Hawaiian BBQ Pizza

Whoever was first to combine ham & pineapple was a brilliant person. Taking an Easter ham and slathering in brown sugar, and coating it in pineapple slices, leads to a sweet & salty perfect meal every time. This was then copied in sandwiches, and of course on top of pizza.

I’m a big fan of pizza due to its limitless topping capabilities. You can add just about anything to a pizza, and it will taste at least pretty good, and at best mind-blowingly delicious.

The “Hawaiian” combo of flavors is a pizza natural. Some are die-hard lovers, some may have never heard of such a crazy thing. Either way, give it a try yourself and see if you don’t have a new favorite.

Ingredients:

IMG_9400

Step 1: Pre-heat the oven to 450. If you have a pizza stone, great. If you don’t, a cookie sheet works just as well, or any oven-safe pan.

IMG_9403

Step 2: Drain the pineapple, reserve juice for a cocktail, syrup, or smoothie later. Spray your cooking item, and roll the dough flat.

IMG_9409

Step 3: Layer on your ham slices, pineapple slices, and pour on the sauce. Cover with a thin layer of cheese if desired.

IMG_9410

Step 4: Bake at 450 for 25-30 minutes, until dough is brown and crispy on the edges. Dig in!

Red, White, Blue & Good For You!

My, how time flies when you’re having fun! Can you believe it’s nearly time to celebrate Independence Day by eating ourselves sick and blowing things up? It’s the American way.

I’ll leave the blowing things up and lighting things on fire part to my fiance; as for me I will be covering creative kitchen duty. The grill will be fired up all weekend long, patriotic beverages will be flowing, and family will be sharing stories and laughs as we wait for dusk and fireworks to light up the sky.

Hope you find some last-minute inspiration here for your own Fourth Festivities! God Bless America.

Yes, I know these aren’t red, white & blue, but rather green, but still… aren’t they adorable?! And if you find a way to make basil blue, bless your heart and patent that immediately. Or share with me…

For a hearty main dish that impresses with its presentation, look no further! Lasagna is always a sure crowd-pleaser, and is easy to adapt to vegetarian, vegan, or gluten-free diets based on the pasta noodles and contents.

Since that grill is fired up anyways, why not make your burgers make you want to sing the national anthem? Bleu cheese is tangy, tasty, and naturally punny on this national holiday. Stock up on thick tomatoes for slicing & some stinky cheese for some delightful:

And of course, no picnic or party is complete without something sweet. We all have a sweet tooth, some more voracious than others, and luckily red & blue are natural berry colors! Therefore, strawberries, raspberries, blackberries, & blueberries lend themselves well to patriotic desserts.

What is cuter than a personal-sized-serving of a refreshingly light dessert? Not much!

Last but certainly not least, we can’t forget to hydrate!

Of course, the best option is water; add a few fresh berries for a splash of color, or some sparkling water for interest. You can do the same with tea or lemonade, or dye it red or blue.

For the grown-ups in the crowd who like to imbibe during the celebrations, below is a great resource for several types of cocktails of varying ingredients and degree of strength. Use your best judgment and safety first always! Especially if sparklers are involved.

Chicken Bacon Ranch Pasta Salad

With the Fourth of July weekend coming up, I’m sure many readers will be hosting or attending picnics, barbeques, and other backyard get-togethers.  A huge fan of casual parties myself, I am always on the lookout for fast, easy to put together side dishes that aren’t too expensive to feed a crowd. A good example is my prior post on BBQ Baked Beans.

Enter the pasta salad.

Pasta salads are insanely versatile. They adapt well to just about any type of veggie, meat, or cheese, with tons of creative dressing/sauce options as well. You could try a Greek mix of feta, banana peppers, onions, and kalamata olives, or a club mix of ham chunks, cheddar cheese, and crumbled bacon, or how about an Italian combo with salami, pepperoni, pepperocini, and swiss.

