Weekly Eating – 9/24/18

 

Hey y’all! Welcome to the series Weekly Eating.

Here is where I’ll talk about the week’s meal plan versus reality, what we ate for the week, and how we did budget-wise. I hope it gives readers a behind-the-scenes look into our life through the lens of food, and it’s also a way to keep us on track with meal planning and grocery budgeting.

The weekend was a good mix of relaxing and productivity and fun. I spent some time on Saturday whipping up a batch of hot sauce in green and red, along with some pumpkin cookies for this month’s food swap. I ended up with enough hot sauce that I kept plenty for us and also a bottle of each to swap.

I also finally got around to pulling up all the dead and dying summer plants from the garden. The tomatoes had been sadly neglected, as evidenced by several (at least 4) enormous hornworms I found. Like, these suckers were the size of my ring finger for sure. It was fascinating and terrifying and gross.

And did you know they are a favorite host for parasitic wasps? Yeah… Nature, you creepy.

In better news, we also attended the Eleventh Annual Pepper Fest! Held in Briar Chapel, between Chapel Hill and Pittsboro, it is a wonderful day filled with music, dancing, acrobatics, and all the pepper flavored culinary delights.

NC Pepper Fest 2018

Monday:

Breakfast – Peach oatmeal. I need ALL the peaches before the season is over. way too soon, as always.

Lunch – I made a triple batch again of this cauliflower barley bowl, it is so dang good.

Dinner – Tonight’s dinner got muy fan-say. I had king oysters and enoki left over from a stop at my favorite asian grocery, so I made King Oyster scallops with rice noodles & enoki base, and a vegan cashew cream sauce. Too legit to quit, the boy even said it was awesome. I could charge $60 a plate for this ish.

I also had several passion fruits from a vine I found, and tried my hand at a coulis, which turned out divine when mixed with soda water. Homemade soda this week homies!

Tuesday:

Breakfast – more oatmeal!

Lunch – more Cauliflower Barley Bowls!

Dinner – This was the Food Swap, so I mostly nibbled on samples.

But when I got home the boy let me have a half a burrito he hadn’t eaten with his dinner 🙂

Wednesday:

Breakfast – Cocoa puffs lol at least I used homemade cashew milk

Lunch – red lentil dal with rice, hot sauce, crème fraîche, and a garlic curry sauce from the swap. YUM.

Dinner –Baked cod with red potatoes and asparagus. Super simple, healthy, and tasty a.f. Also the writer of the recipe is freaking hilarious and I’m now a confirmed follower of her blog.

Thursday:

Breakfast – Smoothie. I got a cherry berry mix from the store, and it has cocoa nibs… I hate that. They are chalky and crunchy and I don’t want to chew my drink thank you very much. Now I know.

Lunch – Cauli Cashew bowl! Last one.

Dinner – Thursday Night Co-op! Today was BBQ pulled pork with slaw and chips, and dang was it good!

Friday:

Breakfast – breakfast burrito w peppers, onions, mushrooms, and tomato + hot sauce. nom. nom.

Lunch – Leftover mushroom scallops & last of the seaweed salad

Dinner – well, this turned into one of the most frustrating days of all time when my car smelled like smoke and just stopped running… and after the third tow didn’t show up I said forget it I’m just dealing with this later, and the hubs was sweet enough to take me to dinner, where I could drown my sorrows in a fishbowl margarita! The day got much better after that…

Also the tacos al pastor were DELISH. I was in pain for hours afterwards because I was so full, but, #worth.

The Weekend

I’ll spend a big part of the weekend trying hard to stay off Twitter due to all the things I’m missing by not being at FinCon!

But there is plenty to keep me busy. Like planting all my remaining cold weather goodies like broccoli, cabbage, kale, beets, and radish.

And pulling weeds. And planting oodles of bulbs now so our yard is a riot of color in the spring. And some garlic. And cleaning, which never ends. And turning this bumper crop of Carolina Reapers into delicious, face-melting salsa.

