Three Bean Vegan Chili

Chili is one of my absolute favorite comfort foods. It couldn’t be easier to put together, just throw all the ingredients in a crock pot and let it do the heavy lifting while you go to work, school, travel, write, hike, shop, whatever you do all day. Then come home to a hot, delicious, healthy meal that makes the whole house smell divine.

This is seriously the most perfect cold-weather dinner of all time.

White Bean Chicken Chili is definitely on my top ten for Crock Pot meals, but since I’ve been on a bit of a vegan kick lately, I wanted to make a chili with no meat or animal products that was equally delicious and satisfying. And that’s exactly what I did, and you can too!

Don’t tell those you serve that it’s vegan, and they likely won’t even know.

Ingredients:

  • 1 can diced tomatoes (with green chilis if you want kick)
  • 1 small can tomato paste
  • 1 can pinto beans
  • 1 can black beans
  • 1 can white cannellini beans
  • 4 tbsp. chili powder
  • 1 tsp paprika
  • 1 tsp ground ginger
  • 1 tsp garlic salt
  • 1 tsp cumin powder

IMG_7580

Step 1: Open all the cans, and pour directly into the crock pot. Leave the tomato juice, but if you want to drain and rinse the beans to cut down on extra sodium, you totally can.

IMG_7583

Step 2: Cook in crock pot on low 6-8 hours, or high 2-4 hours. That’s it! Other addition you could make: chickpeas, really any other type of bean, crushed garlic, diced onion, carrots, celery, bell peppers, hot peppers, tomato juice, tomato sauce, hot sauce…   IMG_7587

I made a batch of corn bread using Jiffy mix and a can of corn to serve with the chili. Yes, the carnivore had to add a handful of cheese, but progress is progress. Baby steps.

Since this makes a crap-ton of chili, some ideas to use up the remainder include chili cheese dogs, chili mac n cheese, and topping baked potatoes with a scoop for a filling meal or snack.

Slow Cooker Red Pozole with Pork

So I’ve been tutoring a high school kid in Biology for a year. He’s great, as are his parents. And his mother is a large part Native American. She is an amazing cook, I often show up to tutor and/or leave to tempting smells wafting from the kitchen. They are kind enough to ask me to share their dinner with them quite often.

As I love cooking myself, typically I have dinner already started in the Crock pot or at least plans, so I decline. However, one night she was serving up this thick, red stew that smelled too irresistible. This was my first introduction to pozole.

IMG_2065

Pozole means “foamy”; also spelled “pozolli” or “posole”. It is a traditional stew originally from Mexico, which once had ritual significance due to its use of maize, called hominy. The word “hominy” comes from the Powhatan language word for prepared maize. (Maize is corn).

Hominy is a very interesting thing. To make it, you take regular corn kernels, dry it, and then treat it with an alkaline agent to break down the cellulose in the corn. The result is puffy, chewy, soft kernels that look a little bit like corn-shaped popcorn.

Well, this tomato-pork-hominy stew was unlike anything I’d ever had, so of course I had to ask for the recipe. She had gotten it from the Denver Post a few years back, and was more than happy to share it with me.

red posole with pork

The red pozole with pork is the recipe I used and show here, but there is also one for Green Pozole with Chicken. I’ll save that for another day.

IMG_1883

I wanted to try this right away, but I forced myself to be patient. Normally I just center my grocery shopping around sales, but this time I kept an eye out for the ingredients I needed. Anytime I want to make something with a unique or expensive ingredient I try to wait to maximize my food dollars. As soon as I saw hominy on sale at the local Save-A-Lot I snagged a can.

As is my way, I took the recipe, tweaked it a bit to what I like and what I had in the house, and it turned out wonderful! I don’t like spicy foods, so I left out the peppers, but I did throw in a pinch of dried chipotle pepper to keep the Native American feel of the recipe. If you want to go all the way and buy the exact spices called for, be my guest. But I omitted the Mexican oregano, and used regular paprika, not Spanish. I also added a can of red beans for extra fiber and filling power.