For this recipe, I had a pre-mix box ranch & bacon pasta salad, and decided to jazz it up a bit with some canned chunk chicken and fresh diced veggies. You can also use a pound of any type of pasta (the small shapes work best here, like shells, elbows, or penne), spices you like, and some crumbled bacon.

Ingredients:

IMG_9498

Step 1: Dice your zucchini and tomatoes, and drain the chicken. Get the water boiling for the pasta, and boil 8-10 minutes.

IMG_9499

Step 2: In a pan, cook the zucchini for 5-7 minutes, until beginning to brown. Add the tomato and chicken, and cook until heated through.

IMG_9500

Step 3: Drain the pasta, and mix in the veggies. Add the toppings included (or spices & cooked crumbled bacon) and the Ranch dressing. Stir well. Add more or less as needed.

This cooks up a nice big batch, and can feed a hungry crowd. The Ranch flavor works great with the bacon, pasta, and chicken. You can also use dried Ranch seasonings and milk or sour cream to achieve a similar yet different taste. As a bonus, you’ve snuck in a serving of veggies per cup!

Happy partying & God bless the USA!

Garlic Roasted Goat Shoulder

For those of you who have never had goat products, I highly encourage you to try them! Everything from goat milk, to goat cheese, to goat meat, is delicious and pretty darn good for you. Goat cheese lasagna is absolutely fabulous, sharper and earthier than any ricotta ever will be, and it makes a great spread for toast or bruschetta. Pairs nicely with roasted sweet potato, beets, and on fresh green salads.

Goats milk is naturally homogenized, which means it doesn’t separate into the “cream” and skim milk, as natural cow’s milk does. The cow milk you buy in the store is one homogenous mixture because of the homogenization process; essentially putting such high pressure on the milk to shoot it through tiny tubes that fat globules break up into itty-bitty uniform pieces that no longer clump together and float to the surface.

Fun fact: baby goats are called kids. So when a goat has a baby, it’s just kidding!

Lame jokes aside, goats are delicious, and also good for the environment. They naturally think some of our worst plant enemies, like poison ivy & thistles, are delicious treats. They can even be used as a carbon-neutral landscaping option! (No seriously, you can rent goats to trim your lawn and get rid of unwanted greenery). As a final bonus, goat manure is odorless, can be directly applied to soil without composting, does not contain seeds, and is richer in nitrogen than that of cows or horses.

Ok, so goats are good at eating bad vegetation. How do they compare to cows and other meat producers? A similarly sized serving of goat meat has a third fewer calories than beef, a quarter fewer calories than chicken and much less fat, and up to two-thirds less than a similar sized portion of pork or lamb (source). They are browsers, not grazers, and a field can handle nearly ten times more goats than cows.

If the “gamey” taste and smell of what you think goat meat is turns you off, you may have had a bad experience. Some cultures prize older, tougher bucks, which are known to have that ‘barnyard’ smell about them. Give a local supplier a chance to show you what a younger cut is like, and you may completely change your mind.

So these little guys are totally adorable, extremely useful, and then completely delicious while also quite healthy for you. What are you waiting for?? Check out a local farmers market, or halal butcher, and find some goat near you.

I found Blue Slope Farm at the farmer’s market in CT. The proprietor, Matt, was there and he was very kind and helpful. He runs a working farm with cows, goats, and a maple syrup distillery. Their products are all local, they hand-raise their herd of over 200 cows each year to produce tender grass-fed veal and are branching out into goat meat. If you’re in New England check them out, they are top notch.

Ingredients:

  • 2 cuts goat shoulder chops
  • 5-10 garlic cloves
  • 4 tbsp spice mix of choice
  • 2 tbsp olive oil
  • 1/3 cup red wine

IMG_9463

Step 1: Drizzle the olive oil in the pan, and sprinkle spices onto chops. Place in the pan and sprinkle spices on the other side too.

IMG_9464

Step 2: Pour in the red wine, and cover. Cook low and slow for 10-15 minutes, until browned.

