One-dish Enchilada Casserole

This recipe inspiration came from one of the several food magazines I regularly read. I absolutely love easy, one-dish recipes, especially if they look like you took hours to plan and create this masterpiece, but in reality all you had to do was creatively layer several ingredients and give it some time.

Mexican food is a great place to start for simple yet flavor-packed recipes. Pretty much anything involving beans, rice, and veggies will end up becoming a hit, and there are literally thousands of ways to get creative and make dishes your own. You can customize everything from the spices to the meat or lack thereof to the type and amount of vegetable and carb.

IMG_4682

For this recipe, I had chicken breast in the freezer, as well as some corn, and canned necessities (beans and diced tomatoes) coupled with a few fresh ingredients like avocado and shredded cheese, and we got ourselves a multi-layered chicken enchilada casserole!

IMG_4684

Ingredients:

  • 1 boneless, skinless chicken breast, diced
  • 1 can black beans, drained
  • 1 can diced tomatoes with chilies or 1/2 cup salsa
  • 1 cup frozen corn
  • 1 cup shredded cheese
  • 1/2 cup guacamole or 1 mashed avocado
  • 1/2 red onion, sliced
  • 1 bell pepper, sliced
  • 1 tsp cumin
  • 1 tbsp butter or margerine
  • 2 tortillas (flour or corn, 10 or 12 inch)

IMG_4686

Step 1: In a skillet, cook the onion, corn, peppers, and cumin in butter until all vegetables are soft and corn is lightly charred, about 5 minutes.

IMG_4688

Step 2: In the same or a different skillet, cook the diced chicken until completely white and hot throughout.

IMG_4689

Step 3: In a large round pie pan, cover with aluminum foil and place a tortilla on the bottom of the pan. Spoon on half of the cooked chicken, and then half of the veggie mixture. It is super easy to make this vegetarian by leaving out the chicken, or you can switch it up with flank steak or chorizo.

IMG_4690

Step 4: Spread on half of the drained diced tomatoes with chili and/or salsa.

IMG_4691

Step 5: Sprinkle on half the can of drained beans.

IMG_4687

Step 6: Spread on half of the guacamole, or sprinkle around slices or chunks of avocado.

IMG_4692

Step 7: Put down another tortilla, and repeat the layers. Top it all off with a hearty sprinkle of shredded cheese.

IMG_4693

Step 8: Bake at 350 for 30-45 minutes, until cheese is bubbly and browned on top.

IMG_4694

Then simply slice up your casserole into as big a slice as you want, and enjoy!

IMG_4697

This is an amazing flavor combination, and the tortilla layers hold it together mostly well. You can add a third, top layer of tortilla, or just do one layer of filling like a pot pie. Feel free to layer it in whatever order you want, and change around the ingredients to suit your tastes. Hope you like it!

IMG_4698

It’s fragrant, delicious, brightly colored, and has SO many vegetables packed into one serving, yet even kids and picky eaters will likely go back for seconds!

Lean Green Guacamole

Not going to lie, I absolutely LOVE avocados. I think they make just about anything better, including all kinds of Mexican food, smoothies, sandwiches, salads, and dips. Never would I turn down guacamole. Especially Chipotle’s… there’s magic in there, and maybe some crack.

So when I read a recipe on Sparkpeople for guacamole involving extra healthy green stuff, I had to try it out!

This recipe adds in the goodness of greens and cucumber to add extra vitamins and bulk. It also decreases how much fat you eat per serving.

Ingredients:

  • 1/3 cucumber
  • 1 cup spinach
  • 2 avocados
  • 1/4 red onion
  • 2 tbsp lime juice
  • Garlic salt

IMG_4672

Step 1: Dice up your veggies, peel and pit the avocado. Use a knife to cut all the way around it, then twist to separate halves. Pull out the pit by running a spoon along it and then pop it out.

IMG_4673

Step 2: Combine in a blender all ingredients. Save 1/2 of one avocado if you like extra chunks, and wait to add diced onion if you like the crunch bites. I just blended all of it together into one creamy mess.

IMG_4674

Step 3: Try really hard to keep yourself from eating the whole bowl!