Food Total: $28.61 + 10.81 + 31.57 = $70.99

Not bad overall. One trip to the co-op for bulk barley and more canned pumpkin, one trip to Harris Teeter for cheese and other stuff, and a Produce Box delivery.

Lessons Learned

I enjoy eating the same meals over and over (see, 3 days of cauliflower and barley!) but I also really enjoy trying new recipes (mushrooms as pasta and scallops in the same dish? why not). Both of these things help me save money in the long run, as it keeps cooking at home interesting.

But, going out sometimes is ok too. The experience, not having to do dishes, and eating foods you probably wouldn’t take the time to make yourself all make it worth it. As an occasional treat though, not a daily ritual.

Also gardening is an immensely  satisfying hobby. Even when nothing grows. Even when the only thing you’re feeding is the bugs this year. Even when it rains too much, or not at all. The feeling of kneeling in soft dirt, smelling like compost and rain and Earth, digging holes and tenderly laying baby plantlings in there with the hopes and dreams of their leafy future… there is nothing else like it.

Guess what??!!??

I’m back!

(I know, you’re like, duh, I’m reading this so clearly that is true)

The boy is a magical wonderful unicorn man who fixes the things I break, bless his heart. I’d be a sad half of a whole without him. There are still evidently several hundred thousands of folders that we aren’t sure where they’re originating from, but he deleted enough that things can happen again.

I don’t know what coder magic was wrought upon this blog, but the glorious outcome is that we are back up and running!

I never thought I’d be so excited to see a spinny wheel of update. That little round and round arrow meant my site could create new folders again, and with a push of a button I could single-handedly update WordPress and all 9 plugins which required it.

Ahhhhhhhhhhhhhhh…… big sigh of relief.

So I am officially back from my sort-of-forced “break”.

I wish I could say that I’ve spent the past few weeks brainstorming blog posts and series, or writing anything at all. But nope. I’ve used the past few weeks to enjoy the heck outta life, going lots of places and having tons of adventures and summer fun.

That is the point of a break I guess. I’m not good at ‘resting’.

But the flip side of that is, I’ve gone places, and made and tried a bunch of fun foods and recipes. And I want to share it with you.

So without further ado, here’s a brief overview of some highlights from BE’s summer so far!

 

Places We’ve Been

Well, I finally went on my ‘graduation’ cruise to Alaska! It was a gift from my aunt, supposed to be 10ish years ago. We finally just picked a week, and this May we cruised up and down the coast, visiting Skagway, Juneau, Ketchikan, Glacier National Park, and finally Victoria British Columbia.

It was as beautiful as everyone said it would be and the photos make it look. The mountains were breathtaking, surrounded by icy blue water everywhere. We lucked out big time and the weather was phenomenal the whole trip. We even got a sunburn from sitting on the deck reading on one of our sea days!

Both before and after the trip I took an extra day to spend some time with Angela from TreadLightlyRetireEarly and her husband and kiddo in Seattle. They were wonderfully gracious hosts, and went out of their way to make me feel like part of the family.

We had a ball visiting Woodinville and wine tasting, taking long walks and hikes along the river and in the park behind their house, and hunting for deals in the ethnic grocery stores.

We traveled to historic New Bern, CT for our 2 year wedding anniversary weekend. Did you know New Bern was the original capital of NC? I didn’t either! They also were discovered by a Swiss explorer, and Bern means “Bear”. So there are all these adorable painted bears all over town.

We stayed at a fantastic little cottage AirBnB, and the whole town was so quiet and relaxing. We took the pups with us too. Lots of long walks around town and to the beach, and we got to pop into all the little shops. New Bern is also the birthplace of Pepsi, so of course we got an old fashioned float.

Then we spent a whole day driving down to the “Inner Banks” coast and explored tons of little beach towns: Morehead City, Beaufort, Atlantic Beach, Pine Knoll Shores, Indian Beach & Emerald Isle. And we took a ferry out to Carrot Island for a nice long hike and to see the wild ponies! There was only one out and about; it was a really hot day.