IMG_9465

Step 3: Using a sharp knife, cut holes in the meat. Press garlic cloves into the holes. Flip chops, cut holes into the other side, and fill with garlic. Cover and cook another 10-15 minutes on low.

IMG_9466

Step 4: Remove cover, turn heat to medium-high. Let wine evaporate, and sear the meat. Once lightly charred, flip and sear the other side. Be careful not to burn badly.

IMG_9468

Serve your delicious, sustainable, healthy chops with some fresh seasonal veggies and enjoy!

Ham & Bacon Melt with Sriracha Mayo

Sandwiches are always amazing. But you know what makes them even better? When they are hot. With melty cheese. And something spicy. Kind of like this one.

Ingredients:

  • 1 large roll
  • 4 slices bacon
  • 1/4-1/2 lb ham
  • 2 tbsp mayonnaise
  • 1 tbsp sriracha
  • 2 slices white American cheese

IMG_9485

Step 1: Fry the bacon 5-7 minutes, until crisp, and place on a paper towel to drain. Wipe or pour most of the grease out, leaving a thin layer. Place the roll in the pan cut-side down to toast. Or, you could use a toaster. Or not toast the bread at all, your call.

IMG_9483

Step 2: In a small bowl, or right on top of the bread, mix the sriracha and mayonnaise, and spread it around. Add cooked bacon on top. On the other slice of bread, layer on the ham and cheese.

IMG_9492

Step 3: Smush the whole thing together, and toast in the frying pan another minute or two, until the cheese gets melty.

IMG_9493

This sandwich would also work great with turkey or chicken, and you could use whatever type of cheese you prefer. I think softer breads are better for use here, because they have a chewy interior that contrasts so well with the crunchy toasted exterior while the white American cheese is creamy enough to tame the spicy sriracha.

Vegan Banh Mi Bonanza

If you love veggies or are looking for a way to get more into your diet, this is a perfect solution. Unlike a typical sandwich containing nitrate-laced and high-sodium sliced deli “meats”, this is a fabulously healthy way to satisfy the most hard-core sandwich craving while doing your body a favor!

Bánh mì is a Vietnamese word for ‘bread’, which was imported by the French during its colonial period. The banh mi is different from the traditional French baguette in that is it made with rice flour as well as wheat flour, typically has a thinner crust, and is ‘airier’ or ‘lighter’. Typically the fillings included meats of all kinds, like pork belly, sausage, pate, pork floss (what even is that?), grilled chicken, canned sardines, meatballs, head cheese, fried eggs, or tofu.

Accompanying vegetables typically include fresh cucumber slices, cilantro (leaves of the coriander plant) and pickled carrots and daikon in shredded form. Common condiments include spicy chili sauce, sliced chilis, mayonnaise, and cheese.

IMG_9490

This particular creation was made using the veggies I most enjoy, and had available. I encourage you to do the same, but also try some new things. If you’ve never had sprouts, give it a shot. Try making your own hummus, it’s super easy! Hummus is also a great way to add extra bulk and protein to vegan meals.

Ingredients:

  • 1 large soft hoagie bun
  • 1 small zucchini
  • 1 large beet
  • 1/4 cup sprouts
  • 1/2 avocado
  • 2 tbsp hummus (try black bean hummus!)
  • 1-2 romaine leaves and/or spinach
  • 2 tbsp red wine vinegar
  • 1 tbsp olive oil
  • salt & pepper to taste

IMG_9482

Step 1: In a frying pan, cook thin slices of zucchini until golden brown on both sides, about 3 minutes per side. (Grilling would also work. Other veggies you could use include: onions, mushrooms, bell peppers, hot peppers, eggplant, carrot).

IMG_9486

Step 2: On one piece of bread, spread your hummus. (Guacamole would also be delish here). On the other slice, drizzle the olive oil and vinegar, and sprinkle with salt & pepper.

IMG_9487

Step 3: Layer all the veggies onto the bread. I roasted my beet in the oven at 350 for 45 minutes then peeled it. You can do this ahead of time, or use canned & drained beets to save time.

