Homemade Chipotle

Cooking with Herbs Lavender and Lovage
Chipotle is one of my absolute favorite “fast food” places for several reasons. They encourage responsible practices, local and healthy food, quality, plus it is just dang delicious. However, even the best intentioned company makes some compromises to be large scale, and I always prefer making food myself so I know what’s in it and can control the portions. Plus, though $6.95 seems pretty cheap, more than once a month or so isn’t practical.
Therefore, I decided to make my own version of my favorite, the chicken burrito bowl. A website called Chipotlefan.com has recipes for several Chipotle favorites. I used their recipe for the chicken marinade, with a few variations of my own. Then I made my own version of the fresh tomato and corn salsas based on memory, and the cilantro lime rice. Try it yourself, it isn’t exact, but it is close and Delicious!

Chipotle Chicken:

1 (7 ounce) can chipotle pepper in adobo sauce (remove chipotle peppers, skim out seeds)
2 tsp fresh ground ancho chili powder
1 teaspoon black pepper
2 teaspoons cumin powder
2 tbsp powdered garlic
2 teaspoons sea salt
1 quarter red onion
1/4 cup oil (canola/vegetable/olive)
Boneless skinless chicken breast or tenders

Step 1: Mix all marinade ingredients in a blender/food processor. Add oil until it’s slightly pourable.
Step 2: Poke holes in chicken, and pour marinade over chicken. Let marinate in the refrigerator for at least one hour up to 24 hours. The best way to cook the chicken is to grill it, but you can cook it in a frying pan with a weight on top as well.

Spiced Pinto Beans:

1 can pinto or kidney beans, drained
1/2 cup water
3-5 bay leaves
1 tbsp cumin
1 tbsp garlic powder

Step 1: Drain and rinse the beans, pour into a pot. Add spices, simmer on very low for 10-60 minutes, stirring occasionally to ensure the beans don’t stick.

You can add a bit of bacon here too, if you have it and like that kind of thing. Chipotle has changed their recipe to make it vegetarian, so no bacon included.

.
Cilantro-Lime Rice:

1 cup rice
1 1/2 cup water or chicken bouillon
1/4 cup chopped fresh cilantro
1/4 cup lemon juice
1/4 cup lime juice
Sea salt
.

Step 1: Boil the rice or prepare as directed.

Step 2: When cooked, add the cilantro, salt and juices, fluff with a fork.

Finished rice, ready to be mixed
Corn Salsa:
1/2 cup corn
1/4 red bell pepper
Pinch fresh cilantro
Splash lemon juice
1/8 red onion
Step 1: Blacken the corn in a skillet or grill.
.
Step 2: Dice the pepper & onion, add to the corn with the cilantro and lemon, mix well.
.
For extra spice, take one of the chipotle peppers from the adobo sauce and dice it up to add, or use a fresh seeded jalapeno.
.

Fresh Tomato Salsa:
1 large tomato, diced
1/8 red onion, diced
1/4 red bell pepper, diced
Handful fresh cilantro
2 tbsp lemon juice
1 tbsp lime juice
Sea salt
.
Step 1: Mix the diced tomato, onion, pepper, cilantro and juices. Add a grind or two of salt to taste.
.
Refrigerate both salsas until ready to serve.

Beans and rice, ready for assembly.

Finished plate. Can make it into a burrito, tacos, or a bowl.

I tore up a few large romaine leaves and put the rice, beans, chicken and both salsas on, with a sprinkle of cheese on top. It was deliciously fresh tasting! It is on the spicy side, so if that’s not for you then dial down the seasonings and forget about the chipotle peppers in adobo. For vegetarians, ditch the chicken and marinate some tofu, add some guacamole, or other grilled veggies. Enjoy!