IMG_4675

This stuff is so delicious. I found it a little bit watery, probably because the cucumber I used was getting old. The cucumber does give it a bit of a fresher taste, so don’t be alarmed. Add as much lemon or lime juice as you like. You could use fresh garlic cloves in place of garlic salt if you have it.

Less than 5: Tuna Salad Puffs

.
On nights when you just don’t have the energy or time to cook a whole meal from scratch, these “less than 5” meals are the perfect solution. For me to title a meal as “less than 5” it must require less than 5 ingredients, and it’s an extra bonus if it also takes less than 5 minutes to make.
.
For this recipe, I had several cans of tuna I had purchased during a great sale weeks prior. I didn’t want the usual tuna-salad-sandwich, or tuna noodle casserole. So I looked in the fridge, and saw I had a can of biscuits. Viola, dinner inspiration!
.
Ingredients:
1 can ready to bake biscuits (or croissants, any type of dough)
1 can tuna
2 tbsp mayonnaise
1 tbsp relish
Salt & pepper if you like
Step 1: Open and drain the tuna. In a bowl, combine the tuna, mayo, and relish. Mix well.
Step 2: On a sprayed baking sheet, place each biscuit about 1-2 inches apart. Tamp down a small depression with your fingers or a spoon. Fill with 1-2 tbsp tuna mixture.
Step 3: Bake at 350 for 10-15 minutes, until golden brown on top.
You can sprinkle these with whatever spices you have on hand, or a little bit of shredded cheese too.
They are great as appetizers, or eat several for a full meal! Feel free to add in other veggies to the tuna, like diced up cucumber or cooked egg, or lemon juice.

Mediterranean Stuffed Mushroom Caps

Mushrooms are an awesome alternative to meat, especially thick portobellos or stuffed caps. They have the same texture and flavor if cooked just right, and are endlessly adaptible to different recipes. You really can’t go wrong with stuffed mushrooms. Any combination of grains, vegetables, and/or meat will work.

These Mediterranean-inspired mushrooms happened when I noticed I had some goat cheese, kalamata &green olives, and produce I needed to use. You can use feta if you have it for the most authentic tastes. Or any other type of cheese you like. You can also sub in any other kind of olives, or omit them entirely. The choice is yous.

IMG_3615
Ingredients:
12 medium mushrooms (2-3 inch diameter)
2-3 oz cooked ground beef
1/2 cup cooked rice
1/4 cup cooked lentils (can omit)
1 green onion, diced
1 large tomato, diced
3-4 oz goat cheese (or cream cheese)
1/4 cup kalamata/green olives, diced

IMG_3613

Step 1: Remove the mushroom stems, dice up, cook, and add to a bowl. Place the caps flat in a sprayed baking dish.

IMG_3616

Step 2: In the bowl, mix the cooked rice, lentils, and beef. It’s easiest to add the cheese while still a little warm so it gets melty. Add the onion, tomato, and olives.

IMG_3618

Mix everything well, and stuff about 1 – 1 1/2 tbsp of mixture into each mushroom.

IMG_3620

Step 3: Bake at 350 degrees for 20-25 minutes, until juice starts to run. Serve hot.

IMG_3628

These little guys are absolutely delicious! If you use smaller caps, they are a bite-sized appetizer with meal-sized flavor. If you use larger caps, one or two can be a meal unto itself. Omit the ground beef, and you have a lovely vegetarian dish as well.

Less than 5: Honey Sweet Potato Snack

.

Happy almost 4th of July! Whether you are having a small family get-together, a backyard BBQ, or going out to a picnic-and-fireworks party, enjoy our independence from the Crown and be safe! I’m sure there are overwhelming amounts of recipes involving burgers, apple pie, and anything red white or blue flooding the internet. So I went another way: to highlight a simple, humble veggie that I think doesn’t get enough attention.