We’ve also made it out to Sunset Beach a few times, once for a friend’s 30th birthday week and again when my mom was in town. Beach time is always so relaxing and awesome! Though I’ve now gotten sunburn thrice, which is not great, but I do have a nice tan.

Speaking of relaxing and awesome, I also got to go on a camping weekend to Morrow Mountain State Park. It is about 2 hours SW of the Triangle, nearly all the way to Charlotte. It is along the Pee-Dee River, and backs up to the Uwharrie National Forest.

There were 5 of us and 3 dogs in total, and we had a great time hiking, relaxing, playing with fire and eating s’mores.

We used the Jumbo marshmallows, which was ridiculous.

We did a total of about 11 miles between Saturday and Sunday. There are some pretty great views. But we were definitely all feeling it! The pups did great, hiking the whole way. Except the last half mile or so on Sunday, the little girl hurt her paw on the sharp rocks and was limping, so I did carry her for a bit.

Andddddd, saving the best for last, I MET THE GROOVIES!

They have recently relocated from Charlotte to Wake Forest, which is super close to Raleigh. Read all about their homestead building adventures here. We met up at the Raleigh Beer Garden for some good beer, good food, and great conversation.

Things I’ve Made

Well, we finally tried a Vegan Week! It was actually the boy’s idea!
(I know, I was as shocked as you are).

It went quite well, and we tried a bunch of new foods: soy nuggets, sweet potato puffs, lentil sloppy joes, & cashew cream to name a few. Mr. Tako inspired me to bring matcha lattes back into my occasional treat repertoire, and I’m sure glad I did.

There have been a few Bull City Food Swaps, one of which I missed due to travel. My energy bites were a bit of a hit, while the flip flop & bikini Nutter Butters did not go over as well. It’s always a bit of a crap shoot, what other swappers are looking for. And, we might get featured in a news article soon! So that’s cool.

I also finally got around to trying out Erin’s Turkish Red Lentil Soup recipe! I used Gochujang instead of Red pepper paste. Luckily she isn’t going to stop being friends with me over it. And I’ve baked several more loaves of the perfect white bread, feeding my current breakfast addiction: cinnamon sugar toast.

Oh, and I think I’m giving up drinking the water where I work, because now I know 2 people who just had a baby and 2 more with buns in the oven! The only buns I want in my oven right now are the ones I plan to take to a swap…

Anyways.

A work friend threw a very nice baby shower for one of them who is about to have their first little girl. So I decided to make a nice stack of easy freezer meals for the parents-to-be. It took me less than a half an hour to whip up 5 different meals, using things I already had in my freezer and pantry. Post to come soon.

The new parents were very thankful for one full week’s worth of dinner they didn’t have to think about. They are all designed to be able to be thawed and tossed right into a slow cooker. He reported back that they both loved each one and had used them all up in the first week home!

Garden Update!  🌱 🌼

The early spring plants are dying now, we got a few good salads out of the spinach and romaine. Sadly it got too hot too fast for the broccoli, and they went to seed before I got any. C’est la vie. I got 8 different tomato plants in the ground and they are starting to flower.

My sweet potato is getting out of control, and I planted more purple sweet potatoes, with no leaves yet but tiny buds are beginning to poke out of the ground.

The beans were slow to start but now they’ve taken over the trellised back fence area, and some are nearly ready to harvest!

The peas seem to be struggling in the heat, I don’t have high hopes there unfortunately… The zucchini and squash and cucumber didn’t come up so I did a second seeding, and they are now getting big and happy, and even have some flowers.

We invested in future years’ harvest at our house by planting some asparagus this year, and blueberry and blackberry bushes. The blueberry look like they may be struggling, but the blackberries are started to pink up a bit!

And then…

Disaster struck.

SOME MF-ing ANIMAL GOT OVER A 6 FT FENCE AND INTO THE BACK YARD AND ATE THE BERRIES.

All of them.

Even the green ones.

Down to the stem.

If anyone knows a super-lethal-to-deer-but-doesn’t-harm-plants solution, I’m all ears. I will turn those jerks into venison hash.

