Weekly Eating – Jan 25 – Feb 7

 

Hey y’all! Welcome to the series Weekly Eating.

Here is where I’ll talk about the week’s meal plan versus reality, what we ate for the week, and how we did budget-wise. I hope it gives readers a behind-the-scenes look into our life through the lens of food, and it’s also a way to keep us on track with meal planning and grocery budgeting.

Well, sorry about not posting for a week, there’s kind of a bit going on right now… We bought a(nother) house!

The Triangle real estate market is completely out of control right now, houses are on the market for literally a few hours and already contingent. So when the totally perfect gem came along, we had to act fast. I’ll tell that story some other time, but for now just know the next few months are gonna be HECTIC, so, apologies in advance if I slow down and/or disappear for a little while.

Anyways, 2 weekends ago was chill, just grocery shopping and chores around the house. Kiddo had a bit of a hard day with fussing, and also four outfit changes… at least we know he is well hydrated! And then on Sunday, I went for a long hike with my bestie. It is so very good to get outdoors into nature, get some nice workout time in, and spend time just talking about life with people you love.

Sunday night, sister-in-law’s boyfriend was in town so they came over for a few hours to play games and hang out. He works with patients, so he got his vaccine, second one in a few days. This is so so exciting to me, as someone who loves people, to know there’s a light at the end of this year long, lonely tunnel.

And I made a penne bake that was amaaaaazing and actually pretty healthy! The “meat” sauce was tempeh, mushrooms, and onion, but I did cover it in cheese. What can you do with two Italian loving men, ya know?

The following weekend was so great for my soul, because I got a lot of friend time. I went to Costco with some friends to mooch off their membership! We are doing a card churn with Citi to get bonus miles and need to hit a minimum spend. But, to my dismay, I found out in the checkout line that they no longer take American Express, only Visa! Tragic.

I still saved on things we would have bought anyways, but it was a bummer. Bestie also works in healthcare and has both vaccines now, so she was able to come over and play with the baby! It was the first time a non-family person was in the house in… like a year. Which is insane.

And finally, we had a distanced outdoor bonfire with another set of friends who had a baby boy just a few months after us. So it was cool to get to see how big he had gotten, and compare notes. Oh and then we bought a house.

So, anyways, here are 2 weeks worth of meals in review! (Also side note blog is not allowing photos to upload right now… sorry you can’t peek at all the deliciousness, but I’ll figure it out)

Monday:

Breakfast – banana bread with honey butter, then a ham egg and cheese breakfast bagel

Lunch – giant salad, 1 taco and a southwest salad

Snack – roasted chickpeas, and apple/peanut butter

Dinner – creamy mushroom & potato soup, and a homemade burger & fries with grilled mushrooms/onions and bleu cheese, yum!

Tuesday:

Breakfast – breakfast skillet bowl with potatoes, peppers, onions, mushrooms, and tofu sausage, and peanut butter toast + banana

Lunch – grain bowl with barley, roasted veggies, tofu, and hummus, and roasted veggies salad

Snack – popcorn and nuts

Dinner – leftover pasta bake and garlic bread, and chickpea curry with rice

Wednesday:

Breakfast – peaches & cream oatmeal, and peanut butter toast with fresh blueberries and raspberries

Lunch – giant bagged southwest salad and blueberries, and leftover burger/fries plus steamed broccoli & carrots

Snack – tea & shortbread cookies, and popcorn

Dinner – tofu & chickpea tikka masala, and salmon with roasted root veggies

Thursday:

Breakfast – potato and egg burrito

Today was NC’s first snow, and kiddo’s first snow ever! He was mostly not impressed haha

Snack – shortbread, a clementine, and tea

Lunch – giant salad

Dinner – leftovers

I also got my first Produce Box in a while, they had some great deals on root veggies so now I’ve got beets, sweet potato, carrots, kale, and more.

Friday:

Breakfast – peanut butter toast and a banana, and a green smoothie

Lunch – giant salad with strawberry vinaigrette, and a giant salad with salmon, roasted veggies, and edamame

Snack – kind bar, and apples and crackers

Dinner – burrito bowl with turkey, rice, roasted veggies, salsa, guac, and mushroom soup

The Weekend

Whooo boy, so basically all free time is now thinking about moving, and preparing for moving. I need to find a mountain of boxes, cause we have been burning ours in bonfires (oops) since we had no plans to move so soon. We will have about a 3 week overlap, and hope to have our current house rented out by April 1, wish us luck!

Also having another bonfire with different friends. It’s so great to finally be seeing people again regularly. And so many updates. Marriages, houses, babies, adopting dogs… good to know life is still going on out there. Oh, and the Super Bowl. But it starts at 6:30, we are not about that late night life, so I’ll just find out on the news on Monday who won. #Iwasagrandmabeforebecomingamom

Food Total: $162 + 206

Yikes… and this is without adding the amount spent on wine and formula… A bottle for baby, a bottle for mommy! lol Plus the Costco stockup trip where I got berries, spinach, salad, a pillow sized bag of broccoli, assorted spices, chicken, salmon, and pork chops, and so much more.

Kiddo eats real food, I still feed him 3-4 times per day, and he takes 2-3 bottles as well. We were lucky enough to have a friend gift us several boxes of formula their kid just went cold turkey and stopped drinking, but now that supply is gone. I also lucked out that there was a brand that must be discontinuing soon because it was on clearance, and was a ‘breastfeeding supplement’ anyways, so we are going to try that one and see how he likes it.

There were also just a lot of staples on sale that I took advantage of to restock some supplies. We got canned beans, tomatoes, corn, pasta, sauce, tortillas, granola, oatmeal, bagels, granola bars… along with lots of produce markdowns like $3 off bagged salad mixes and pints of mushrooms for 0.29! Of course now that we are moving in like a month I am kind of regretting the full pantry…

 

Lessons Learned

Opportunity truly is where patience meets action. We have been talking about what we want in our long term house forever, basically since we first moved here almost 5 years ago. We have been stalking the market all along, with alerts set for certain criteria.