Inside-out stuffed peppers

.
I have to credit this post to my friend Maribeth. She is also an excellent cook, and is allowing me to post this recipe here. We both needed some serious girl-talk time, so cooking dinner together and enjoying some wine was of course the natural choice. This is her recipe.
.
Ingredients:
  • 1 green bell pepper
  • 1 box rice pilaf
  • 1 lb ground beef
  • 1 onion
  • 2 tbsp pesto
  • 1 tbsp diced garlic
  • 1 cup Spaghetti sauce
  • black pepper
Step 1: Dice the onion into small pieces and the bell pepper into strips.
Step 2: Cook the ground beef fully, then add the onion, pepper and garlic. Cover tightly and steam for about 10 minutes, until pepper is fully cooked. (You can of course omit the ground beef or use tofu instead for vegetarians.)
Step 3: Meanwhile, cook the rice pilaf according to instructions. Once peppers are soft, add the rice and pesto and mix well.
Step 4: Season to taste with black pepper and any other seasonings you like.

Step 5: Scoop a big pile onto a plate, and cover with the sauce.
Step 6: Try to stop yourself from having seconds!

Inside out stuffed peppers. Delicious!

Easy Slow Cooker Chicken & Rice Casserole

.
Slow cookers are amazing, because you just put dinner in, go off to work or class, and come home to a fresh hot meal. I had a busy day planned, so I decided to use up some freezer food and make dinner a snap: I would make chicken casserole in the Crock Pot.
.
Ingredients:
  • 2 boneless, skinless chicken breasts
  • 1 bag frozen vegetables
  • 1 cup rice
  • 1 can cream of chicken soup
  • 1/2 cup water
  • Seasonings (Nature’s, black pepper and garlic)
Step 1: Put the chicken on the bottom of the sprayed pot.
Step 2: Mix rice & water, pour in.
Step 3: Cover with cream of chicken soup.
Step 4: Add the frozen veggies.
Then just cover tightly and cook on low for 6-8 hours. Make sure the chicken is cooked all the way through before serving. Makes about 4 servings. Simple, cheap, quick. Enjoy!

Vegetarian Stir Fry

This is one of my favorite go-to meals because:
a) it is quick
b) it is easy
c) it is cheap
d) it is different and delicious every time!
Stir fry is great because it is so versatile. Basically it’s rice and whatever else you want to put in it! I’m sure I will be stir frying a LOT this summer, because I’m working on an organic CSA farm (http://www.facebook.com/schoonerfarms) and will have a ton of fresh veggies once the growing season gets into full swing. Also, I’m trying to eat at least 2 full days a week vegetarian, for health purposes. So anyways, here is the stir fry du jour.
Ingredients:
1/2 cup white rice ($2 for 24 oz)
2 large baby bella mushrooms ($1 for the pack)
Handfull snow peas (Free from the farm)
1/2 red bell pepper, chopped ($1 for pepper)
1/2 large carrot, shredded ($1 for 1 lb bag)
1/2 cup small broccoli pieces ($1 for a head)
1 stick celery (~1 for 2 lbs)
2 tbsp each soy sauce, olive oil, Worcestershire sauce
Garlic salt
Total cost: ~$2

Step 1: assemble ingredients, put oil in a frying pan on low. Boil water for the rice.

Step 2: Dice up all the veggies while the rice cooks.

Step 3: Begin cooking veggies, toughest one first. I put in the broccoli for about 2 minutes alone, then the celery and peppers, then the carrots and peas, and finally the mushrooms. It helps to add a few tbsp water and cover tightly to steam them for a few minutes.

Step 4: Add the cooked rice and sauces, fry everything together for a minute or 2, and enjoy! There are endless variations of this, you can add as much sauce and different kinds or none at all, you can scramble an egg or add meats if you like. This is also very frugal and budget-friendly because you can use up all the odds and ends of vegetables in your fridge before they go bad!