Slow cooker red pozole with pork:

  • 1.4 pound pork roast
  • 2-3 tbsp garlic powder
  • 1/2 tbsp cumin
  • Pinch chipotle pepper
  • 1 tbsp chili powder
  • 2 tbsp paprika
  • 1 whole white onion, diced
  • 1 can diced tomatoes, with liquid
  • 1 can red beans, drained
  • 1 29oz can hominy
  • 6 chicken bouillon cubes and ~24 oz water
  • 3 tbsp flour
  • 1 bottle beer (Colorado native)

IMG_2048

Step 1: In slow cooker, mix flour, beer, spices, diced onion, and tomato.

IMG_2049

Step 2: Heat water in the microwave for 2-3 minutes, dissolve the bouillon cubes and add to crock pot. Or just use chicken stock.

IMG_2050

Step 3: Dice the pork roast into bite-sized cubes. I had a 1.4-pound roast defrosted, so I used that. But you could use chops also.

IMG_2052

Peel or cut off fatty pieces to make it more lean.

IMG_2053

Step 4: Add the pork and hominy to the slow cooker. Cook on low 6-8 hours, or high 2-4 hours.

IMG_2062

The finished product is a complex but light stew, with an amazing depth of flavor. You can obviously add more spice to your taste, but I loved it the way it was. I also didn’t have ground cumin, so the little pieces were annoying at the bottom, but the flavor they added was worth it.

IMG_2066

I made some biscuits to serve with the posole, and my s.o. loved it too. The recipe suggests shredded cabbage, radish, cilantro, cheese, or sour cream as garnishes. If you add extra flour or cornstarch you can make it thicker, add more stock to make it more soup-like.

What’s your favorite slow cooker meal?

Crock Pot salsa chicken tacos

.
I have heard so many recipes raving about how easy and delicious Crock Pot salsa chicken is, it is on nearly every Crock Pot recipe list I’ve seen. So one day before leaving for school, I decided on a whim to try it. Turns out, all these people know what they’re talking about! It was amazing by itself over rice, and it is even better shredded on a taco!
.
Ingredients:
3-4 boneless, skinless chicken breasts
2 cups salsa
1 flour tortilla
2 tbsp refried beans
1/2 onion, sliced
1 cup diced bell peppers
2 tbsp taco seasoning
1/2 cup shredded lettuce
1/4 cup sharp cheddar cheese
1 tbsp sour cream
.
Step 1: Put the chicken and the salsa in the crock pot. Cook on low at least 6 up to 10 hours. The chicken will be slightly browned, lightly salsa flavored, and fall-apart tender. It tastes amazing on its own, serve with a vegetable and a starch side dish.

Step 2: Put a tiny amount of olive oil or stock in a frying pan, and fry the onion and pepper until soft. Add the taco seasonings, cover and cook another 2 minutes.

Step 3: Smear refried beans on half the tortilla, heat in microwave 20 minutes. Add cheese so it melts, and about 3-4 oz of the chicken. Then pile on the veggies and smear the sour cream on the other half. Pour salsa on top, roll up and enjoy!

This is super filling, and all the flavors combine into a taste bud party in your mouth! Makes enough for several meals, probably 10 tacos depending on how much you stuff them. The meat could also be used for quesadillas or tamales.

Slow Cooker Cheddar Broccoli Rice

.
This is a super easy side dish, requiring only a few hours in a crock pot. It goes well with most anything. The end result is creamy, cheesy, and delicious.
.
Ingredients:
1 cup rice
2 cups broccoli
1 full bag shredded cheddar cheese
1 1/2 cup water

Step 1: Pour 1 cup rice into crock pot. Add 1 1/2 cups water.
Step 2: Add as much broccoli as you want, I put in about 2 cups pieces.
Step 3: Cover with shredded cheese.
Step 4: Cook on high 2 hours, stirring occasionally, or until rice is fully cooked and cheese is melted.

Makes about 5 cups, enough for 3-6 sides depending on what else is in the meal. You can cut down the amount of cheese here for less fat, or add in a can of cream of chicken soup for extra creaminess.