A few tempting ones had come along over the years, but none that checked basically every single box like this one. So, when it’s right it’s right! And we gotta just go for it so we don’t miss our chance.

The weekend with the sister in law was super fun. I love having people visit so I can cook for them, and an excuse to go out too. She liked Durham, and I think she wouldn’t be too mad if she ended up moving here.

The birds are laying pretty well, I’m getting 3 eggs a day on average, sometimes 4. And the soy sauce is starting to get some color to it. I try to keep it by the window with the blinds open so that it gets some sunlight, that is supposed to help it darken.

Monday:

Breakfast – Peaches & Cream oatmeal. 1/2 cup oats + 1/2 can of peaches, microwave 1 minute, stir. Add 1 tbsp ground flaxseed and a splash of almond milk, microwave 1 more minute. Done.

Lunch – leftover red beans and rice, with some roasted broccoli and cauliflower. Clementine for dessert.

Dinner – Teriyaki tempeh! One of my absolute favorite things to do with tempeh.

Tuesday:

Breakfast – wasn’t very hungry, so I just had an apple. Clearly, I need to remove my current nail polish…

Lunch – leftover pierogi: mashed potato and applesauce. With some fresh cherries.

Dinner – Polenta and charro beans. The polenta was supposed to set in cans so I could cut them into rounds, but that didn’t work. So I just plopped it in a pan and baked it. And the charro black beans are a friends’ recipe that is super tasty.

Wednesday:

Breakfast – accidentally skipped it…

Lunch – leftover rice and roasted veggies with falafel balls and hummus, big salad on the side

Dinner – Simple: pasta shells with organic mushroom sauce, edamame on the side. And I found Lienenkeugel Berry, so yeah, that’s my favorite light beer and I bought some.

Thursday:

Breakfast – Strawberry and peach oatmeal. Handful dried peaches sliced, 1/2 cup oats, 1 cup water. Microwave. Add some fresh diced strawberries and chia seeds, microwave again.

Dinner – out to the Carolina Brewery in Chapel Hill. I had the Veggie Burger and fries. It was really good, hearty with black beans and some subtle spice. The slaw was meh. But the honey wheat beer was darn good.

Friday:

Breakfast – leftover sweet potato waffles with berry sauce. Just microwaved a cup of frozen berries with some maple syrup and blended it with an immersion blender.

Lunch – repeat of yesterday’s leftover lunch, plus salsa

Dinner – dinner party at a friend’s house. She made an amazing salad with pulled pork and a creamy cilantro sauce. I am totally willing to break veganuary for the sake of hanging out with good friends and catching up since the holidays. Plus it was damn good!

The Weekend

This weekend I have a Durham food tour on Saturday, so that should be fun. And we got invited to hang out with our neighbors on Sunday. Looking forward to getting to know them better. Since Monday is a holiday, I think that will be the around-the-house productive day.

Yeah… I didn’t want to admit to this but I can’t lie to yall. I went to the store with the intention of buying 3 things, for a total of $12. But then I saw the clearance cart, with some things we use often at a ridiculous deal. When something you need that is usually $43 is marked down to $13, you buy it all!

Then I made the mistake of calling the boy to see if he needed anything while I was at the store. He has recently become hooked on the dried fruits and nuts as a snack too, so we are now basically out, and he requested more. And to balance the $50 of healthy food, we also ended up with $50 worth of beer haha

Oh man, the weekend at the cabin was glorious! Since it was later in the fall than when we went last year, the colors were absolutely breathtaking.

It is just the best feeling to know there is nothing you have to do right now, just relax and enjoy. It was a great group of people too, which helps. Everyone just kind of comes and goes and does what they want to do. Sometimes you play games, sometimes you read, we went for a lot of walks, kayak and canoe trips.

We also went apple picking in a town nearby! I thought apples didn’t grow in NC very well, but I guess by being up in the mountains the weather and terrain make it possible. So we had a really fun day, and picked over 30 pounds of apples. They will go home with each of us to become snacks, pies, and sauce.

And of course there was no shortage of food. Everyone brought at least one meal to share, and everyone also brought snacks. I think a few spoonfuls of broccoli and a pinch of lettuce were the only vegetables consumed all weekend haha

But that’s ok, life is all about balance. When you’re hanging out with friends, on a once a year trip, if your diet is 90% meat, beans, and cheese, I think we will survive.

I miss it already. Can I go back yet?

Monday:

Breakfast – Pumpkin bread with cream cheese icing! Spoilers, this was breakfast all week  🙂

Lunch – Pumpkin Risotto! Exactly the same as the Butternut Squash Risotto, I just used pumpkin puree I’d done in the instant pot.

Dinner –Loaded nachos with sweet potato and black bean southwest bowl. Just put a can black beans, 1 can pinto, 2 large diced sweet potatoes, 1/2 lb beef, and 1 can tomatoes in the instant pot. Cook for 15 minutes, done. Topped w plain Greek yogurt, 1/2 avocado, and cheddar.

Tuesday:

Breakfast – attempted to make oatmeal stuffed apples in the instant pot. They ended up way overcooked, and turned to mush… so no new recipe for you guys sorry.

Lunch – Leftover buffet! Leftover buffets are an amazing way to clear out the fridge, and keep from wasting food.  We usually do so once a week or so, on the weekends. Just pull everything out, and let everyone pick and choose what to put on their plate.

Snack – tea time! I found the Stroopwaffels I bought a while ago, and decided now was the time to try persimmons for the first time. I had a cup of green tea with a Fuyu persimmon & Stroopwaffel and it was awesome. If you’ve never had a persimmon, do yourself a favor and get one now!