Little bright orange jewels, so good for your health, sweet potatoes are more than a Thanksgiving side dish. Any time of the year, they can add nutrients and fiber to your diet and become an easy side dish or snack, even a main dish or dessert.

sweet_potatoes_570

Sweet potatoes are one of nature’s best sources of beta-carotene, the provitamin-A carotenoid. And an adequate supply of Vitamin A ensures  proper growth and development, immune system function, and healthy eyesight. Vitamin A deficiency is estimated to affect roughly 1/3 of children under the age of 5 worldwide, leading to developmental problems, eyesight deficiencies, and blindness. However Vitamin A is fat-soluble, not water-soluble, which makes it harder for your body to get rid of excess, leading to the possibility of toxicity if over-supplemented. Always ask a doctor or physician before starting a supplement regimen.

Not all sweet potatoes are orange, they can also be purple due to anthocyanin pigments. These molecules have important antioxidant properties and anti-inflammatory properties. World’s Healthiest Foods states: “Particularly when passing through our digestive tract, they may be able to lower the potential health risk posed by heavy metals and oxygen radicals.”

They also clear up the common confusion: sweet potato vs. yam. They can be very similar in terms of size, shapes, and skin colors, though they both come in a variety of flesh colors. Turns out, sweet potatoes are FAR more common in the US than are yams, so at a store it is pretty safe to assume you are buying a sweet potato, even if a sign says “yams”.

Anywho, sweet potatoes were on sale, and I wanted to incorporate more into my diet, so I bought a few. Luckily they keep for a long time so I could figure out what to do with it. Turns out, these can be the simplest snack ever. Simply take one to work with you, and whenever you need a tide-me-over between lunch and quittin time, or breakfast and end-of-board-meeting, pop it in the microwave, top as you please, and you have a filling, healthy snack. This is a sweet treat, though you could go savory instead with, say, goat cheese.

Ingredients:

  • 1 small-med sweet potato
  • 2 tbsp honey
  • -or- 1 tbsp sugar + 1 tsp cinnamon

So simple, just stab the potato a few times with a fork to let steam escape. Microwave the potato for 8-10 minutes, until soft. Break it open, drizzle on some honey, and enjoy! With about 100 calories per cup, this is a super healthy choice all around.

Try using sweet potatoes anywhere you would use regular potatoes for extra fiber and vitamins. Make sweet potato chips, roast chunks in the oven as a side dish, boil and mash them with some brown sugar and butter (just be careful of amounts, it’s easy to overwhelm the health benefits with sugar and fat!), throw some into soups, stews, and curries. See how you can creatively add some sweet potatoes into your 4th of July festivities!

Turkey & Veggie Tacos

.
Tacos are always a popular meal choice. They are great for so many reasons:
  • Frugal – use up whatever meat or vegetables are in the house
  • Green – use up vegetables before they go bad & reduce waste
  • Customizable – you can please meat eaters and vegetarians
  • Healthy – easy to add tons of extra veggies and fiber with beans
Unfortunately, tacos are also very easy to go overboard with and make into fatty cholesterol nightmares. If you use fatty ground beef and heap on cheese and sour cream, your arteries will not thank you. The good news is, there are simple swaps you can make that don’t have a huge impact on overall taste but will have an impact on how huge your waistline is in 20 years….
  • Use ground turkey, pork, or chicken instead of beef
  • Better yet, don’t use meat at all! Use tofu or lots of beans instead
  • Make sure to cram in as many sneaky veggies as possible
  • Swap unflavored Greek yogurt for sour cream
These simple switches seem small, but have big long-term impact. You don’t have to go cold-turkey health nut all at once. Try one at a time and see what works for you.
.
These turkey tacos are super-charged with healthy greens and multiple veggies. But once rolled up in a warm tortilla, you would never know there is so little fat and far fewer calories than your typical taco. My meat eater s.o. even had to admit that they are delicious!
.
Ingredients:
1 pound ground turkey
1 tortilla
1 onion, diced
1 cup diced bell peppers
1/2 head kale
Refried beans
1/2 cup cooked rice
1 tbsp plain Greek yogurt
Sprinkle shredded cheese
Seasoning: garlic salt, cumin, Nature’s Season
Step 1: Brown the ground turkey in a pan. While that is cooking, dice up your veggies. You could use whatever vegetables are in season and that you like, try eggplant, asparagus, spinach, sweet potato…
Step 2: Drain the grease from the meat and season it to your liking. Add in the veggies, hardest ones first. Cook until onion and peppers are soft, and kale is wilted.
Step 3: Open a can of refried beans, or make your own. Heat up in a frying pan or microwave.
Step 4: Warm up a tortilla in the microwave for 10-30 seconds. Layer on the turkey and veggies, 1/4 cup cooked rice, a few tbsp of beans, 1 tbsp Greek yogurt, and a sprinkle of shredded cheddar. Roll it up and enjoy! Alternatively you could use a hard taco shell, or spread over tortilla chips as a fun appetizer.
.
Tacos are so endlessly customizable. I love topping mine with salsa, guac, diced avocado, lettuce, spinach, black beans, shredded carrots… the possibilities are endless. They can be extremely frugal too, rice, beans, and tortillas are all easily found for under $1, and make a very filling and healthy meal. It’s super easy to make them vegetarian or vegan too.