Chicken Tacos

.
So yet again I’m moving soon, and need to clean out my freezer and pantry. I had some chicken quarters I had gotten cheap a while back , and was sick of ground beef tacos. So I decided to make some chicken tacos. It helps that Meijer had a great sale this week, $1 bell peppers and avocados.
.
Ingredients:
2 chicken leg quarters
Taco seasoning
Chili powder
1/4 red, orange and yellow bell pepper
1/4 red onion
1 tortilla
1/4 avocado
2 tbsp salsa
1 tbsp sour cream
1/4 cup black beans

Step 1: Put the chicken in a sprayed crock pot, sprinkle with taco seasoning and chili powder. Add 1/4 cup water to keep moist. Cook on high 4 hours or until chicken is no longer pink.

Step 2: Remove chicken meat from the bones and skin, throw it away. Add more seasoning if you like.

Step 3: Cut the peppers and onion into thin strips. I steamed the peppers for about 10 minutes first.

Step 4: In a tbsp of butter or oil, saute the peppers and onion until soft and translucent. Add some taco seasoning.

Step 5: Warm the beans and tortilla. Layer the chicken, peppers & onion, beans, avocado in chunks, salsa and sour cream.

The combination of flavors is amazing: the creamy avocado, the spiced chicken, the crunchy-soft peppers and sweet onions, tangy salsa, milky sour cream…. just mmmmmmmm! And so much protein and veggie goodness! Obviously you can omit the chicken and just use veggies for vegetarian, and add as much or whatever spices you like.

Jealous? You should be.

Stuffed pepper casserole

.
If you’ve been following along, you know I love stuffed pepper. You also know I love my crock pot. Stuffed peppers in the crock pot tend to come out a little mushy, so I decided to try making a casserole instead of leaving the peppers whole. They get cut into tiny pieces when you eat it anyways right?
Ingredients:
4 large red bell peppers
1.5 lb ground beef
1.5 cups rice
1.5 cups chicken broth
1 can tomato sauce
Garlic, italian spices, pepper, salt
Step 1: First cut the peppers into small chunks and line the crock pot.

Step 2: Then add the chicken broth to the rice and cook, following directions for the type of rice you use… the chicken broth just gives it more flavor, if you’re watching your sodium you can omit it.

Step 3: While that’s cooking, brown the ground beef.

Step 4: Then mix the rice, sauce and beef together. Pour over the peppers. I actually added 1/2 a chopped onion to the beef to give it more flavor. Season with whatever spices you like.

Step 5: Cook on low for 1 -2 hours and enjoy!

Crock Pot miracles – Stuffed Peppers & Strawberry Apple Crisp

.
Crock Pots are miracle workers for students, busy moms, professionals, anyone who is pressed for time but still wants a healthy, home-cooked meal at the end of the day. As a full-time graduate student writing her thesis, with 2 other jobs and several PhD interviews to prepare for, I have been running a pretty hectic schedule lately.
It goes something like this:
7am – wake up, go to lab, begin an experiment.
8 am – rec, run or elliptical.
9 am – home, shower, breakfast, maybe an hour of free time.
10/11 – meetings.
12-2 find time for lunch.
Afternoon – classes and more experiments.
4 – 9: work or write, depending on the day.
So, in the one hour of free time I had the other morning, I realized I had 3 red bell peppers, minute rice, and ground beef. Plus two old apples and baking supplies I hadn’t used in ages. Therefore…

Crock pot stuffed peppers:
3 red bell peppers
1 pound ground beef
1 cup rice
1 can tomato sauce
Spices to taste (garlic, italian, black pepper)
Step 1: Brown the ground beef and cook the rice.Step 2: Cut tops off peppers and remove seeds. In a large bowl, mix the cooked rice and beef and 1 can tomato sauce, plus any spices. Stuff each pepper with mixture.
Step 3: Put in Crock Pot on LOW for 2-4 hours.
Dinner and dessert, will be ready and waiting when I get home.
The pepper, exploded on my plate. =)

Dessert went from plain apple crisp to strawberry apple crisp because I couldn’t find any plain oatmeal. So I made do with what I had. And I’m glad I did!

Crock Pot Strawberry Apple Crisp:
2 apples, 1 red & 1 green
1 packet strawberries & cream oatmeal
1 cup brown sugar
1/2 cup white sugar
1/2 cup flour
1/4 cup butter/margerine
Cinnamon, nutmeg, vanilla extract

Step 1: Dice the apples and mix in a bowl with a sprinkle of cinnamon and nutmeg. Put apples into a sprayed slow cooker.

