Parmesan popcorn

.
I am a huge popcorn addict, I can literally eat about five microwave bags in one night. But stovetop popcorn is the best! It’s healthier, cheaper, and you get to decide how much to make. There is nothing else like it. Toppings can kick the popcorn up a notch, and cheese is always super delicious! Best part, it is pretty healthy overall.

Ingredients:

  • 1/4 cup vegetable oil
  • 1 cup popcorn kernels
  • 2 tbsp butter flavored salt
  • 1 cup grated parmesan cheese

Step 1: Put the oil, kernels and salt in a pan (one you don’t mind ruining…) and put the heat on high. Make sure you shake and swirl the pan often, especially once the kernels start popping.

Step 2: Once the kernels slow down and you count 3-4 seconds between pops, turn the heat off. Wait until you don’t hear any more popping, and pour into a large bowl.

Step 3: Coat the popcorn with 1/2 cup of the cheese, and proceed to inhale it.

Once you get about halfway through, add more cheese and shake to cover. The picture is what was left after 20 minutes of devouring, I wanted a picture for this blog before demolishing the rest! A great movie night snack. I imagine other types of grated cheese would also be delicious, and I have heard that adding spices like garlic or cayenne is tasty too.

Mini quiches

.
These were made for my thesis defense because it was at 10:30 in the morning and these are breakfast-like, plus I had all the ingredients already on hand. And they turned out amazing!!! The best part is, the dough is super easy and cheap, and you can fill them with just about anything.
Dough (makes about 4 dozen):
3 1/3 cup Bisquick
2/3 cup butter or margarine
6 tbsp boiling water
Fillling (fills about 4 dozen):
Crab
1 can crab meat
1/2 block cream cheese
Lemon pepper seasoning
Vegetarian filling:
4 cups shredded zucchini and squash
1 bag shredded mixed cheese
Nature’s seasoning
Custard (makes ~8 dozen):
3 eggs
1 1/2 cup milk or half and half
sprinkle of nutmeg
Step 1: Mix the Bisquick and butter together. Add the boiling water and mix well. Roll 1 tsp. dough into a ball and place in a mini cupcake pan. Even out the bottom using a wooden tamper or a shot glass.

Step 2:  Mix whatever fillings you are going to use. Add about 1 tsp to the dough.

Step 3: Mix the custard well. Then add 1 tsp of the custard on top. If it covers the top of the dough, it’s fine. But be sure to use a VERY tiny amount, because if you put too much dough or custard in, they will explode.

Step 4: Add cheese and/or seasonings on top, bake for 20 minutes at 375 degrees.

Step 5: Let them cool before popping them out of the muffin pans with a butter knife. Then enjoy! They are good to warm up the next day, or even at room temperature. These flew off the trays! I will absolutely be using this recipe again, and getting creative with the fillings in the future.

Tilapia & stir fry

.
So I am still in a spending hiatus where I do not spend anything. Therefore for dinner I had to take stock of my pantry, fridge and freezer, and come up with something healthy, easy and quick. In my apartment I had:
Tilapia: 5.99 for 6 fillets = $1/fillet
Wild rice: 1.29 for 1 microwave serving
Frozen stir fry veggies: $1 for 16 oz bag
.
Other miscellaneous ingredients:
Red Thai curry spice = $3.50 for a bag full
Lemon juice: $1 for 12 oz. bottle
Vegetable oil: $9 for a gallon
.
Step 1: In a medium frying pan, put 2 tilapia fillets straight from the freezer, with 2 tbsp. olive oil and about 4 tbsp lemon juice. Simmer on lowest heat covered for about ten minutes or until fish turns white and bottom browns.
.
Step 2: Flip once, sprinkle a pinch of spice onto the bottom. Add more oil or lemon juice if needed. Simmer another 5 minutes or so to brown the top. Always keep covered and don’t burn it. Remove to a plate and keep warm.
.
Step 3: Steam the rice in the microwave for 2 minutes. In the same pan, add 1 more tbsp oil and a cup of frozen veggies. Cover and steam for about 5 minutes or until veggies thaw and soften. Add in the rice, mix well. Serve 1 fillet over half the stir fried rice.
.
Total: $2 (2 fish fillets) + 1.29 (rice) + 0.20 (1 cup of veggies) + ~0.10 (spices and liquids) = $3.59 for 2 servings. Not bad!

Picnic potato salad

.
I have a picnic coming up this weekend, and I also am in the middle of a 2-week spending fast (meaning I can’t spend anything) so I had to come up with something that I already had all the ingredients to in my house. After asking friends for ideas and some searching on Allrecipes.com, I decided on potato salad.
.
I personally don’t even like it much, but I’ve never made it and it seemed easy. Plus I had all the ingredients already. Once made, I tried it, and it was actually pretty darn good. Maybe it will change my mind about potato salads.

