Chocolate Peanut Butter Protein Puppy Chow

 

OMG. Guys. Don’t make this.

Seriously, it is so delish, I cannot stop eating it! I had to make a second batch in order to have enough to share at my wine tasting weekend party. Sure, it is WAY healthier than your mom’s puppy chow recipe, but still… not when you eat 5 cups of it in one go.

Not that I’d do that.

Hopefully y’all know what puppy chow IS, by the way?

This is basically chocolate and peanut butter (strong start) with Chex rice crisp cereal, sprinkled in powdered sugar. That sort of looks like puppy food, hence the name.

And moms used to make this ALL THE TIME to get the kids to SHUT THE HELL UP and leave them alone for a minute. (No, just my mom? Whatever, your loss). Which works awesomely, cause this sh*t is addictive and delicious. See above.

But… that’s a metric crapton of sugar. Isn’t that the stuff you’re supposed to keep kids away from? Ahh, the blissful “good old days” before the food police and veganism and artificial sweeteners that actually are neurotoxins took over the world.

Anyways, in all seriousness, this stuff kinda looks like dog food, but is DEFINITELY NOT FOR DOGS. Do not feed this to your puppy. Besides, it is so good I doubt there will be any left after you hoover the bowl clean. Sharing with friends / children optional.

This recipe is slightly healthier, in that we cut out a lot of the sugar by using vanilla protein powder. You can also use regular protein powder plus 1/4 cup stevia or other (healthier) alternative sugar substitute. This of course ups the amount of protein per serving, making me feel like it’s basically a health food.

(Spoiler: it is not. It is still a treat, with tons of calories, but at least it is a slight improvement. Treat it as such, in moderation, and you should be just fine.)

Ingredients:

  • 4 cups chex cereal
  • 1/4 cup chocolate chips
  • 1/2 cup peanut butter
  • 1/2 cup vanilla protein powder
  • 2 tbsp. peanut powder (or peanut flour)
  • 2 tbsp. cocoa powder

Step 1: In a large glass or microwave safe bowl, melt the peanut butter and chocolate chips together. I nuked it in 30 second bursts times 4, with stirring in between.

Step 2: Pour in the cereal, and mix gently but well to coat all the pieces in chocolatey peanut buttery deliciousness.

Step 3: Mix the dry ingredients in a large zip top bag. Pour the coated cereal in, and shake it like a polaroid picture! (Throwback, anyone remember what a polaroid actually is? Lord am I starting to feel old these days…)

Step 4: Pour the cereal out onto a wax paper lined cutting board or cookie tray to dry. That’s it! Try to keep your hands off the slightly-still-warm tasty snacks. Good luck  😉

Pink Fluff

 

With summer in full swing, there are picnics to attend, pool parties to have, and barbecues and potlucks to create a dish for.  This is the time for quick and easy, no-bake, crowd pleasing recipes.  It is hot enough outside, you don’t want to turn on the oven. And you only have an hour until you need to show up at someone’s door, dish in hand to share.

I’ve got you covered.

My family has a recipe that’s been around as long as I can remember. It is a part of every summer picnic, get-together, birthday party. Everyone who tries it for the first time loves it, and wants to know the secret. The secret of Pink Fluff.

What is Pink Fluff?

Well, it’s pink, and it’s fluffy. (And ridiculously high in sugar, so use good judgment with portion sizes 😉 )  All you need is 4 ingredients, canned, no need to even drain.  Mix well, chill, and get ready for the compliments to roll in.

Ingredients:

  • 1 can crushed pineapple
  • 1 can cherry pie filling
  • 1 can sweetened condensed milk
  • 1 tub cool whip

Step 1: In a large bowl, mix all four ingredients, and refrigerate. Don’t worry about draining the pineapple, just pour it all in. The cherry pie filling is what gives Pink Fluff its lovely color, or you could boost it with a few drops of food coloring or fruit juice.

This stuff is addictive, it is tasty on its own right out of the bowl with a spoon, or it is also a great fruit dip.  Mix in some bananas, chopped strawberries, fresh cherries, or grapes. Slice up some apples or oranges and use them to dip. Keep this recipe in your back pocket, and you will never be unprepared for a picnic again! Enjoy.