Dinner – Quinoa, free range organic chicken breast, local green beans and cherry tomatoes, peppers, and corn cut off the cob.

Wednesday:

Breakfast – pumpkin bread, what?!

Dinner – more leftovers! I had the remaining tuna puffs and some lentil loaf.

Then I was watching Fat Salt Acid Heat on Netflix, and the salt episode gave me intense cravings, so I ate a literal plate of rice doused in soy sauce and sprinkled with salt. Mmmmm. Don’t worry, I really do have chronic hypotension.

Thursday:

Breakfast – I’ll give you one guess.

Dinner – Lasagna! Possibly my best lasagna ever. With Nature’s Root Farm pastured mozzarella and ground beef, it was so crazy flavorful, and I added a few handfuls of spinach and parsley to the sauce so I can claim it even had some veggies.

I also learned my lesson, do not pressure can marmalade. It set up perfectly and was gorgeous, but canning means it will last longer in the pantry rather than fridge. But, it re-liquefied the marmalade, and turned it an icky brown. I’m a little heartbroken.

Friday:

Breakfast – hmmm… sensing a trend? Trust me it’s worth it. This bread is the bomb.com and I have no problem eating it daily. In fact I won’t know what to do with myself once it’s gone.

Snack – someone at work brought these and left them in the break room. Freeze dried bananas, the only ingredient is banana. They were weird, like astronaut food you convince your parents to buy you from the science center as a kid. And the packaging, for like .2 ounces of fruit, ugh. But they would otherwise be trashed, so.

Dinner – This stupid easy 5 ingredient sausage & kale soup. (Sort of this one too… just use what you have okay.)

The Weekend

So… you may or may not know that I want to have a farm someday, or a homestead. Not a secret to those who know me, I love gardening, and animals, and DIY, and eating things local, especially from my own hands. But the thing is, I live in a city. On about 1/3 of an acre, with lots of trees.

Not ideal for farming.

But I have dreams.

Been trying to convince the boy for 2 years now that we should get chickens. Yes, they are allowed. But only 6, and no roosters. Which is reasonable, as I don’t want a rooster anyways. But he is insistent that they smell and are loud and we don’t have enough space and the dogs will eat them, etc.

So… what about quail? Turns out quail are way underrated. They are tinier and quieter than chickens, you can fit way more in the same amount of space. And they also lay eggs almost daily. Yes, it will take about 4 quail eggs to equal one chicken egg. But if I can have 20 quail rather than 2 chicken… I’m ok with that.

First things first, we need to try quail eggs and see if we even like them. So I procured some quail eggs, and in my search for recipes found this one from Jo Cooks.

The eggs are the teeny tiniest most adorable things. And they look really cool in the tiny hashbrowns. And then for dinner, quail just happened to be on sale at HT!

So we are going to get to try both the eggs and the meat, and hopefully this will be the clincher in letting me get some.

Food Total: $way too much

I think the produce box this week was $28? I tried the build-your-own, with lots of fall goodies like brussels sprouts, cabbage, and cauliflower. Hooray for cruciferous veggies!

But then I went to HT, and got a lil carried away… I spent $102 there. I stocked up on several small things that all added up; EVOO cold pressed olive oil, sunflower oil, lime and lemon juice, Bob’s Red Mill spelt, pasta, the quail, biscuits, shredded cheese…

Plus, we tried Butcher Box for the first time. It was $129, for about 12 pounds of all free-range, organic, non-GMO, no-added-anything meat. We got the mixed box, so there was chicken, beef, and pork in there. I think we had a beef roast, a pork loin, 3 chicken breasts, a pound of bacon, and some sirloin steak tips. And it is delivered right to your door! I don’t love the copious amount of packaging though…

Everything we have tried so far has been wonderfully delicious. And I love that I can eat meat again! I know that health-wise, plants are king, and they will remain 80% or so of my diet. But boy, was it nice to have chicken salad, ground beef, and sausage soup again.

And I love knowing these animals were raised as they should be. With plenty of grass, sunshine, and love. If you are wanting a more ethical source for your animal protein, I’d recommend looking into them, if you don’t have a more local meat source near you.

The weekend was a blast! I got to meet and hang out with Steveark and wife, and give them a nice walking tour of Durham, to which they are thinking about moving. And they I led an actual Food Tour of Durham, made new friends, and tried all the foods. I definitely had well over 10K steps!

Sunday was a quiet home day, with lots of reading and kitchen time. I made a big spinach quiche, and some homemade rolls for the week. We also finally got house cleaners to deep clean from Bro Week, and It Is Worth Every Penny.

Monday:

Tuesday:

Lunch – I baked a few sweet potatoes in my pressure cooker and packed them with black beans, spinach and pickled onions & radish. Garlic hummus and veggies for a snack.

Wednesday:

Breakfast – fruit smoothie

Lunch – more baked sweet potato and black beans. Yogurt & moon grapes as a snack.

Dinner – Thai Carrot  & Sweet Potato soup in the pressure cooker

With some quick flatbread to eat it with. Drizzle in some hot sauce, sprinkle with salt and pepper, and a dollop of Greek yogurt. YUM.

Thursday:

Breakfast – peppers & onion 2 egg omelet w pastured eggs <3

Lunch – pressure cooker stuffed red peppers with couscous and lentils. I learned an important lesson: pressure cookers cook FAST. Ten minutes turned the peppers to mush.

Dinner – Date Night! We had red wine braised steak with roasted root veggies and listened to the storm.

Friday:

Breakfast – peppers and onions and egg burrito

The Weekend

I GOT SWEET POTATOES!!! If you follow me on Instagram or Twitter, you already know I’m pretty excited about it. There is no cooler feeling than pulling up handfuls of food you grew yourself.

