Bacon & Egg Breakfast Biscuits

.
We all have heard how breakfast is the most important meal of the day. Yet busy mornings, waking up late, or a lack of energy in the a.m. can stymie any attempts to be culinarily courageous before noon. This recipe is an easy weekend project which can make a few dozen little bacon-wrapped breakfast packages you can store and re-heat for a quick breakfast on the go all week long. If you can keep yourself from eating them all at once.
.
Ingredients:
1 pound bacon
1 1/2 dozen eggs
2 packages biscuits
Shredded cheese (optional)

Step 1: Line some muffin tins with a strip of bacon.

Curl it around so the bacon makes a little cup.

Step 2: Crack an egg into each bacon cup. Cover with the biscuits. Add cheese if you want.

Step 3: Bake at 350 for ~40 minutes, until egg is cooked fully and biscuit is crispy and golden brown.

These little biscuits are absolutely perfect. The biscuits are buttery and crispy, the bacon is of course bacon, and it all comes together for a handheld protein powerhouse. The bacon does make it a little greasy so beware of that.

How do you get breakfast on busy mornings?

Homemade granola bars + Make your own vanilla extract

As a simple on-the-go breakfast, post-workout snack, or get-you-through-the-afternoon munchie, I love granola bars! Endlessly varied in terms of type of nuts, berries, chocolate, flavors in them, they are always in my pantry in multitudes.

Usually I buy whatever is on sale, say $1-2 for a box. I have a rotation and favorites, but am not brand loyal by any means. But even at $1 for a box of 6, it can get expensive. So I figured, I already have lots of different types of nuts and dried fruits, and oats. It can’t be hard to make my own.

After googling a bit, I found this recipe for home made granola bars, which is close to what I had on hand. But I didn’t want the chocolate part (shocking, I know!) because I’d be storing them in my book bag and gym bag and don’t want to deal with melty chocolate all over my workout shoes or laptop. So as usual, I took the framework of the recipe and made it my own with what was on hand and the pan size I was working with. The results were splendid!

Ingredients:
3 cups oats
1/4 cup raisins
1/4 cup craisins (dried cranberries)
1/4 cup smashed pistachios (I shelled them, put them in a ziplock baggie and smashed them up with a spoon. For reals.)
1/2 cup smashed up candied peanut halves (also ziplock pulverized)
1/4 cup chia seeds (bought a few months ago and had no idea what to do with them… perfect.)
1/4 cup vegetable oil
1/2 cup honey
4 tbsp butter
1/4 cup brown sugar
1 tbsp vanilla extract

Step 1: Mash up the nuts, then mix together oats, dried fruit, nuts, seeds and olive oil. Stir to coat well, then bake in a flat oven safe pan at 350 for about 10 minutes, to make everything brown and toasty.

Step 2: In a pan over medium heat, stir together butter, brown sugar, honey and vanilla. Bring to a boil, then remove from heat. Pour over the granola mixture, and stir well to coat everything. Bake at 300 for 25-30 minutes, until warm and brown. Remove from the oven and let cool or stick in the refrigerator for a little while. Cut into bars the size you like.

I used a 9×13 pan, and as such I got 16 bars. They are very soft, so I put them in the fridge for about an hour before I cut them up.

I individually wrapped each bar in a plastic baggie, and am storing them in my pantry. They are delicious! The honey makes it so sweet, I don’t think you’d need chocolate anyway. Probably could even have done without the extra brown sugar.

I love these because I can use whatever dried fruits or nuts/seeds I have available. The next batch will include dried apricots and plums. You better believe sometime into the fall I will be making some bars with pumpkin seeds in them! I think I’m going to try experimenting with peanut butter in the honey instead of just butter too.

These are vegetarian, and could easily be made vegan as well. If you go easy on the oil/honey they are quite healthy and filling. And very inexpensive! Buy whatever fruits/nuts/seeds you like on sale, oats are cheap in bulk. This batch probably cost me $5 total?

Speaking of  inexpensive baking, did you know you can make your own vanilla extract from just vanilla beans and vodka? Seriously, that’s it.

A bottle of vodka on sale was about $7, the beans were a bit pricey at $4 for 2. But that’s $11 for about a gallon of vanilla that I can use pretty much forever. If I invested a bit more I could even jar it myself and give it as gifts or sell some. When you get low you just add more vodka and maybe after a year another bean or two. Jackpot.

Breakfast BELT with avocado & feta

.
.
I’ve read several articles lately that say a breakfast with eggs are the most filling. Since it was the weekend, and I had one egg left and several veggies in the fridge I had just bought yesterday, I wanted to make a super-healthy and filling breakfast.
.
Tim Horton’s makes a breakfast BELT sandwich with bacon, egg, lettuce and tomato on a bagel. To lighten it up, I used one slice of wheat bread as the “B” and in place of the bagel, no bacon, lettuce tomato one egg and added a slice of avocado and a sprinkle of feta for healthy fat and flavor.
.
Ingredients:
1 slice wheat bread
1 egg
1 tbsp oil
1 romaine leaf
1/2 roma tomato
1 slice avocado
1 tbsp feta cheese
.
Step 1: Put 1 tbsp in a pan, and fry the egg. If you like the yellow, you can leave it runny. I cooked it all the way through.

