Parmesan popcorn

.
I am a huge popcorn addict, I can literally eat about five microwave bags in one night. But stovetop popcorn is the best! It’s healthier, cheaper, and you get to decide how much to make. There is nothing else like it. Toppings can kick the popcorn up a notch, and cheese is always super delicious! Best part, it is pretty healthy overall.

Ingredients:

  • 1/4 cup vegetable oil
  • 1 cup popcorn kernels
  • 2 tbsp butter flavored salt
  • 1 cup grated parmesan cheese

Step 1: Put the oil, kernels and salt in a pan (one you don’t mind ruining…) and put the heat on high. Make sure you shake and swirl the pan often, especially once the kernels start popping.

Step 2: Once the kernels slow down and you count 3-4 seconds between pops, turn the heat off. Wait until you don’t hear any more popping, and pour into a large bowl.

Step 3: Coat the popcorn with 1/2 cup of the cheese, and proceed to inhale it.

Once you get about halfway through, add more cheese and shake to cover. The picture is what was left after 20 minutes of devouring, I wanted a picture for this blog before demolishing the rest! A great movie night snack. I imagine other types of grated cheese would also be delicious, and I have heard that adding spices like garlic or cayenne is tasty too.

Tilapia & stir fry

.
So I am still in a spending hiatus where I do not spend anything. Therefore for dinner I had to take stock of my pantry, fridge and freezer, and come up with something healthy, easy and quick. In my apartment I had:
Tilapia: 5.99 for 6 fillets = $1/fillet
Wild rice: 1.29 for 1 microwave serving
Frozen stir fry veggies: $1 for 16 oz bag
.
Other miscellaneous ingredients:
Red Thai curry spice = $3.50 for a bag full
Lemon juice: $1 for 12 oz. bottle
Vegetable oil: $9 for a gallon
.
Step 1: In a medium frying pan, put 2 tilapia fillets straight from the freezer, with 2 tbsp. olive oil and about 4 tbsp lemon juice. Simmer on lowest heat covered for about ten minutes or until fish turns white and bottom browns.
.
Step 2: Flip once, sprinkle a pinch of spice onto the bottom. Add more oil or lemon juice if needed. Simmer another 5 minutes or so to brown the top. Always keep covered and don’t burn it. Remove to a plate and keep warm.
.
Step 3: Steam the rice in the microwave for 2 minutes. In the same pan, add 1 more tbsp oil and a cup of frozen veggies. Cover and steam for about 5 minutes or until veggies thaw and soften. Add in the rice, mix well. Serve 1 fillet over half the stir fried rice.
.
Total: $2 (2 fish fillets) + 1.29 (rice) + 0.20 (1 cup of veggies) + ~0.10 (spices and liquids) = $3.59 for 2 servings. Not bad!

Hearty Fruit & Nut Toast

Breakfast is reportedly the most important meal of the day. I know I function best with a full stomach right off the bat. But we rarely have time to cook a well-rounded, 30 minute breakfast, enjoy it and clean up, and still get to work on time, right? So I came up with some better alternatives. You only need a few minutes to throw these together, and they are even portable (as long as you bring a napkin as well and maybe don’t mind peanut butter on your car seat…)

#1: Strawberry almond delight
Toast a piece of wheat/whole grain bread to your liking. Spread with 1 tbsp strawberry jam. Sprinkle a handful of slivered almonds on top.

#2: Elvis toast
Toast 1 piece of bread. Spread with 1 tbsp peanut butter. Top with sliced banana. (This one’s my favorite!)

#3: Mediterranean breakfast on-the-go
Toast 1 piece bread. Spread with 1 tbsp Greek yogurt. Top with thin slices of pear or grapes. Drizzle a little honey on top.

#4: Sweet treat
Toast a slice of bread. Spread with 1 tbsp Nutella. Top with sliced pear or other fruit.

These are just the ones I’ve tried, of course the possibilities are endless. Try blueberries and crushed walnuts with almond butter, or applesauce and raisins with some flax sprinkled on top.

The point is to try to use spreads which are low in fat and pair with at least 1 fruit and 1 type of nut if you can. Start every day this way and I’ll bet your mood and productivity increase, and your weight will likely decrease because you will be less hungry later on in the day!

Spinach fruit & nut salad

.
Well as you may remember, I am eating healthier this year. Working out has been kind of off and on due to sickness, school visits, and I admit, laziness. I have been pretty good about eating better overall though. So today I decided to make a super healthy salad.
.
Spinach is one of the best greens out there, with tons of vitamins, antioxidants, and fiber. Then I added some fruit for natural sweetness, and nuts & seeds for healthy fats. The only thing that could make this better is some grilled chicken breast to top it off!
.
Ingredients:

2 cups fresh, washed spinach
1/2 kiwi
4-6 strawberries
1 roma tomato
1/4 cup walnuts
1 tbsp. sunflower seeds
Balsamic vinegar & olive oil

Step 1: Cut the peel off the kiwi and cut into slices. Slice the strawberries as well.

Step 2: Put a big pile of spinach leaves on a plate, cover with diced fruits & nuts. Add dressing, enjoy!
Here’s to eating healthy and enjoying it for life!

Caprese Pasta

If you’ve never had a Caprese Salad, you’re missing out. Layer toasted french bread, thick slices of fresh tomato and mozzarella cheese and fresh basil leaves. Drizzle with olive oil and balsamic vinaigrette, and you have a simple and delicious summer treat.

I decided to adapt that idea into a pasta dish. I have a Basil plant which is on its last leg, some cherry tomatoes from my a friend’s garden, pasta in the pantry, and chicken in the freezer. All I had to buy is the mozzarella.