I also found an amazing farm called Nature’s Roots Farm that offers tons of pastured meat and dairy options. Yes, I believe your diet should be mainly plants. Yes I think CAFOs and factory farmed meat and dairy is awful for you, the animals, and the planet. Yes I think you can survive off just plants forever, and thrive.

But I also think these are some happy cows. This is some well managed pasture. They are well-loved pigs, and a healthier forest because of it. I think this kind of meat is good for the planet, the animals, and the people who choose to eat it.

I further voted with my dollars for zero waste, Earth friendly processes by stopping by local business Fillaree for a hand soap refill! They sell soaps in glass bottles, and refill from large bulk tanks in store. It’s all natural and organic ingredients, and naturally smells fantastic (I chose the Lime Lavender scent).

Yes, it’s five dollars, for which I could get five bottles at the Dollar Tree. But I choose to support local Durham based family business, and eco-smart, waste free practices.

I also got the last of the fall garden items in the ground. Since I ripped up the sweet potato vines that were taking up all the garden real estate, I had SO MUCH space to work with. It may be a bit too late in the season for some of these, but I’m hopeful at least some of these cool-loving crops will bring me something edible.

Lessons Learned

Living holistic values can be overall more expensive, for sure. But it tastes so good! It smells great. IT FEELS AMAZING. It’s worth it.

The weekend was a good mix of relaxing and productivity and fun. I spent some time on Saturday whipping up a batch of hot sauce in green and red, along with some pumpkin cookies for this month’s food swap. I ended up with enough hot sauce that I kept plenty for us and also a bottle of each to swap.

I also finally got around to pulling up all the dead and dying summer plants from the garden. The tomatoes had been sadly neglected, as evidenced by several (at least 4) enormous hornworms I found. Like, these suckers were the size of my ring finger for sure. It was fascinating and terrifying and gross.

And did you know they are a favorite host for parasitic wasps? Yeah… Nature, you creepy.

In better news, we also attended the Eleventh Annual Pepper Fest! Held in Briar Chapel, between Chapel Hill and Pittsboro, it is a wonderful day filled with music, dancing, acrobatics, and all the pepper flavored culinary delights.

Hosting everything from cayenne popcorn to ghost chili honey to pepper steeped beers and sodas, this festival will light up your taste bud and set your face on fire. If you want it to. The extra-hot stuff is clearly marked!

Monday:

Breakfast – Peach oatmeal. I need ALL the peaches before the season is over. way too soon, as always.

Lunch – I made a triple batch again of this cauliflower barley bowl, it is so dang good.

Dinner – Tonight’s dinner got muy fan-say. I had king oysters and enoki left over from a stop at my favorite asian grocery, so I made King Oyster scallops with rice noodles & enoki base, and a vegan cashew cream sauce. Too legit to quit, the boy even said it was awesome. I could charge $60 a plate for this ish.

I also had several passion fruits from a vine I found, and tried my hand at a coulis, which turned out divine when mixed with soda water. Homemade soda this week homies!

Tuesday:

Breakfast – more oatmeal!

Dinner – This was the Food Swap, so I mostly nibbled on samples.

Wednesday:

Breakfast – Cocoa puffs lol at least I used homemade cashew milk

Lunch – red lentil dal with rice, hot sauce, crème fraîche, and a garlic curry sauce from the swap. YUM.

Dinner –Baked cod with red potatoes and asparagus. Super simple, healthy, and tasty a.f. Also the writer of the recipe is freaking hilarious and I’m now a confirmed follower of her blog.

Thursday:

Breakfast – Smoothie. I got a cherry berry mix from the store, and it has cocoa nibs… I hate that. They are chalky and crunchy and I don’t want to chew my drink thank you very much. Now I know.

Dinner – Thursday Night Co-op! Today was BBQ pulled pork with slaw and chips, and dang was it good!

Friday:

Dinner – well, this turned into one of the most frustrating days of all time when my car smelled like smoke and just stopped running… and after the third tow didn’t show up I said forget it I’m just dealing with this later, and the hubs was sweet enough to take me to dinner, where I could drown my sorrows in a fishbowl margarita! The day got much better after that…

Also the tacos al pastor were DELISH. I was in pain for hours afterwards because I was so full, but, #worth.

The Weekend

I’ll spend a big part of the weekend trying hard to stay off Twitter due to all the things I’m missing by not being at FinCon!

But there is plenty to keep me busy. Like planting all my remaining cold weather goodies like broccoli, cabbage, kale, beets, and radish.

And pulling weeds. And planting oodles of bulbs now so our yard is a riot of color in the spring. And some garlic. And cleaning, which never ends. And turning this bumper crop of Carolina Reapers into delicious, face-melting salsa.

Food Total: $28.61 + 10.81 + 31.57 = $70.99

Not bad overall. One trip to the co-op for bulk barley and more canned pumpkin, one trip to Harris Teeter for cheese and other stuff, and a Produce Box delivery.

Lessons Learned

I enjoy eating the same meals over and over (see, 3 days of cauliflower and barley!) but I also really enjoy trying new recipes (mushrooms as pasta and scallops in the same dish? why not). Both of these things help me save money in the long run, as it keeps cooking at home interesting.

But, going out sometimes is ok too. The experience, not having to do dishes, and eating foods you probably wouldn’t take the time to make yourself all make it worth it. As an occasional treat though, not a daily ritual.

Also gardening is an immensely  satisfying hobby. Even when nothing grows. Even when the only thing you’re feeding is the bugs this year. Even when it rains too much, or not at all. The feeling of kneeling in soft dirt, smelling like compost and rain and Earth, digging holes and tenderly laying baby plantlings in there with the hopes and dreams of their leafy future… there is nothing else like it.