Less than 5: Spanish Rice

This Less Than Five post will be the all-around qualifier: it takes less than 5 ingredients, less than $5, and less than 5 minutes (if you don’t count inactive cook time).

When I have an idea for the main dish but need a quick side, rice is always my first thought. Rice is so versatile, you can put almost anything in it and it will taste great. And since I got my new rice cooker, I eat rice at least 3 days a week because it is so easy!

Even if you don’t have a rice cooker, rice is super simple to make.

Stove top: Put 1/2 cup rice and 1 1/2 cup liquid in a pan, heat to boiling. You could use water, broth, tomato sauce, juice, whatever you want. Add any fresh or frozen vegetables too. Lower to simmer, and simmer covered for 20 minutes. Fluff with a fork and enjoy!
Microwave: Put 1/2 cup rice and 1 1/2 cup liquid in a microwave-safe bowl with plenty of room for the rice to boil. You could use water, broth, tomato sauce, juice, whatever you want. Add any fresh or frozen vegetables too. Microwave for 15-20 minutes on high, stirring every 5 minutes or so. Fluff and enjoy!

Now, for this spanish rice I cheated a little and used a boxed mix because it was on sale for $0.73. You could also use a tbsp chili powder and a small can of tomato sauce for about the same price and taste.

Rice: Bought on sale with spices included. = $0.73
Can of corn: On sale 2 for $1, one for $0.50. = $0.50
Can of diced tomatoes: Usual price is $0.69. = $0.69
Total: $1.92 for about 5 servings = $0.38 per serving!

Ingredients:
1 box Spanish Rice mix
(Or 1 cup rice, 1 small can tomato sauce, 1 tbsp chili powder)
1 can of corn
1 can of diced tomato
1 cup water

Step 1: Spray the rice pot lining, combine all ingredients. Don’t drain the corn or tomatoes, the juice adds extra flavor.

Step 2: Turn the rice cooker on and let cook for ~20 minutes. Or use one of the above cooking methods.

Step 3: Serve and enjoy. I made chicken legs to go with my rice. But this would be delightful in a taco or burrito, as a side to enchiladas, baked into a frittata, or on its own as a vegetarian meal.

Breakfast Burritos for the Busy

I always say breakfast is the most important meal of the day. However I also understand mornings can be the busiest time of the day. This is why I have become quite talented at whipping up fast, hot, filling breakfasts in under 30 minutes. Sometimes, I even make several breakfasts I can leave in the fridge or freezer, then reheat and run out the door.

If you have a few minutes to spare in the AM or some time on Sunday to get ahead for the week, this a perfect idea to make filling your belly in the mornings easy. I made two, but you can scale this to whatever size you want.
.
Ingredients:
2 tortillas
2 eggs, scrambled
1/4 cup cooked beans (I used canned kidney)
1/2 cup veggie (sliced zucchini featured here)
2 slices cheddar cheese

Step 1: In a sprayed or non-stick skillet, cook the veggies (I’ve used peppers, onion, cauliflower, broccoli, zucchini, squash, carrots…). Add the beans just to heat them, then pour in the beaten eggs.

