast Burrito

One day I planned on walking to class in the morning. It was really cold, and I woke up a little later than I planned. But I was starving, and wanted a good breakfast, so I spent the 10 minutes to whip up this filling delight, wrapped it in foil and took it on the road! It was creamy, hot, tangy, and amazing in every way. Totally worth the short amount of time it takes to make.

Ingredients:
1 flour tortilla
1/4 cup black beans
1/2 avocado
3 tbsp salsa
2 tbsp green onion
2 eggs
1/4 cup cheddar cheese

Step 1: Scramble 2 eggs and cook until done. While cooking, heat the beans & tortilla in the microwave for 15 seconds.

Step 2: Put the egg on the tortilla with the beans, add chopped avocado, onion, salsa and cheddar.Fold up one end, wrap one side and then the other. Make sure it’s nice & tight. Then wrap the burrito in foil and you have a hot breakfast to go!