Step 2: Mix the sugars, oatmeal, flour, butter, 1 tbsp. vanilla and another sprinkle cinnamon and nutmeg in a separate bowl.

Step 3: Sprinkle a tbsp sugar over the spiced apples in the crock pot, and cover with crumble mixture. Cook on LOW for 2-4 hours. The sugars carmelize, the apples are soft and tangy, it tastes like heaven warm with a scoop of vanilla ice cream!!!

This is so completely fabulous I can’t even describe it!

Slow Cooker Chicken Stroganoff

I got the basic idea for this creamy delight from Sparkpeople.com and tweaked it to what I had in my house. It’s like beef stroganoff, just healthier because you use boneless skinless chicken breast. And it’s made in a slow cooker, which is frankly the greatest kitchen invention ever, because you just add all the ingredients, leave it go all day, and come home to a hot-and-ready meal.

Ingredients:
1 can cream of mushroom soup
1 can cream of chicken soup
2 boneless skinless chicken breasts
1/2 bag frozen veggies
1/2 pack of cream cheese

Step 1: Dice the chicken into cubes. Mix the soups and cream cheese in a crock pot, add the chicken. Cook on high 2 hours or low for 4.

Step 2: Add the vegetables and cook another half hour. It really is that simple! Served it over tri-color pasta for myself, and poured over some leftover biscuits from KFC. Both great options.

Chicken stroganoff over pasta.

Chicken stroganoff over biscuits.

Slow cooker enchiladas

Since I have no oven in my current apartment, I have been looking for new and creative recipes to try in the slow cooker. I found one for enchiladas on Allrecipes.com and decided to use that as the basis for dinner tonight. Of course, I am terrible about measurements, so maybe you’ll want to look up their recipe if you want exact amounts.
Ingredients:
~1.5 lbs ground beef
1/2 cup taco seasoning
1/4 cup water
1 can cream of chicken
1 cup salsa
handful of fresh cilantro (because it was on sale 0.74 a bunch!)
Corn tortillas
Shredded cheese
Step 1: Brown the ground beef in a skillet. Drain off as much of the grease as you can. Add the taco seasoning and water, and cook the seasoning into the beef until most is absorbed. This is the second layer over the tortillas.
Step 2: Mix the chicken soup, salsa and diced cilantro in a bowl. This will be your third layer.

Step 3: Spray the inside of the crock pot so hopefully there will be no burnt-on mess later. Put down a layer or 2 of tortillas. Then a layer of meat. Then the cheese mixture. Over the topmost layer of beef, I added some slices of pepper jack to give it an extra little kick.

Keep layering until you use all the beef and soup mixture. Put a top layer of tortillas on and sprinkle with more cheese.
Put on High for 45 minutes to 1 hour. We will see in an hour how well I did!

Slow cooker BBQ pulled pork

Slow cookers are a godsend to any busy cook, I myself often throw ingredients in it early in the day in order to come home after a long day of teaching, research, attending classes and work. But they can also add joy and flavor to a lazy Sunday. As the weather cools, warm and filling foods fill my imagination. This led to inspiration for some slow cooked BBQ pork.

Ingredients:
1 pork loin
5-6 garlic cloves
1/4 cup brown sugar
1 medium onion
1/2 cup vinegar
2-4 cups BBQ sauce of your choice

Step 1: Cut shallow grooves in the loin and insert garlic cloves. Place in the slow cooker with the vinegar, and the onion cut into chunks. Rub the top of it with the brown sugar, and put on high for 4-6 hours.

This is what it looks like after about 4 hours on high. I cut it into 4 chunks to shred it easier. Drain off the excess liquid and throw out the onion and garlic. Using two forks, shred the pork and return it to the slow cooker. Cover the meat with BBQ sauce and mix well.

Then leave it in the slow cooker on low for another 1 – 5 hours, to let it stew and the BBQ to cook into the meat.

This is the first way to eat the pork, on a bun with some extra BBQ sauce. I had steamed broccoli and baked beans as side dishes.

However, you usually have plenty of meat left over. Therefore, this post includes a special bonus dish. With the leftovers, a great snack or even full meal is BBQ pork over tortilla chips. Just sprinkle on the pork, add cheese and heat in the microwave. Then add sour cream and enjoy!