IMG_9488

Here it is with the sprouts & sliced avocado. Then just try to mush the two halves together without losing most of the fillings.

IMG_9489

And there you have it! This gigantic, delicious beast tasted AMAZING and kept me full for hours. You would be surprised how easy to put together these are once you have whatever ingredients you want to use, and just how dang tasty they are. Chili & Greens Smothered Potato

Whether for a quick snack or a hearty, filling meal, smothered potatoes are a go-to for me. A plain potato has 150-200 calories, along with magnesium, B vitamins, and a surprisingly high amount of vitamin C. Potatoes get a bad rep mostly because they are usually served or cooked with other things that are far less healthy for you, like butter, margarine, sour cream, and cheese.

The better options for topping your tater include: greens, fresh veggies like broccoli, onion, peppers, avocado chunks, beans, salsa, corn, and of course, chili! I used my delicious vegan three-bean chili. You IMG_7594will use leftover chili, or store-bought, whatever kind you like. If you don’t have chili, looking up this recipe is silly isn’t it?

This baked potato takes mere minutes to put together, and is perfect for a portable lunch. You will need a heavy plate and utensils though, no eating while literally on the run here. It is packed with vitamins and nutrients, filling fiber, healthy fats, and staying power from protein. And it’s totally vegan! But you won’t even know the meat is missing, it’s that good.

I used homemade sauerkraut on mine, because I totally love this tangy, salty stuff. If you hate it, don’t worry about it. Not required for the experience. Sauerkraut is ridiculously easy to make, by the way, and crazy good for your digestive health. I’ll have to post on that soon…

Ingredients:

  • 1 medium baking potato
  • 2/3 cups vegan 3-bean chili
  • 1/2 an avocado
  • 1/3 cup broccoli florets
  • 2-3 large kale leaves or 1/3 c spinach
  • 2-3 tbsp sauerkraut

IMG_7593

Step 1: Rinse well, and poke holes in the potato. Microwave on high for 5 minutes, turn it, and microwave another 4 minutes.

IMG_7595

Step 2: Cut the hot potato in half, and place on a large plate. Top with the greens, broccoli, and chili, and microwave another 1-2 minutes. Add the sauerkraut and avocado, season if needed and enjoy!

Sweet Potato Shepherd’s Pie

A favorite of some, a mystery to others, the sweet potato is a nutritional powerhouse long under-appreciated by the mainstream. Sweet potatoes are an excellent source of beta-carotene, vitamin C, copper, and several B vitamins. They also contain digestive-health-promoting fiber, potassium, and phosphorus.

Luckily more and more people are getting on the sweet potato band wagon. While delicious on its own baked or steamed with a drizzle of cinnamon-sugar or maple syrup, there are many ways to use this delightful vegetable. Cook as you would a regular white potato and use instead for healthful results.

This recipe takes a classic comfort food and switches up the ingredients to create a new classic that’s far more nutritious and healthy. Small swaps can lead to big results, and can introduce your taste buds to whole new worlds. Starting small is a good way to slowly introduce someone (or yourself) to a new flavor without being overwhelming.

I use half white and half sweet potatoes for the topping here, and create my own creamy filling to keep the fat content in check. Stuffing as many extra veggies as possible in is also a great addition.

Ingredients:

  • 2 sweet potatoes
  • 2 regular potatoes
  • 1 cup shredded cooked turkey or chicken
  • 1 16oz bag of frozen mixed vegetables
  • 1/2 cup soy/almond milk
  • 1/2 cup sour cream or plain greek yogurt

IMG_8817

Step 1: Dice your potatoes into small chunks. Bring a large pot of water to a boil, and simmer the potatoes for 10-15 minutes, until soft. Drain, and mash together.

IMG_8900

Step 2: Spray an oven-safe pan, and add the frozen mixed vegetables. You could microwave and thaw them first if you have time. Add the milk, sour cream, and turkey and mix well. Leave the turkey out if you’d like a vegetarian dish.