Weekly Eating – Wedding & Hurricane Edition

Hey y’all! Welcome to the series Weekly Eating.

Here is where I’ll talk about the week’s meal plan versus reality, what we ate for the week, and how we did budget-wise. I hope it gives readers a behind-the-scenes look into our life through the lens of food, and it’s also a way to keep us on track with meal planning and grocery budgeting.

Whoa buddy, what a crazy few weeks! Just as we were recovering from the hurricane of Brofest, where 6 grown men lived in my 3 bedroom house for a week and I fed them all, actual hurricane Florence blew into town, on the eve of my brother’s wedding!

On Sunday, we finally had a quiet, empty house. We did I don’t remember how many loads of laundry, and not much else. The plan was to spend Monday and Tuesday figuring out a cleaning service to deep clean, before flying to Ohio on Friday for the wedding. Well, turned out we spent Monday and Tuesday totally rearranging our plans, and driving to Ohio!

We got the travel alerts on Tuesday morning saying flights were very likely to be cancelled, and there were no penalties for rescheduling or cancelling flights if we did so now. So we talked it out quickly over email and a phone chat, and decided to take advantage of that deal.

I was quite proud of myself over the weekend for making a really nice travel lunch for myself, since Tuesday’s are crazy days at work now. I also re-used the plastic packaging from the Starbuck’s I ended up buying last Tuesday due to craziness, which eases my guilt just a little bit.

Then we also had our planned puppy sitter back out at the last minute, which worked because we were now forced to drive rather than fly. Now the pups could come with! So we were resigned to doing the drive we swore we’d never do again. In looking ahead at the weather, and the fact that many things were already closing or preparing to close by Wednesday, we made the call to just get the F outta dodge.

I’m very lucky my workplace was supportive of anyone who wanted to ‘evacuate’ and we could choose to work from home. Hubs already works remotely, so as long as we had internet we could still get things done and get a paycheck.

This was my first experience firsthand of how people react to impending disaster. I kid you not when I say that I had to go to three gas stations on Tuesday before I found one that still had gas. And it was completely out of regular, I had to buy premium at $2.99/gallon at that. After waiting in line for like 15 minutes.

There were lines to get into the ABC store parking lot (the only places in the state to buy liquor. People have their priorities straight…).

A friend I called said they had already gone to 4 grocery stores in the area and no one had any water left. The storm was planned to hit on Friday night. This was Tuesday at 4pm.

I got home to a madhouse of activity. Washer, dryer, and dish washer are going. There are still piles of random things all over the house, the refrigetrator needed gone through to freeze or toss anything perishable, and on top of it all we are now frantically packing to run away from a hurricane and into a wedding weekend that just got unexpectedly doubled in length.

We threw a bunch of things in bags, hustled it all out to the car, and hit the road by 7.

The drive was fine at first but we started getting a little worn out by 10. We had on and off rain, with a good hour of intense downpour on a windy country road, and plenty of traffic. By 11, we decided that stopping around midnight to rest might be a good call, and finish the drive early in the a.m. in time to log in to work.

First hotel we call: sorry no rooms.

Second: all booked. Third: no rooms.

No rooms at the inns.

Any of them.

All the way through West Virginia, and Virginia, and by the time we got to the Ohio border we only had 2 more hours left to go, it was 1 am, and we said screw it let’s just get there.

People are crazy, y’all.

Anywho, then we were finally in Ohio and beyond exhausted. I got almost 4 hours of sleep. I tried.

Luckily we stayed with my sister who is wonderful beyond belief. We both managed to get actual work done, but didn’t really get off the couch all day. I did buy some groceries to fill her pantry and cooked a nice dinner of Bayou Chicken Pasta for them to say thank you.

Thursday we were a little more refreshed after a full night’s sleep. We decided to finish the 3-more-hours drive to my parent’s place where we were staying for wedding weekend because we had taken Friday off. I wanted to show hubs a little of my hometown, and it would be nice to sleep in and already be there to start the day.

Before we left, I cooked a 100% vegan meal to balance out the dairy and carb heavy dinner from yesterday 🙂

Friday I took the boy to Mill Creek Park, a gem in the middle of Youngstown. It was approved in 1891, and covers over 4400 acres of hiking and biking trails, ponds and streams and waterfalls, and gorgeous greenery.

We had lunch at Fellows Riverside Garden cafe, overlooking the lake. It was lovely, and their bagel & lox was divine.

My parents took us out Friday to a vegetarian place that they have repeatedly raved about called the Courthouse Inn & Restaurant. It’s by a couple who live (lived?) in NYC and have a very… unique sense of style. I can’t say I didn’t like it though. And the food was divine. The cauliflower legit tasted like wings, they had the best red wine I’ve ever tasted, and the sweet and spice sauce was delish. The stir fry over forbidden black rice was everything I wanted. And the carrot cake for dessert! Oh mama.

We also got to try a flight of wine at a local winery Sundog Cellars.

At my parent’s, it was pretty much just scavenge and find things to eat. But among the many meals that were “on the house”, so to speak, were the amazing rehearsal dinner that included a 16 oz ribeye steak and the cutest dirt cake of all time (the theme was fishing, because deep sea fishing is the couple’s favorite thing to do)

and the wedding buffet itself was BBQ put on by Barry Dyngles, “Authentic Southern BBQ” lol. It was all good, but the brisket! Outta this world. I wish I’d had thirds.

And of course, it just wouldn’t be a Youngstown wedding without a cookie table. Cookie buffet really. Like, over the top a lot of cookies.

On the road, I had snagged a few sandwiches from a platter that were left over, so we just snacked and drank coffee. It was worrisome seeing all the signs reporting roads closed and to “limit travel in North Carolina”. Evidently there was a tornado and also flash flooding Monday morning!