Ingredients:
1 boneless skinless chicken breast (omit for vegetarian)
3 garlic cloves
1/4 cup butter
1 1/2 cup pasta (garden mix rotini)
1 1/2 cup cherry tomatoes, sliced in half
Handful of basil leaves, rinsed
1/4 cup mozzarella

Boil enough water to fully cover pasta. Once at a rolling boil, add in the pasta. While the pasta is cooking, melt a few tbsp butter in a frying pan. Cut the chicken breast into chunks. Fry on low heat until the chicken is fully cooked, no pink in the center. Add in diced garlic cloves and turn off heat.
Once pasta is al dente, about 8-10 minutes, drain and put back in the pan. Add the cooked chicken and garlic to the hot pasta. Use the now vacant pan and add cherry tomato halves, a little more butter, basil leaves and cheese cut in cubes. Stir until cheese melts and everything is well mixed. Pour over the pasta and chicken. Mix well and enjoy!

Taco Salad!

When you’re hungry for Mexican but don’t want to go out, don’t have much time, want to eat healthy, or don’t want too many ingredients (or all of the above), you can’t beat a Taco Salad. Quick and easy, it can be as healthy or unhealthy as you want it.

Having just moved into a new apartment, most of my kitchen is not yet unpacked. Besides that, I don’t have an oven. I know, shocking. That eliminated about 1/3 of my cooking repertoire. However, this tasty salad requires only one pan, and little effort, so you can make it happen in under 20 minutes.

Ingredients:
1 head romaine lettuce, or 1 bag pre-cut mix
1-2 tomatoes
Doritos
Shredded cheese, preferably cheddar or Mexican mix
Catalina dressing
1 lb. ground beef
Taco seasoning
1/2 cup water
Black olives (optional)

Step 1: Brown the ground beef in a skillet. Drain off the excess fat, and add 1/4 cup taco seasoning and 1/2 cup water slowly, stirring it all together. Leave on low heat for about 10 minutes to allow the seasoning to cook into the beef.

Step 2: While waiting, chop up the Romaine and tomato and place in a large bowl. When all seasoning is cooked in, pour taco meat over top. Sprinkle on the cheese, crush up a few handfuls of Doritos, and douse with Catalina dressing.

The Doritos give it a cheesy crunch and the dressing is just enough tang, while the sweet works with the spice of the taco seasoning. It is so tasty! Obviously, if you go heavy on the lettuce and tomato and light on the beef plus nix the Doritos and dressing, it is much healthier. But where’s the fun in that? 😉

What’s your favorite salad topping?

Stocking your pantry + Tortilla Soup

To make easy, delicious meals on the cheap and quickly, it is vital to have your pantry stocked with a few key ingredients. These staples are the things which keep for a long time and are versatile in many dishes, like grains and canned foods.

Here is a list of things I always try to keep in the house:

  • Rice (white and/or brown)
  • Potatoes
  • Pasta (various kinds, usually at least one straight pasta and 2 shapes)
  • Bread
  • Eggs

Canned:

  • Tomato sauce, paste
  • Pasta sauce
  • Diced tomatoes
  • Corn
  • Green beans
  • Beans (Black, kidney, chickpeas, chili)
  • Tuna
  • Chicken
  • Salsa

One of the best, easiest Crock Pot recipes using cupboard staples I know is Tortilla Soup. It is perfect for a busy day, just open a few cans and throw them in the Crock Pot. You can let it simmer all day, then come home to a hot and filling meal!

Ingredients:
1 can corn
1 can kidney beans
1 can black beans
1 can diced tomatoes
1 can of chicken (optional)
1 jar salsa
1 cup cooked white rice
6 cups water
Literally, just dump all the ingredients in the crock pot. I added some dried onion flakes and oregano too. Then just let it simmer until you’re hungry! This tastes great with some cheddar cheese melted on top. You can also fry up some tortillas and put crisps on top. This does make quite a bit, so be sure to have some people to share with, or freeze individual portions for lunches all week.

Shrimp, broccoli, and carrot fetuccini

.
I grew up with this dish, so it holds a special place in my heart and palate. It is so easy, but so perfect together.
.
This is one of my absolute favorite quick & easy dishes because the flavors complement each other so well. Shrimp, carrot, & broccoli fettuccine with garlic butter.
You will need:
1/2 pound of noodles (I use plain straight pasta)
2 cups peeled and deveined shrimp
4-5 large carrots
1 1/2 cups broccoli
Butter
Garlic
Salt
.
Step 1: Thinly slice the carrots (your choice to peel them or not). In a skillet over medium heat, melt about 2 tbsp. of butter and add the carrot slices. They will need to cook until soft to a fork, about 15 minutes.
This is my friend Aris putting his cut-up carrots into the skillet.
Step 2: While carrots are cooking, bring water to a boil and add the pasta of your choice. Amounts always depend on how many you’re cooking for. For one person, a 1/2 pound should be plenty with some left over.
.
Step 3: When the noodles are about done (al dente = soft but not total mush. If thrown at a wall, the noodles should stick. Seriously. Try it.) and the carrots are soft when poked with a fork, add the broccoli to the carrots. Sprinkle on some garlic and salt to taste (or garlic salt, for those who are impatient).
.
Step 4: If you have pre-cooked shrimp they are the fastest and the last thing to cook. Throw those in a skillet with about 2 tbsp butter to get nice and pink. When the shrimp is pink and warm throughout, and the broccoli has become tender to a fork, you can put all 3 into one skillet until the pasta is done and drained.
.
Step 5: Drain the pasta, and pour the shrimp, carrots and broccoli on top. Add in as much butter, garlic and salt as your palette and stomach can handle, and enjoy!