Ingredients:
about 5 cups peeled, diced potatoes
3 hard boiled eggs
1/3 c lemon juice
1/4 c oil
1 1/2 tsp Worchestershire sauce
1 tbsp ground mustard
1/2 c Miracle Whip
1/4 c Ranch
2 ribs celery, diced
1/2 med onion, diced
1/2 c shredded carrot
1 tbsp salad seasoning

Step 2: Peel and dice the potatoes. Then boil them in a large pot while you dice up the rest of the vegetables. Once the potatoes are soft, drain. Mix all the liquids and spices in a large pot.

Step 2: Put the potatoes in with the Miracle Whip, Ranch, spices, etc and mix well to coat. Add the other diced vegetables and the diced hard boiled eggs. Mix well.

Step 3: Put in the refrigerator for at least 2 hours before serving. Hopefully everyone at the picnic will like it!

Finished product.

Kidney bean and quinoa burgers

Well, this one came from a combination of boredom, hunger and a determination to not go to the grocery store this week. I had half a can of kidney beans in the fridge, and some googling brought up this blog’s recipe: http://sweetbeetandgreenbean.net/2009/02/04/kidney-bean-and-quinoa-burgers/

So of course I made my own version of it.

Ingredients:
1/2 cup kidney beans
1/2 cup quinoa
1/2 cup chicken stock
2 tbsp flour
1 tbsp olive oil
Garlic salt, burger seasoning, Nature’s Seasoning, and cumin

Step 1: Add the chicken stock to the quinoa and microwave for 10 minutes. Then add the rinsed and drained kidney beans, and microwaved another 10 minutes.

Step 2: Mash the beans and quinoa together, and add the spices, flour and olive oil.

Step 3: Put some oil in a frying pan, shape 4 patties from the mixture, and fry them for about 5 minutes per side, until golden brown.

Step 4: Drain the patties on a paper towel, and man they are delicious!

You seriously need to try this. I put a patty on a slice of whole wheat bread with baby romaine and grilled bell peppers. Seriously, try it!

Multi-Mexi

One of my favorite kinds of food is Mexican inspired food. Why?

  1. It is usually cheap
  2. It is pretty easy to make
  3. A little goes a long way towards fulfilling hunger
  4. It is so versatile!

I made a few favorites this week with a handful of ingredients. Let me walk you through my multi-mexi recipes.

This is a case where one meal gets transformed into a new one, and then another one! This keeps you from wasting leftovers and prevents food boredom.

Here’s a list of everything I used all week:
1 can diced tomatoes with green chili peppers
2 roma tomatoes
1/2 cup minced cilantro
1/2 medium onion, diced
Lime juice
Lemon juice
Garlic powder
1 can refried beans
Cheddar cheese, shredded
1.2 lb ground beef
Taco seasoning

Ok, so meal #1:
I made my own salsa from the can of tomatoes and chilis, diced up fresh tomatoes and the onion. Added the cilantro and a dash of garlic, plus lemon & lime juice. Delicious with chips or as a topping!

Meal #2:
After 2 days, I still had plenty of salsa and was bored. So I heated a can of refried beans in the microwave, added all the rest of the salsa, topped it with some shredded cheddar cheese. You will be amazed at how delicious this simple dip is!

Meal #3:
Another 2 days goes by and it isn’t likely I will finish the huge amount of dip this made, so I browned the ground beef, drained it, and added taco seasoning. To this I added all the bean & salsa dip. This made for some very hearty tacos! Put over tortilla chips or wrap in a tortilla with lettuce, sour cream and cheese.

This is just one example of the many ways you can re-purpose leftovers into a different meal. It is thrifty, creative, and just an all-around good idea!

Stuffed Cabbage Rolls

.
A Slovak classic, cabbage rolls stuffed with rice and ground beef. There are of course many variations on the recipe, including ground pork or turkey or sausage, various forms of tomato sauce/paste, etc. This is my take on what I could remember from my grandmother’s recipe.

ROLLS

  • 1 large head cabbage
  • 1.5 lb ground beef
  • 1 med onion
  • 1.5 cups rice
  • 1 can tomato paste
  • Spices – garlic, italian seasoning, salt, pepper, paprika

SAUCE

  • 1 large can crushed tomatoes
  • 2 tbsp white wine vinegar
  • 1 tbsp brown sugar

Step 1: Boil a huge pot of water. Carefully remove the outer large leaves and blanch in boiling water for 5 minutes or until soft. Remove and drain.

Step 2: Add all sauce ingredients and simmer on low. Brown the ground beef. I also made mashed potatoes to go with the rolls. Just peel and dice up several potatoes and boil until soft.

The picture looks foggy bc there was so much steam from boiling the cabbage and rice

Step 3: If you’re making mashed potatoes too, add butter, 1/2 cup milk, 1/2 cup sour cream and some salt, and mash together.

Then I put the potatoes in a small crock pot to keep warm because I was transporting them. Also I sprinkled some paprika on top.

Mashed potatoes are always a good choice. Especially with anything tomato-ey involved.

Step 4: Drain the ground beef. Add diced onions and cook 5 more minutes until soft, and add any desired spices. Also, boil or microwave the rice. Mix beef, rice, and tomato paste together. Fill cabbage leaves with about 1/4 cup (fist-sized) of mix. Fold over one end, tuck both sides, and then roll tightly.