But it was all fine, and we made it home safely. The boy and I had very different ideas of what qualifies as “comfort food” when we got home haha: Supreme frozen pizza, vs all the veggies stir fry.

The rest of the week was a bit of a blur, with oatmeal frequently the breakfast of choice since it’s easy and I had some peaches to use up in the refrigerator.

Wednesday the boy wanted to get creative and cook together, so we decided to have a make-your-own-sushi night. He got the rice started and thawed some seaweed salad, salmon & shrimp and when I got home I pulled out the nori sheets and we had fun mixing and matching and rolling.

It provided about 10 rolls total, which was plenty for dinner and lunch the next day for me too.

Since I was on an Asian food kick, I also whipped up some quick  soup for lunch the next day with miso, veg broth, cilantro, hot red peppers, and enoki mushrooms. I ate that with the rest of the seaweed salad.

And of course on Thursday I went to the Durham Co-op dinner, which was sausage and peppers and onions. I met up with some friends, and met some new ones. I also got some cans of pumpkin pie filling on sale for an idea I have for next week’s Food Swap items…

And finally we ran out of almond milk, so I soaked some almonds overnight and made my first batch of homemade almond milk! So easy and so delicious. I think I’m going to try making my own more often so I can stop buying the plastic lined boxes. Plus you can customize the taste a little too, with salt, sugar, or vanilla. I need to find something to bake with the pulp now.

Food Total: uhhh, way too much

I usually keep travel and “entertainment” and groceries separate, but this trip kind of smushed everything together. We had some meals at my parents house (which obviously we didn’t pay for) and a lot of meals out provided (for rehearsal dinner and the actual wedding) but we also went out a few times, and I bought groceries twice for my sister to thank her for letting us stay with them.

Plus there’s the several coffees and sports drinks along the way to keep us awake and happy for ~20 hours in a car that I consider worth the cost in exchange for not dying or fighting.

Lessons Learned

Sometimes life can throw you curves. No matter how much you plan or think you’re ready, you just never know. We had to totally overhaul our plans and roll with it when the hurricane came to town. Luckily we were refunded for the flights, or this would be a very expensive surprise. As it stands, we did the best we could with limited time. Much of what was in the fridge could be frozen, so we didn’t waste too much. And yes we spent more than we likely would have otherwise, but life happens.

Well, Brofest week was a great success! All the guys made it in at various times on Saturday, staggered but close enough together that we had to take only one trip to the airport. It warms my heart to see the genuine affection for each other present in lifelong friends.

The whole weekend was filled with games of various kinds. Mostly video, but also console and board. A couple walks around the block were taken, and I even got them out of the house to visit my favorite all you can eat sushi place. I was quite proud of the fact that even though I was with 6 grown men, my plate stack was the tallest!

I also had a blast cooking in huge batches. I definitely have strong hosting genes from my catering and party planning relatives. I made a huge breakfast strata, apple pie oatmeal, 2 pans of enchiladas, a burrito bar, top your own pizza night, banana muffins, grilled cheese and tomato soup.

By the time we got through Monday, I think we had used up about 9 pounds of ground beef, 4 pounds pork roast, 13 pounds chicken, 4 pounds pasta, about 1 pound of rice, a whole jar of salsa, some number of cans of beans…

Monday:

Breakfast – Since it was a holiday, this is the morning when I made a big batch of banana muffins. I had just ordered and gotten a set of silicone muffin pan molds the week before, so I was super excited to try them out! They are so pretty, and worked like a charm.

Lunch – RocknRolls Sushi! Between 7 of us we nommed quite a mountain of fish and rice.

Dinner – I made pizza dough when we got back home to give it time to rise. Then I rolled out a base and set out toppings and let everyone choose their pizza. Mine was definitely the only one that had any green on top…

Tuesday:

Breakfast – breakfasts will be boring this week, because literally every single day is banana muffins!

Lunch – I also had prepped 2 more kale and chickpea salad bowls, and took one for lunch today. I felt like that wouldn’t be quite enough on its own so I also dipped into my emergency work food stash and added a can of lentil veggie soup.

Wednesday:

Breakfast – there were boys sleeping on the couch and in the other rooms, so breakfast had to be quick and quiet. Banana muffins to the rescue!

Dinner – The only dinner out so far, we all went to Tyler’s Taproom in the Tobacco campus of Durham for burgers and garlic fries

Thursday:

Lunch – my leftover pizza: marinara, thin sliced potato, kale, peppers and onions, and goat cheese

Dinner – I tried a new recipe with mac n cheese, cause I had a hankering for BBQ pulled pork mac, and OH MY GOD IT WAS AMAZING. The boy agreed, best mac n cheese I’d ever made. Of course it was like: 1 1/2 stick butter, 1 pound of 3 different cheeses, 1 1/2 pounds pasta, garlic salt…

Friday:

Breakfast – sweet potato waffle with candied pecans. Just kidding, banana muffins!

Lunch – leftover enchilada with Spanish rice and charro beans

Dinner – one of the guys shared a recipe his family makes called Bayou chicken, and everyone agreed it sounded amazing, so I picked up the ingredients at the store on the way home. I agree, it was indeed amazing!! Heavy cream will do that.

The Weekend

We had a small amount of time left with one on Saturday, so we looked at a list of things to do in the Triangle. Turns out there was a free Greek Fest in Raleigh, so we checked that out.

There was music and dancing, Greek things for sale, and of course the food (which is really the reason we went). We also tried ouzo and Greek beers. Not a fan of anything licorice so the ouzo was meh, but the beer was good.

And then they had a baklava sundae!! It’s basically mashed up baklava over ice cream, and it was seriously one of the most amazing things I’ve ever had. Of course I totally love baklava and anything with honey in it, so, unfair advantage.