Step 2: Cook the eggs until fully done. Sprinkle on some salt or other seasonings if you like.

Step 3: Heat the tortilla for 10-15 seconds in the microwave, then add the cheese and half the egg mixture. Fold both ends of the tortilla in, then roll it up. I ate one that morning and saved the other for the next day.

Please do get creative, you could add refried beans, black beans, spinach, sriracha… the possibilities are endless so you never get bored. These are also a quite affordable source of some major protein.

Simple sauteed power greens

.
One of the things I like best about growing up is changing tastes. When I was little, I had an on-off relationships with most vegetables, notably mushrooms. I loved them one week, and hated them the next. With growing up comes changing ideas of what tastes good, and I love it. I can be more creative, try different ingredients and recipes, and cook things that are good for me at which I would have turned up my nose years ago.
.
One of those things is kale. Since I worked on a CSA farm and tried Kale Chips for the first time, I have been looking for more ways to use this power green more often. One excellent option is in soup, like the Olive Garden copycat of Zuppa Toscana I made. Delicious and packed with healthy ingredients.
.
So as I had recently purchased more kale at Sprouts Farmers Market, along with some golden beets and fresh garlic heads, I decided to try another kale classic: Italian Sauteed Greens. I’m sure this is yet another popular side dish with a long and debated over past. But basically it’s garlic and olive oil with various greens sauteed lightly, and usually a tangy dressing like vinegar or lemon juice added. Also it is sometimes spicy, but since I’m a wuss I did not add hot peppers or hot pepper flakes. Feel free to if you love heartburn.
.
Ingredients:
1 bunch kale, cut into small strips
1 bunch beet leaves, in small strips
3-4 cloves garlic, diced
2 tbsp good quality olive oil
1/4 cup sour liquid (I used banana pepper liquid and 3 tbsp lemon juice, you can also use any type of vinegar)
Sprinkle of sea salt
3-4 banana pepper or hot pepper rings

Step 1: Dice up your garlic into bits. You can use a garlic press or chopper if you want.

Step 2: Saute the garlic in 2 tbsp olive oil 4-5 minutes, you should be able to smell it.

Step 3: Cut the greens into thin strips. Add to the pan, and cover tightly. Let it steam in the garlic oil for 10-15 minutes, or until fully wilted.

These greens were so vibrant and lovely even before cooking! All that heart-healthy nutrient-packed deliciousness…

Step 4: Add your sour notes, lemon juice and banana peppers. Stir, cover, and saute another 5-10 minutes.

Banana pepper rings are a new love of mine. I put them on tuna sandwiches, on pizza, into my greens… they’re awesome. And lemon juice is a necessity for life.

Step 5: Once wilted and everything is combined, move to plate and garnish as you like.

I added a little sprinkle of fresh Parmesan cheese and some sea salt. It was the most perfect balance, and the tart juices took away a lot of the harsh bitterness most people don’t like about greens.

These greens were tangy and delicious, and if you enjoy spicy food would go great with some hot peppers.  I also had some cottage cheese on the side, to complete a whole, light lunch. It’s filling without feeling stuffed, and ridiculously good for you.

Mmmmmm…

Vegetarian Breakfast Strata

I’ve said many times, and I’ll say it again, breakfast is the most important meal of the day.
I’ve also said many times that I love easy, make-ahead meals. This breakfast strata could be put together or baked the day before and stored in the fridge if needed. It is super simple and could incorporate any type of veggie or bean you prefer. You can make it completely vegan by using egg substitute and no cheese too.

Ingredients:
3 slices bread
1 can beans, slightly mashed
1/2-1 cup vegetable (spinach here)
8-10 eggs, beaten
sprinkle of cheese

Step 1: Lay the bread in an oven-safe pan sprayed with oil. Layer on the mashed beans, cheese and spinach.

Step 2: Add the egg mixture.

Step 3: I sprinkled more cheese on top. Bake at 350 for 45-50 minutes, until eggs are fully cooked.

Mmmmmmm! Hot, healthy, and protein packed breakfast. Actually this doesn’t necessarily have to be for breakfast, you could have this any time of the day.