Step 2: While the egg is cooking, layer the lettuce, tomato, avocado and 1 tbsp feta on a slice of wheat bread (toasted or not).

Step 3: Lay the cooked egg on top of the feta, and enjoy! The feta gives it a tangy flavor, while the avocado is creamy and soft. If you’re vegan you can omit the egg and cheese.

Salsa & egg breakfast burrito

.
This is something I came up with when I realized I woke up 20 minutes earlier than I needed to for class. Since I had time to actually cook something, I decided on eggs. I looked in the fridge, and as I had been preparing for tacos this week, I had tortillas and salsa and a bag full of cut up bell peppers.
.
So I figured why wait for these awesome Mexican-inspired flavors! I could make a protein and veggie packed breakfast that could even be portable.
.
Ingredients:
2 eggs, beaten
1/2 cup diced bell pepper
1 diced green onion
3-4 tbsp salsa
1/4 cup shredded cheese
1 flour tortilla (10″)
.
Step 1: Fry the peppers and onion in a skillet with a tiny bit of oil if needed.

Step 2: Whip the eggs in a small bowl or cup. You can add a splash of milk for a fluffier texture. Add to the pan and cook slowly over medium heat. Use a wooden or plastic spoon to continually push the egg around until it is all cooked through.

Step 3: Heat a tortilla in the microwave for about 15 seconds. Add egg and veggie mixture, then a handful of shredded cheese to melt on top. Top with as much salsa as you prefer.

Step 4: Roll up and enjoy!

As always, the add-ins are optional, put whatever veggies you like in it. You could even add beans, potato, sausage, bacon or tofu if you have a big appetite in the morning. You could wrap these in plastic or aluminum foil and carry them with you for a healthy, filling breakfast on the go. Much better for you waist and wallet than a fast food drive through breakfast burrito!

Healthy & hearty turkey bacon breakfast sandwich

.
This week Meijer had a sale on turkey bacon for $1.99 and whole wheat english muffins for $1. These are 2 of my favorite things, because they make an amazing breakfast sandwich in about the time it would take you to drive through somewhere, and much cheaper. Plus it tastes amazing!
.
Ingredients:
1 english muffin (preferably 100% whole wheat)
1 egg
2 slices turkey bacon
1 slice cheese
Ketchup (if you like it, I do)
.
Step 1: Slice the turkey bacon in half. Fry the 4 pieces about 4 minutes, turning once. They should be slightly browned on both sides.

Step 2: Cook the egg. If you like the yolk runny, flip it and take it off heat sooner. I like my yolk cooked through, about 2 minutes.

Step 3: Layer the hot egg, cheese, and bacon onto the muffin, top with a squirt of ketchup and the top of muffin, enjoy!

You can of course use other breakfast meats like a sausage patty or ham. Or get rid of the meat and use avocado, hummus, tomato, or other veggies for a vegetarian/vegan option.

Strawberry Banana Crepes

.
I have always thought crepes were hard to make, so never tried it. But when my little sister took French and crepes became a common breakfast at my house, I saw that they were just as easy as pancakes, if not easier. You don’t even need a fancy crepe making machine, a regular frying pan will do.

So when I was searching breakfast recipes and found one for a smaller batch of crepes, I decided to try it. Not sure where I got the recipe from though, sorry. But it made 4 crepes, which is perfect for 2 breakfasts.

They also freeze well I hear, so if you wanted you could make a larger batch and freeze some. I had some left over strawberries and a banana that was turning brown, so strawberry banana filling was the best choice.

Crepe batter:
1/2 c flour
1 egg
3/4 c milk
1/8 tsp salt
1 tbsp butter

Filling:
4 Strawberries
1 tbsp strawberry jam
4 marshmallows
2 tbsp butter
4 tbsp cream cheese
1 banana, sliced

Step 1: Mix all the batter ingredients together. Mixing it in a large measuring cup is a good idea to make pouring easier. Then melt 1 tbsp butter in a frying pan, and pour 1/4 cup of the batter into the frying pan.

Step 2: Cook for about 5 minutes, the batter will start to bubble, and the bottom turns golden brown. To flip, use a spatula or get fancy and use your wrist to flip the crepe in the pan. Cook the other side until golden brown as well.

Step 3: For the filling, melt the butter in a smaller pan. Add the cut whole strawberries and cook a few minutes until soft. Add the cream cheese, strawberry jam, and marshmallows. Cook until everything is melted together.

Step 4: Take one crepe, fill it with the strawberry filling and banana slices. Wrap it up on both sides, and top with strawberry and banana slices. I drizzled chocolate syrup and maple syrup on top!