Then we hung out at a bar in downtown Durham called the Atomic Fern, where they have a huge wall of board games you can borrow and play while you sit and drink. We played some we knew and tried some new ones, and now I’ve got some ideas for my Christmas list this year.

We will probably spend some time Sunday cleaning up from all the tornado of boy that happened this week, but are also planning on getting a cleaning service. But I gotta say, I’m gonna miss having everyone here.

It was really fun to have a full house, always someone to talk to, cooking in huge amounts… I can better understand now why my mom always loved hosting giant dinner parties and family holidays, and why my grandmother continued catering long into her 70s.

This is just from the couple things I picked up for the bayou chicken. Thank goodness that big $300 shopping spree was more than enough to make it through the week. The meals out are not included either, as those come from the ‘eating out’ or fun part of the budget.

Lessons Learned

I think our society has lost something primal and satisfying by no longer having large families all living under one roof, or a community of people that live near each other and all cook and live together.

The last night especially, on Friday, the 4 of us left were all cooking together. My kitchen is teeny tiny but we made it work. Someone was chopping onion, someone else was shredding the Parmesan, someone else dicing the chicken breasts.

It just felt so nice, so right, so comforting. Maybe I do need to open a restaurant someday, and create a team that feels like family.

Weekly Eating – 8/13/18

This was an overall quiet week, but it felt like it went by so fast. That’s one of the things I hate the most about getting older, time just keeps speeding up! When you’re 16 you can’t wait for 18, then you can’t wait for 21, then 25, then what? You blink and you’re 30, just knocking on the door of 40.

We did get to enjoy a work-hard-play-hard Saturday, in which we (meaning the boy) did a ton of yard work, and also (me) sat in a hammock and read a book for an hour. The boy chopped down a few more smaller trees, which we didn’t need taken down by the pros with the big guys. Now the yard is SO huge and open feeling and I love it! There are just enough trees left to hang a hammock.

Even with a couple plants lost to disease because of all the rain, the garden itself is looking green, with the sweet potato vines out of control all over the place, several enormous green tomatoes coming along (I got a late start planting this year), beans nearly done, and the cantaloupe/ melon getting bigger everyday. You can eat sweet potato leaves, they taste like spinach.

I harvested my first real edible, a lovely acorn squash! The big compost pile is doing it’s thing, and the compost bin is nearly ready to be spread over the garden in the fall. My homestead dreams are coming true. Now to just convince him that we should get chickens…

And then on Sunday we went over a friends’ house for some grillin and chillin and pool time. I brought a big kale and chickpea salad and a rustic panzanella, and both were a big hit. I love that my friends are at least veggie friendly! I did indulge in a few bacon wrapped cheese stuffed jalapenos because, duh. And they were amazing. I did get a bruise from playing frisbee, which baffled the boy. He still gets surprised with how fra-gee-lay I am.

Monday:

Breakfast – breakfast stir fry with kale, pinto beans, and veggies

Lunch – leftover salads from the weekend, kale and chickpea and a panzanella with my homemade bread

Dinner – clean the fridge meal of loaded baked potatoes and roasted veggies

Tuesday:

Breakfast – peaches & cream overnight oatmeal

Lunch – gazpacho: I took the panzanella from the weekend, which had gotten too soggy to eat, and added some water and olive oil and pureed it into a nice summer soup! Traditional gazpacho started as a bread and oil soup anyhow, the veggies got added in later over time. Turns out it’s not great cold though, I prefer it hot.

Dinner – Sweet potato chili with some homemade wheat rolls. I took the leftover loaded sweet potato from last week’s Co-op dinner (yeah they are huge, the size of your face, so I brought plenty home) and mashed it in a crock pot with an extra can of diced tomatoes and about 2 cups of pinto beans. It turned out pretty darn tasty and filling. The boy even liked it.

Wednesday:

Breakfast – lentils with potato, zucchini, peppers, and mushrooms in a whole grain wrap.

Lunch – red beans and rice with some salsa. I usually batch cook a bunch of one kind of bean each week, for use throughout the week. Then at some point, the beans really need used, and I’ll have them with some rice and salsa. It never disappoints.

Snack – hummus & raw veggies

I also stopped by a community garden on a lunchtime walk, and discovered a new thing: lipstick peppers! I thought the name was adorable, so I had to take one home. All the peppers were bumpin, so I grabbed a few kinds for salsas and sauces, along with some stevia leaves for afternoon tea.

Thursday:

Breakfast – was feeling kinda nauseated, I think I just had some oatmeal and ginger tea

Lunch – leftover summer ratatouille &  a salad. I used a mandoline to thin slice some potatoes, zucchini, and squash, and layered it with tomatoes and bell peppers and baked at 350 for about an hour. So dang delicious!

Dinner – Tonight I got weeknight fancy. I had some smoked salmon souvenirs from my trip to Alaska in the pantry, and wanted to do something with them. So I mixed one filet with mashed potatoes, and fried until crispy on both sides to make a salmon latke.

While those were cooking, I blistered some fresh green beans and grape tomatoes and baby peppers in a pan with some lemon juice, and boiled a few ears of corn. At the last minute I stirred together some plain greek yogurt, lemon juice, garlic salt, and cucumber for a quick tzatziki. All together, it took less than 30 minutes and we had a super delicious, very profesh looking dinner for a micro-date night.

Friday:

Breakfast – there are a few bananas that are getting verrry brown so it’s time to bake. I mashed one up into pancake batter. Then I chopped up 2 fresh peaches and microwaved them with some lemon juice and maple syrup. A quick blitz with the immersion blender, and we had some fresh peach sauce to put on top.

Snack – an apple &  yogurt

Dinner – Since I was fancy yesterday I went easy mode tonight, and boiled up a pound of pasta with my homemade tomato sauce.