In the front area, the herbs are doing great. I’ve already gotten several batches of pesto, from the 3 I planted this year plus several volunteers from last year’s seed. I need to do something with the huge sage bush and rosemary hedge (this thing is ridiculously hearty and starting to take over).

The damn deer did also get the tomato and beans in the front. Not that I didn’t see it coming… I even had been spraying ‘deer-away’ after each rain. Oh well. It is food after all.

And then my adorable neighbor called me one night, and had gotten a great deal at the local nursery on some plants. He had more than he could fit in his yard, so he gave me a flat. I put in 4 coleus, a giant pink begonia, and several pink/purple ones I don’t know the name of.

I like the pops of color in the front yard now.

The next day, he called again, with 3 more flats of plants to give me!

We are overwhelmed with flowers now. But, our across-the-street neighbors were coming home right about the same time, so I called over to them if they wanted some. Their 2 little girls just lit up when I said they could pick out their favorites to plant. It totally made my day to see them so excited, and share the generosity.

Weekly Eating – 4/2/18

Easter weekend was filled with relaxing and outdoor adventures! Friday was a day off, which was awesome, and I got to take a 5 mile hike, resulting in a new high score for daily steps this year. Then on Saturday we were all about gardening. I got broccoli, spinach, and romaine sprouts in the ground, as well as some beans and peas.

We also are trying berries this year, with 4 blueberry and 4 blackberry bushes. The back yard is super shady (thanks to a million trees) but we are planning on taking several down this summer, and hopefully there will be enough light that the bushes can at least survive and establish themselves. It would be amazing to have pounds of free organic berries every year!

And on Easter Sunday, I decided we should at least do a little something to celebrate. We have no kids and no family nearby, so your typical church or egg hunt or Easter baskets or brunch were not happening. Instead, I made some French toast, and cut a piece in half to make bunny ears! Then I used colored white chocolate and sprinkles to make a cute face. It was tasty, and we hadn’t had French toast in a long time so we both enjoyed it.

Oh, and back to Lowes we headed, because the boy wanted to complete a project we had talked about several times: building a stone fire pit! We had a small plain metal fire pit that sister in law gave us for our housewarming gift, but we wanted to spruce it up and make it look more permanent. So we got a big pile of stones (thank goodness they were on sale, why are literal rocks so expensive?!) and he built up a lovely fire pit ring.

And while the boy was playing with rocks and building that, I was playing with tortillas and building some enchiladas. I consider that a fair trade. For Sunday dinner we had turkey or black bean enchiladas with Spanish rice and  watermelon mojitos I’d found in the freezer from last summer. Then we hung out outside during sunset & into the night to enjoy it. I’m looking forward to many bonfire nights.

Monday:

Breakfast – Coffee with protein powder, & an energy bar

Lunch – Frozen lamb stew, & a salad. Over the weekend I also did a quick freezer inventory, which happens a few times a year. This way we find ‘lost’ food and hopefully waste less. I pulled out a few things to thaw and eat up this week.

Snack – I had a meeting after work, and was planning to go to dinner afterwards. But I was also pretty hungry by 5:30pm, so I stopped real quick at a Walmart, and they had a snack box on sale 1/2 price. So I grabbed it, and enjoyed the apples and grapes and cheese. I ate about half, and gave the rest to the boy at home later.

Dinner – Chicken fajitas! It’s always so fun when they bring out that sizzling plate, and I feel like an artist crafting my tacos. I also always end up with leftovers, which is like a 2-for-1 meal deal.

Tuesday:

Breakfast – Blender crepes with Lemon yogurt filling! I followed the recipe almost exactly (I know, gasp) but also added in a spoonful of cottage cheese to the filling, because I honestly forgot I had it and needed to use it up. I also microwaved a cup of blueberries to put on top. SO GOOD.