You can fill crepes with just about anything. I think of it as a breakfast food, but there are recipes that stuff it with veggies, meats, salads, all kinds of things. It can be used in lunch, dinner, or snacks. Just get creative!

Mini quiches

.
These were made for my thesis defense because it was at 10:30 in the morning and these are breakfast-like, plus I had all the ingredients already on hand. And they turned out amazing!!! The best part is, the dough is super easy and cheap, and you can fill them with just about anything.
Dough (makes about 4 dozen):
3 1/3 cup Bisquick
2/3 cup butter or margarine
6 tbsp boiling water
Fillling (fills about 4 dozen):
Crab
1 can crab meat
1/2 block cream cheese
Lemon pepper seasoning
Vegetarian filling:
4 cups shredded zucchini and squash
1 bag shredded mixed cheese
Nature’s seasoning
Custard (makes ~8 dozen):
3 eggs
1 1/2 cup milk or half and half
sprinkle of nutmeg
Step 1: Mix the Bisquick and butter together. Add the boiling water and mix well. Roll 1 tsp. dough into a ball and place in a mini cupcake pan. Even out the bottom using a wooden tamper or a shot glass.

Step 2:  Mix whatever fillings you are going to use. Add about 1 tsp to the dough.

Step 3: Mix the custard well. Then add 1 tsp of the custard on top. If it covers the top of the dough, it’s fine. But be sure to use a VERY tiny amount, because if you put too much dough or custard in, they will explode.

Step 4: Add cheese and/or seasonings on top, bake for 20 minutes at 375 degrees.

Step 5: Let them cool before popping them out of the muffin pans with a butter knife. Then enjoy! They are good to warm up the next day, or even at room temperature. These flew off the trays! I will absolutely be using this recipe again, and getting creative with the fillings in the future.

Hearty Fruit & Nut Toast

Breakfast is reportedly the most important meal of the day. I know I function best with a full stomach right off the bat. But we rarely have time to cook a well-rounded, 30 minute breakfast, enjoy it and clean up, and still get to work on time, right? So I came up with some better alternatives. You only need a few minutes to throw these together, and they are even portable (as long as you bring a napkin as well and maybe don’t mind peanut butter on your car seat…)

#1: Strawberry almond delight
Toast a piece of wheat/whole grain bread to your liking. Spread with 1 tbsp strawberry jam. Sprinkle a handful of slivered almonds on top.

#2: Elvis toast
Toast 1 piece of bread. Spread with 1 tbsp peanut butter. Top with sliced banana. (This one’s my favorite!)

#3: Mediterranean breakfast on-the-go
Toast 1 piece bread. Spread with 1 tbsp Greek yogurt. Top with thin slices of pear or grapes. Drizzle a little honey on top.

#4: Sweet treat
Toast a slice of bread. Spread with 1 tbsp Nutella. Top with sliced pear or other fruit.

These are just the ones I’ve tried, of course the possibilities are endless. Try blueberries and crushed walnuts with almond butter, or applesauce and raisins with some flax sprinkled on top.

The point is to try to use spreads which are low in fat and pair with at least 1 fruit and 1 type of nut if you can. Start every day this way and I’ll bet your mood and productivity increase, and your weight will likely decrease because you will be less hungry later on in the day!

Simple peanut-butter-banana breakfast muffin

This is one of my favorite 2-minute breakfasts. It has grains, fruit, protein and great flavor. Plus I think it’s only 350 calories.
Ingredients:
1 Whole grain English muffin
1/2 banana, sliced
1 tbsp. Jif peanut butter
Step 1:Toast the muffin (you don’t have to) and slice up the banana.
Step 2: Put 1/2 tbsp. of peanut butter on each half. Then arrange the banana on top. Enjoy with your breakfast beverage of choice.

My favorite home cooked breakfast

While I am all in favor of cold cereal or granola bars, when one has enough time and energy to get up and make a ‘real’ breakfast I would recommend it. Not only because a healthy breakfast is the most important meal of the day, but also because it is nice to start your day with a filling and delicious meal.
My all-time favorite is potatoes and red peppers with scrambled eggs. Simple, cheap ingredients and it takes under 30 minutes to cook and enjoy. Of course, there is ample opportunity for experimentation with ingredients.
You will need:
1-2 medium potatoes, diced
1 red pepper, diced
2-4 medium eggs
Salt
Pepper
(I also add paprika, and cheese to the eggs)
To make it quicker, microwave the potatoes for 5-8 minutes until soft. Put about 2 tbsp. oil in a pan and heat it. Add the potatoes to the pan, season and cook for about 5 minutes.
Once the potatoes start to turn brown and crispy, add the red peppers. Toss or stir the potatoes and peppers and cook for another 5 minutes. In a separate bowl, whisk the eggs.
Add cheddar cheese if you like. Once the potatoes are brown, and the red peppers are soft and beginning to brown, pour in the eggs. Mix the whole conglomeration until the eggs are cooked and to your desired fluffiness.
Dump it all onto a plate and try to wait long enough for it to cool so you don’t burn your tongue on the first bite!