IMG_8901

Step 3: Cover the veggies with the mashed potatoes. Pop into the oven at 350 for 45-60 minutes. Cook longer if you didn’t thaw the veggies first, less time if using fresh chopped veggies that are dry.

IMG_8902

Scoop out a helping and season as you wish. The sweet potatoes do live up to their name and will add a slight sweet taste to the dish. I think just about any mix of veggies would work here, but I especially liked the broccoli/cauliflower and zucchini. This dish has tons of healthy nutrients and minerals with very little fat.

Salsa Chicken Soup

Every once in a while, even those who most love cooking are just too tired or out of ideas to cook. That is the perfect time for me to pull out this little gem! I love recipes that are fast & frugal, and this one is both with the added benefit of being healthy as well.

Whether crunched for time, short on creativity, or you didn’t have time to run to the store so what you have on the shelves is what you’ve got for dinner, this recipe is bound to please. Especially if you do not like to cook any time, this recipe is perfect for you.

Simple: just open a few cans, dump into a pot, and dinner is simmering away. If reading isn’t your thing, and you’d rather see just how easy this is, you can check out the YouTube video, or scroll to the bottom of this post.

IMG_9202

Ingredients:

  • 1 can diced tomatoes
  • 1 can corn
  • 2 cans any type of beans (I used balck and red)
  • Optional: 1 can chicken
  • 1 cup salsa
  • 1 gallon water
  • Optional: Chicken bouillon

IMG_9203

Step 1: Open the chicken, beans, & corn, and drain if you’d like. Rinse the beans to get rid of excess sodium. Honestly, I just throw all of it in the pot for flavor.

IMG_9204

Step 2: Pour the water and canned goods into a pot, not draining the diced tomatoes. I usually use diced tomatoes with green chilies because I like the extra spice. You could use regular tomatoes to tone it down, or dice up a jalapeno and throw it in or add hot sauce for even more spice.

IMG_9209

Step 3: Add in the salsa, stir it all around. Bring to a boil, then let simmer for 20-30 minutes.

IMG_9215

This could also be made by throwing all the ingredients into a crock pot on low all day.

IMG_9217

Suggested toppings include shredded cheese, crushed tortilla chips or torn tortillas, and sour cream.

If you choose, you can use cooked shredded chicken breast instead of canned. Or you could leave out the chicken for a hearty vegetarian soup, both ways are delicious.

Ginger-Peach Slow Cooker Chicken

.
I love slow cookers any time of year, because who wants to turn on a hot stove in the summer, and who doesn’t want to come home to a ready-to-serve hot meal in the winter! And we are all on-the-go every time in between, so time savers are a life saver.
.
This recipe is super simple, just combine a few ingredients with your raw or even frozen chicken, and come home to delightfully fragrant house ad a sweet and salty entree. With asian flavors like ginger and soy pairing perfectly with sweet honey, orange, and peaches, this is a simple dinner the whole family will love. You can even cook the rice a day or two before for a completely fuss-free meal.
.
Ingredients:
  • 4-5 frozen or thawed chicken breasts
  • 1 cup orange juice
  • 2 tbsp honey
  • 1/4 cup soy sauce
  • 1/4 cup peach marmalade (or 1 whole peach)
  • 2 tsp ground ginger
  • 2 inch piece fresh ginger
  • 2 tsp garlic salt
Step 1: Put the chicken in the bottom of a slow cooker, and pour the liquids on top. Drizzle on the honey & marmalade, and sprinkle in the spices (to taste).
Step 2: Peel the ginger, and dice into slivers. Put those on top of the chicken breasts.
Step 3: Cook on low for 6-8 hours, or high for 2-3 hours.
Place a cup or so of rice on a plate, add the chicken, and pour on some of the extra sauce. Dinner’s done!

Other optional toppings you could use: diced fresh herbs like chives or green onion, orange slivers, almonds, crushed ramen noodles, basil, jalapeno slices….