 

Less than 5: Microwave Apple Crisp

Everyone needs a little sweetness in their lives, but not everyone has the time or inclination to spend hours baking. Microwaves to the rescue! There is an endless amount of baked goods you can make in the microwave. Rather than collect recipes from all around the web, I found Number 2 pencil’s post that does exactly that, a collection of over 30 mug recipes!

This recipe I came up with one night when I wanted something sweet but was too tired to cook an entire pie or whatnot. I had apples, so naturally wanted apple crisp. Apple crisp has always been a favorite of mine, it is perfectly balanced and sweet, and satisfies my sweet tooth every time. So with less than 5 ingredients and less than 5 minutes, you can have a bowl of your very own hot and fresh microwave apple crisp!

Ingredients:

  • 1 apple, sliced
  • 3 tbsp brown sugar
  • 1/3 cup quick oats
  • 2-3 tbsp butter/margerine
  • Optional: cinnamon and/or nutmeg
Step 1: Cut the apple into thin slices and place in a bowl.
Step 2: Mix the sugar, oats, and cinnamon if using. Pour over the apple slices.
Step 3: Dot the butter over the oats, and microwave for 2-3 minutes on high. Time will depend on the strength of your microwave.
Let cool just enough to hold, maybe add a scoop or two of ice cream, and enjoy!

Chocolate Shortcake with Balsamic Honey Strawberries and Patrón Cafe Whipped Cream

As the days grow longer and hotter, we crave fresh, juicy fruits and light, refreshing desserts.  Every foodie’s favorite thing about summer is the abundance of fresh produce rolling in. From farmer’s market kale to home-grown lettuce to ripe berries, summer is a fresh food paradise.

Driscoll’s has been committed to growing strawberries for over 100 years. Each berry is loaded with vitamin C, folate, fiber, potassium and antioxidants. Driscoll’s ensures year-round availability by growing strawberries in multiple locations. However, the summertime strawberries carry with them the warmth of the sun and long days to ripen, and are best used at the peak of the season.

Therefore, in celebration of summer, fresh berries, and sweet deliciousness, I decided to make the world’s finest Strawberry Shortcake. This was to be no ordinary biscuit with berries sprinkled on top. I searched the world wide web for inspiration, considered all kinds of crazy flavors, and took apart each element of the classic cake to come up with this recipe.

Dense, moist, and decadent chocolate shortcake. Thinly sliced plump Driscoll strawberries bathed in sweet and tangy balsamic vinegar and local Colorado honey, and the tour-de-force, a homemade French Vanilla whipped cream spiked with Patron Cafe.

Shortcake Ingredients:

  • 1 1/2 cup flour
  • 3 tbsp granulated sugar
  • 2 tbsp cocoa powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup cold butter (4 tbsp)
  • 1/2 cup milk

For the strawberries:

  • 2 cups strawberries
  • 1/4 cup balsamic vinegar
  • 1/4 cup honey

For the whipped cream:

  • 1 cup heavy whipping cream
  • 2 oz French Vanilla coffee creamer
  • 2 oz Patron cafe (or other coffee-flavored liquor)
  • 3 tbsp powdered sugar

Patron creamThis may seem intimidating, but trust me, it takes less than 30 minutes altogether. And the only ingredient I had to specifically go buy was the heavy cream. You can omit the Patron if you don’t like the taste or the alcohol content as well. Let’s jump in.

Step 1: Preheat your oven to 400 degrees F. In a large bowl, mix your dry ingredients. Flour, baking powder, baking soda, cocoa powder, salt, sugar. Sift together if you do things that way.

Step 2: Cut in the cold butter or use a pastry cutter, until it resembles coarse crumbs.

Step 3: Stir as you pour in the milk. Batter should be just wet, and a bit sticky.

Step 4: You can just drop the batter onto a wax-paper-covered cookie sheet, but I chose to bake mine in cupcake pans for shape. Pour about 1/4 cup into each well.

Step 5: Bake at 400 for 15-17 minutes, until beginning to brown on top. Remove from the oven and cool.

Meanwhile, chill a bowl and whisk in the refrigerator or freezer to make the whipped cream.