Step 5: The extra cabbage from inside I also boiled, poured some tomato sauce over, and added to the bottom of a sprayed crock pot. The rolls I began layering over the cabbage.

Step 6: Pour the sauce over the rolls, and then enjoy! (I was taking them to class for lunch. Lucky classmates right?!)

Homemade Minestrone soup

Fall is finally in the air. The temperature is cooling off but the sun still shines. The best season of the year, in my opinion, not too hot but not yet cold. It makes me want apple cider, bonfires, and pumpkin pie.

And my personal favorite thing about the weather cooling off is having soup and stew nearly every day! They are so easy to make, usually the cheapest recipes around, and have endless creative possibility! Look forward to plenty of soup recipes coming up.

So a few days ago, I took stock of my pantry and saw I had 1/2 box of mini shell pasta, a bag of frozen mixed veggies, some potatoes that need used soon, and a can of kidney beans. Add in some garden-fresh tomatoes from a friend’s mother’s garden, and we have inspiration for a minestrone soup!

You’ll need:
1/2 bag frozen mixed vegetables
1 cup mini shells
1 can kidney beans
2 small potatoes
4-5 tomatoes
Garlic
Black pepper
Chicken bouillon cubes (or veggie stock)
6 cups water

Into a large soup pot, pour the water and about 3 chicken bouillon cubes and bring to a boil. Peel the potatoes and dice them finely. Add those in. Dice up the tomatoes, add those. Pour in the can of kidney beans, juice and all, and as much of the vegetables as you want.
Then add in the shells, season and simmer 10-15 minutes, stirring occasionally. This made about 5 servings for me, 2 of which I ate immediately. The rest was put in the fridge in Tupperware for lunches and dinners throughout the week.
It can also be made in larger batches and frozen for days when you don’t feel like cooking. You can as always experiment with pasta shape, vegetables included, spices, add some tomato paste or basil. Make it your own and enjoy!

Taco Salad!

When you’re hungry for Mexican but don’t want to go out, don’t have much time, want to eat healthy, or don’t want too many ingredients (or all of the above), you can’t beat a Taco Salad. Quick and easy, it can be as healthy or unhealthy as you want it.

Having just moved into a new apartment, most of my kitchen is not yet unpacked. Besides that, I don’t have an oven. I know, shocking. That eliminated about 1/3 of my cooking repertoire. However, this tasty salad requires only one pan, and little effort, so you can make it happen in under 20 minutes.

Ingredients:
1 head romaine lettuce, or 1 bag pre-cut mix
1-2 tomatoes
Doritos
Shredded cheese, preferably cheddar or Mexican mix
Catalina dressing
1 lb. ground beef
Taco seasoning
1/2 cup water
Black olives (optional)

Step 1: Brown the ground beef in a skillet. Drain off the excess fat, and add 1/4 cup taco seasoning and 1/2 cup water slowly, stirring it all together. Leave on low heat for about 10 minutes to allow the seasoning to cook into the beef.

Step 2: While waiting, chop up the Romaine and tomato and place in a large bowl. When all seasoning is cooked in, pour taco meat over top. Sprinkle on the cheese, crush up a few handfuls of Doritos, and douse with Catalina dressing.

The Doritos give it a cheesy crunch and the dressing is just enough tang, while the sweet works with the spice of the taco seasoning. It is so tasty! Obviously, if you go heavy on the lettuce and tomato and light on the beef plus nix the Doritos and dressing, it is much healthier. But where’s the fun in that? 😉

What’s your favorite salad topping?

Stocking your pantry + Tortilla Soup

To make easy, delicious meals on the cheap and quickly, it is vital to have your pantry stocked with a few key ingredients. These staples are the things which keep for a long time and are versatile in many dishes, like grains and canned foods.

Here is a list of things I always try to keep in the house:

  • Rice (white and/or brown)
  • Potatoes
  • Pasta (various kinds, usually at least one straight pasta and 2 shapes)
  • Bread
  • Eggs

Canned:

  • Tomato sauce, paste
  • Pasta sauce
  • Diced tomatoes
  • Corn
  • Green beans
  • Beans (Black, kidney, chickpeas, chili)
  • Tuna
  • Chicken
  • Salsa

One of the best, easiest Crock Pot recipes using cupboard staples I know is Tortilla Soup. It is perfect for a busy day, just open a few cans and throw them in the Crock Pot. You can let it simmer all day, then come home to a hot and filling meal!

Ingredients:
1 can corn
1 can kidney beans
1 can black beans
1 can diced tomatoes
1 can of chicken (optional)
1 jar salsa
1 cup cooked white rice
6 cups water
Literally, just dump all the ingredients in the crock pot. I added some dried onion flakes and oregano too. Then just let it simmer until you’re hungry! This tastes great with some cheddar cheese melted on top. You can also fry up some tortillas and put crisps on top. This does make quite a bit, so be sure to have some people to share with, or freeze individual portions for lunches all week.