Lunch – Leftover black bean enchilada and Spanish rice

Snack – If you are my friend on Twitter you know I succumbed to the sugar demon… someone at work is having a baby, so there were tiny cute cupcakes in the office! I ended up having 2, 2 days in a row…

Dinner – Lemon garlic asparagus pasta, a recipe Kroger sent me in the mail with my ‘super shopper’ coupons. For the boy I cooked some chicken quarters too.

Wednesday:

Breakfast – Skinny vanilla latte and pumpkin bread. I have a Starbucks gold card (I don’t know how that happened either, but it has my name on it so it’s not a mistake…) and today was super double star day! That means I get 4 stars per $1 I spend. Starbucks is a rare treat for me, and I hoard giftcards just for these days.

Lunch – Chickpea salad sandwich with some carrots. Y’all. This has seriously changed my life. I added a sheet of nori seaweed in the morning when I made the sandwich, so the bread wasn’t soggy and the seaweed was soft by lunch time. This is mindblowing, it is seriously better than tuna salad. I’m in love.

Snack – a cherry yogurt

Dinner – Chana Saag and brown basmati rice

I’m so excited its spring, because Farmers market Wednesday is back! I didn’t know and as I walked by the tables I was drooling over all the gorgeous in season greens. I dug through my pockets and came up with 3 dollar bills, and don’tcha know, that was the price for a big bundle of collard greens!! My lucky day.

Thursday:

Breakfast – More crepes with lemon yogurt and blueberries

Lunch – Chickpea salad sandwich with carrots and clementine. I ate the CLIF cherry-chia-apple bar as a snack around 4pm. It was really tasty, and I’m so sad I didn’t buy every single clearance box.

Dinner – I needed to do something creative with the gorgeous leafy Swiss chard I bought yesterday, so I made some spring rolls!

I used this recipe (mostly because I have a childish sense of humor and liked the site name) and even remembered to cut the veins out, but totally forgot to steam them… oops! The leaves were tender enough though, and they were really good. And actually really filling.

Even the boy said they didn’t suck. He said the peanut butter sauce made him nervous, but it was surprisingly good.

Friday:

Breakfast – Crepes filled with peanut butter and banana and drizzled with honey

Lunch – Leftover Chana Saag

Dinner – I finished off the Swiss rolls. And then went out for some drinks with friends, which was so fun! But, also, led to Taco Bell on the way home… What can I say, sometimes a rice and bean burrito and cinnamon twists just has to happen.

 

The Weekend

There’s a slight chance I’ll hit the stores again Saturday, because Kroger is running some really good sales. But I told myself I’m not allowed to go unless I take the boy with me, so he can keep me from browsing and over spending!

I’m actually really happy it’s raining this weekend, it should help the berry bushes and garden plants we planted last weekend get more established (and let’s be real, I can be lazy and not water!). But it does put a damper on my hopes of hiking a lot… probably will be a very chill weekend.

I definitely need to do some laundry, I think it has been almost a month! I re-wear heavier things that don’t get dirty, like blazers and jeans, and the only things that automatically go into the wash pile are undies, socks, and workout clothes when I actually sweat in them… so… since I’m nearly out of all of them I guess it’s time!

 

Food Total: $26.93 + $3 cash

Woo hoo for low grocery totals!

I meal planned a bunch of things that were already in the pantry, and cleaned/inventoried the freezer. So the majority of our meals this week were ‘free’, or pre-paid basically. Then I made a quick stop to a WalMart while in the area, because we were nearly out of yogurt and that makes the boy sad.

And this total includes mascara and soap, which aren’t even food! So really it’s more like $20 total, plus $3 cash for Swiss chard.

Lessons Learned

I definitely need to keep up with eating from the freezer and pantry. I come from a family that is borderline Hoarders, never wanting to throw things out and always maximizing sales. I definitely think if you have the initial cash that stocking up will save money over time… but only if you then use the items!

At this point my pantry is full to bursting and it’s getting ridiculous. I need to work pantry items into the meal plan each week, not only to use things up before they expire but also to keep our future grocery totals low. So the focus will be on using up staples with interspersed seasonal produce, until my pantry is as sleek and gorgeous as Dr. McFrugals! #goals