Step 6: Cut the tops off the strawberries, then stand them on end and cut into thin slices.

I will totally not tell if you sneak a few as you’re cutting. Fresh strawberries are hard to resist! I know I had a few…

Step 7: In a bowl, mix the balsamic vinegar and honey. You may need to microwave for 15-20 seconds to get the honey and vinegar to mix well. Dump the sliced berries in, and mix well to coat. Set aside.

Step 8: The home stretch, whipped cream time! Take out your cold bowl and whisk. Pour in 1 cup heavy whipping cream, and then whip the crap outta the cream.

The cream will start to thicken, and form stiff peaks. Add the 2 oz of creamer, powdered sugar, and Patron. Mix well again. Be sure to not over-beat it though, you don’t want alcoholic butter. Or maybe you do…

Step 9: Now you have all three ingredients to assemble your masterpiece. Cut the cooled shortcupcakes in half, and smear on some cafe cream. Add a few slices of berries, and a drizzle of the extra juice.

Put the top layer on, smear on some more cream, and top with berry slices.

And there you have it! A delicious, fresh, unique dessert to wow a crowd or make a summertime picnic extra special. This recipe makes enough for 8 small cakes, you can easily double it to make a larger 9 inch round pan.

The cake is flaky on the outside, yet moist on the inside, with just a hint of cocoa flavor. The whipped cream adds a mysterious bite, with a chocolate-complementing essence of coffee. Likewise, the balsamic vinegar is a unique, yet balancing tang to the coffee-chocolate notes, and the honey is just the right amount of sweet without being overwhelming. The longer you let the berries soak, the more they will take on this amazing flavor combination. You might want to make extra to just eat with a spoon!

Crock Pot miracles – Stuffed Peppers & Strawberry Apple Crisp

Crock Pots are miracle workers for students, busy moms, professionals, anyone who is pressed for time but still wants a healthy, home-cooked meal at the end of the day. As a full-time graduate student writing her thesis, with 2 other jobs and several PhD interviews to prepare for, I have been running a pretty hectic schedule lately.
It goes something like this:
7am – wake up, go to lab, begin an experiment.
8 am – rec, run or elliptical.
9 am – home, shower, breakfast, maybe an hour of free time.
10/11 – meetings.
12-2 find time for lunch.
Afternoon – classes and more experiments.
4 – 9: work or write, depending on the day.
So, in the one hour of free time I had the other morning, I realized I had 3 red bell peppers, minute rice, and ground beef. Plus two old apples and baking supplies I hadn’t used in ages. Therefore…

Crock pot stuffed peppers:
3 red bell peppers
1 pound ground beef
1 cup rice
1 can tomato sauce
Spices to taste (garlic, italian, black pepper)
Step 1: Brown the ground beef and cook the rice.Step 2: Cut tops off peppers and remove seeds. In a large bowl, mix the cooked rice and beef and 1 can tomato sauce, plus any spices. Stuff each pepper with mixture.
Step 3: Put in Crock Pot on LOW for 2-4 hours.
Dinner and dessert, will be ready and waiting when I get home.

Dessert went from plain apple crisp to strawberry apple crisp because I couldn’t find any plain oatmeal. So I made do with what I had. And I’m glad I did!

Crock Pot Strawberry Apple Crisp:
2 apples, 1 red & 1 green
1 packet strawberries & cream oatmeal
1 cup brown sugar
1/2 cup white sugar
1/2 cup flour
1/4 cup butter/margerine
Cinnamon, nutmeg, vanilla extract

Step 1: Dice the apples and mix in a bowl with a sprinkle of cinnamon and nutmeg. Put apples into a sprayed slow cooker.

Step 2: Mix the sugars, oatmeal, flour, butter, 1 tbsp. vanilla and another sprinkle cinnamon and nutmeg in a separate bowl.

Step 3: Sprinkle a tbsp sugar over the spiced apples in the crock pot, and cover with crumble mixture. Cook on LOW for 2-4 hours. The sugars carmelize, the apples are soft and tangy, it tastes like heaven warm with a scoop of vanilla ice cream!!!

This is so completely fabulous I can’t even describe it!