Tilapia & stir fry

.
So I am still in a spending hiatus where I do not spend anything. Therefore for dinner I had to take stock of my pantry, fridge and freezer, and come up with something healthy, easy and quick. In my apartment I had:
Tilapia: 5.99 for 6 fillets = $1/fillet
Wild rice: 1.29 for 1 microwave serving
Frozen stir fry veggies: $1 for 16 oz bag
.
Other miscellaneous ingredients:
Red Thai curry spice = $3.50 for a bag full
Lemon juice: $1 for 12 oz. bottle
Vegetable oil: $9 for a gallon
.
Step 1: In a medium frying pan, put 2 tilapia fillets straight from the freezer, with 2 tbsp. olive oil and about 4 tbsp lemon juice. Simmer on lowest heat covered for about ten minutes or until fish turns white and bottom browns.
.
Step 2: Flip once, sprinkle a pinch of spice onto the bottom. Add more oil or lemon juice if needed. Simmer another 5 minutes or so to brown the top. Always keep covered and don’t burn it. Remove to a plate and keep warm.
.
Step 3: Steam the rice in the microwave for 2 minutes. In the same pan, add 1 more tbsp oil and a cup of frozen veggies. Cover and steam for about 5 minutes or until veggies thaw and soften. Add in the rice, mix well. Serve 1 fillet over half the stir fried rice.
.
Total: $2 (2 fish fillets) + 1.29 (rice) + 0.20 (1 cup of veggies) + ~0.10 (spices and liquids) = $3.59 for 2 servings. Not bad!

Stuffed Cabbage Rolls

.
A Slovak classic, cabbage rolls stuffed with rice and ground beef. There are of course many variations on the recipe, including ground pork or turkey or sausage, various forms of tomato sauce/paste, etc. This is my take on what I could remember from my grandmother’s recipe.

ROLLS

  • 1 large head cabbage
  • 1.5 lb ground beef
  • 1 med onion
  • 1.5 cups rice
  • 1 can tomato paste
  • Spices – garlic, italian seasoning, salt, pepper, paprika

SAUCE

  • 1 large can crushed tomatoes
  • 2 tbsp white wine vinegar
  • 1 tbsp brown sugar

Step 1: Boil a huge pot of water. Carefully remove the outer large leaves and blanch in boiling water for 5 minutes or until soft. Remove and drain.

Step 2: Add all sauce ingredients and simmer on low. Brown the ground beef. I also made mashed potatoes to go with the rolls. Just peel and dice up several potatoes and boil until soft.

The picture looks foggy bc there was so much steam from boiling the cabbage and rice

Step 3: If you’re making mashed potatoes too, add butter, 1/2 cup milk, 1/2 cup sour cream and some salt, and mash together.

Then I put the potatoes in a small crock pot to keep warm because I was transporting them. Also I sprinkled some paprika on top.

Mashed potatoes are always a good choice. Especially with anything tomato-ey involved.

Step 4: Drain the ground beef. Add diced onions and cook 5 more minutes until soft, and add any desired spices. Also, boil or microwave the rice. Mix beef, rice, and tomato paste together. Fill cabbage leaves with about 1/4 cup (fist-sized) of mix. Fold over one end, tuck both sides, and then roll tightly.

Step 5: The extra cabbage from inside I also boiled, poured some tomato sauce over, and added to the bottom of a sprayed crock pot. The rolls I began layering over the cabbage.

Step 6: Pour the sauce over the rolls, and then enjoy! (I was taking them to class for lunch. Lucky classmates right?!)

Stuffed pepper casserole

.
If you’ve been following along, you know I love stuffed pepper. You also know I love my crock pot. Stuffed peppers in the crock pot tend to come out a little mushy, so I decided to try making a casserole instead of leaving the peppers whole. They get cut into tiny pieces when you eat it anyways right?
Ingredients:
4 large red bell peppers
1.5 lb ground beef
1.5 cups rice
1.5 cups chicken broth
1 can tomato sauce
Garlic, italian spices, pepper, salt
Step 1: First cut the peppers into small chunks and line the crock pot.

Step 2: Then add the chicken broth to the rice and cook, following directions for the type of rice you use… the chicken broth just gives it more flavor, if you’re watching your sodium you can omit it.

Step 3: While that’s cooking, brown the ground beef.

Step 4: Then mix the rice, sauce and beef together. Pour over the peppers. I actually added 1/2 a chopped onion to the beef to give it more flavor. Season with whatever spices you like.

Step 5: Cook on low for 1 -2 hours and enjoy!

Balsamic Chicken and Spanish Rice

.
I got the basic idea for this from allrecipes.com but of course I tailored it to my tastes and what I had around the house. I had taken out a chicken breast to thaw with the intent of making chicken quesadillas, but my boyfriend used all the tortillas to make tacos. So plan B. =)
Chicken:
Balsamic vinaigrette
Lemon juice
Garlic powder
Chili powder
Rosemary, thyme, dill
Rice:
1 cup Minute Rice
1 cup water
Cumin
Garlic powder
1/2 cup salsa
1/2 cup corn
First, combine all marinade ingredients in a plastic bag. I cut the chicken breast into smaller, thinner pieces to cook faster. Left marinating in the fridge for about an hour.
.

When ready to cook, I put a few tbsp olive oil in a frying pan and heated it up. Then the chicken and marinade was dumped in all together. Cooked over low heat for several minutes with a cover on.

While the chicken was cooking, I put the spices, water and rice in a microwave-safe bowl and microwaved for 5 minutes. Let sit for 3 minutes or so, and fluff with a fork. Then add the salsa and corn, and microwave another 2 minutes. After the chicken was fully cooked, I put the chicken pieces on a towel to drain.

This is what the rice and chicken looked like fresh off the stove/microwave.

 Delicious!

Tilapia with rice & mixed veggies

Since I have resolved to eat healthier and exercise regularly this year, I will be adding many healthier recipes (I hope). I have been doing well so far, working out 5 days every week. By working out I mean go to our rec center and do 20-30 minutes on the elliptical, or run a mile on the track. Plus weight training 3-4 days a week.
So, as fish and vegetables happen to be two of the best foods for you, I decided to whip up one of my favorites, tilapia. As a side dish, a mixture of every vegetable I had in the house. It turned out delicious, and made enough of the rice & veggie mix to last 2 more lunches.
Ingredients:
1 tilapia fillet
Juice of 1 lemon or 4 tbsp lemon juice
Salt & pepper
Nature’s seasoning
1 large carrot
2 celery sticks
1 spear broccoli
1/2 onion
1 pint mushrooms
1 can black beans
1/2 cup brown rice
To cook the tilapia, I took it straight out of the freezer and put it in a frying pan with about 2 tbsp. olive oil and the lemon juice. Cover with a lid, and simmer on low heat for about 15 minutes. While cooking, I diced all the vegetables into small bite-sized pieces and boiled 1 cup of water.
Once boiling, I added the 1/2 cup rice and let simmer 20 minutes. In a second frying pan I added the carrots first to cook in about 1/2 cup water for 3 minutes. Then in order of hardness: the celery, broccoli, onion and mushroom. Covered that with a lid and let steam.
By this time I was ready to flip the tilapia to cook the other side. I sprinkled on some pepper and seasonings and a bit more lemon juice. Let cook for 5 minutes or so until done. Then flipped it back over for a minute and moved to serving dish.
In the pot which I was steaming the rice, I added all the cooked veggies and let steam another 3 minutes, then served 1 portion of it with the fish.

The fish was lemony and peppery, white and flaky. The vegetables were a good mixture of tastes and textures, and the beans add extra fiber and protein. Little to no fat overall.

Slow cooker enchiladas

Since I have no oven in my current apartment, I have been looking for new and creative recipes to try in the slow cooker. I found one for enchiladas on Allrecipes.com and decided to use that as the basis for dinner tonight. Of course, I am terrible about measurements, so maybe you’ll want to look up their recipe if you want exact amounts.
Ingredients:
~1.5 lbs ground beef
1/2 cup taco seasoning
1/4 cup water
1 can cream of chicken
1 cup salsa
handful of fresh cilantro (because it was on sale 0.74 a bunch!)
Corn tortillas
Shredded cheese
Step 1: Brown the ground beef in a skillet. Drain off as much of the grease as you can. Add the taco seasoning and water, and cook the seasoning into the beef until most is absorbed. This is the second layer over the tortillas.
Step 2: Mix the chicken soup, salsa and diced cilantro in a bowl. This will be your third layer.

Step 3: Spray the inside of the crock pot so hopefully there will be no burnt-on mess later. Put down a layer or 2 of tortillas. Then a layer of meat. Then the cheese mixture. Over the topmost layer of beef, I added some slices of pepper jack to give it an extra little kick.

Keep layering until you use all the beef and soup mixture. Put a top layer of tortillas on and sprinkle with more cheese.
Put on High for 45 minutes to 1 hour. We will see in an hour how well I did!