I did get industrious in the kitchen, and made a huge batch of apple cider vinegar. I had an old gallon of cider from last fall that we never got around to drinking. I won’t waste that local apple goodness, so I boiled it to kill anything questionable, and poured it into a bunch of glass jars.

Once cool I added some ACV I already had that has the mother in it, and hopefully in a month or 2 will have a bunch of fresh ACV for cleaning and cooking. Perfect timing, since I’m almost out right now. Making your own pantry staples is so empowering, and fun!

I also shelled the half pound or so of black beans that I’ve been harvesting a handful at a time all summer. These beans were handed down from a neighbor in Connecticut, who originally brought them over from Italy I believe. This is the beauty of heirloom seeds and seed swapping, these plants have a story and a history, and one tiny seed can grow over time to produce enough food to feed you for days. It’s honestly a miracle I can never get enough of.

The Weekend

This weekend I have a friends’ 30th birthday, which is a sleepover! I’m excited to hang out with friends, and do a bunch of silly things like manicures and face masks, watch chick flicks and eat popcorn.

Another good week for food, the box delivery was amazing for the price. It included a pound of local green beans, bell peppers, more potatoes, sweet potatoes, an onion, hydroponic lettuce, peaches, apples,  corn, cucumbers, and grape tomatoes.

I did one trip to the grocery store last Sunday, because canned goods were on stock-up sale, and after working hard outside the boy needed some serious fuel. So I got a big loaf of fresh bread and layered on nearly 2 pounds of deli meat, pickled jalapenos, and condiments for him. It hit the spot. 🙂

Lessons Learned

It feels really good to make progress on creating your dream life every day. We had been wanting to take down trees since moving in almost two years ago, and now we finally did it. The big, threatening ones were taken down professionally, so I no longer worry about storms knocking trees into our kitchen or living room. And the boy got to play lumberjack and take down the smaller ones, giving him a great workout and now we have a big ol pile of wood for bonfires all fall and winter long.

And making things is always fun! Even if it doesn’t turn out exactly like you think it will or want it to, you still feel a sense of accomplishment, like, yeah I made a thing. It just feels so great to be a producer and not a consumer sometimes.

Weekly Eating – 8/6/18

Well, I survived my long drive last weekend to Ohio, and turns out it was pretty worth it. The bridal shower was beautiful, they did a great job of decorating and making the hall magical. And it was so nice to see family, I hadn’t been to town in about 2 years.

We caught up on life and things, and just being around the people who raised you is always comfortable. I also benefited, as there were several items I brought home that I previously hadn’t been able to get because I flew rather than drove. I inherited an Instant Pot my mom used once and didn’t like (hello, canning in my future!), a cast iron griddle that was too heavy for my grandma to use, a box full of mason jars, and handkerchiefs from my great grandmother.

I’m pretty excited to use some family heirlooms in my Zero Waste journey. It goes to show you that you should always ask around, old folks lived in times where zero waste was just a way of life, and they know things that we as a society have forgotten.

 

Monday:

Breakfast – potatoes, eggs, and pancakes

Lunch – chili at work. It was a crazy busy day, so I would not have been able to eat at all if a co-worker hadn’t brought chili and pretty much forced me to eat a bowl. The cornbread muffin was really good

Dinner – Chipotle! I know that’s 2 weeks in a row. I’m not mad. Does derail the diet plans a bit…

Tuesday:

Breakfast – Leftover pancake, with bacon and candied walnuts

Lunch – Baked sweet potato, black beans, avocado, and salsa

Wednesday:

Breakfast – Corn tortillas with fried potatoes, peppers & onions, and sweet potato leaves! Turns out they taste just like spinach when cooked, and we have an abundance of them right now.

Lunch – baked sweet potato with black beans, avocado, and salsa

Dinner – Slow cooker tofu masala. I chopped up onions and bell peppers, mixed garlic, ginger, tons of spices, tofu, and coconut milk and let it simmer on low all day at work. When I came home, the house smelled amazing and as soon as the rice cooker was done our dinner was ready. Ridiculously healthy, tasty, and satisfying.

I made a big batch of blueberry banana muffins using this recipe from Amazing Paleo because I want to experiment with more gluten free recipes (so I have things for next time my sister visits). I used local NC blueberries instead of nuts.

I also made 2 more loaves of my favorite white bread because we were out. It was getting late, so I decided to let it rise overnight and go to bed rather than rush it or stay up too late baking. In the morning it turned out they had risen into monster blobs!

Haha still tasty, and actually the loaves were extra light and fluffy due to the overnight rise time. I bet I could turn this dough into 3 loaves with the extra rise time.

Thursday:

Breakfast – Paleo blueberry muffins

Snack – hummus & raw veggies

Snack – my favorite chocolate PB bars, and a salad because they had a potluck at work for someone’s retirement

Dinner – Thursday night Co-op $3 dinner! Loaded baked sweet potatoes with black bean and corn salsa, vegan butter and sour cream, and cinnamon sugar & raisins.

It was a blast, and I also finally made the leap and became an owner… It’s a one time fee of $100 and you get discounts and deals all year long. This was also my first Zero Waste grocery shopping adventure!

Bringing jars and tare-ing was a little awkward at first but the cashier clearly is familiar with the process. And the per pound deals are pretty great. Sadly I did smash my biggest pickle jar, so I was quite sad about that…

Friday:

Breakfast – PBFit on fresh bread

Lunch – lunch out with a friend. I did half great with this. I remembered to bring my towel as a napkin, and even brought my own real fork for the salad. But I did not have a container, so I was stuck with a huge plastic clamshell. Baby steps, this is still progress.

Snack – fresh fruit! I cut up a TON of fruits last night, so we have a wall of containers in the fridge with local NC fruit now.

Dinner – Last of some leftover beef n vegetable soup with my homemade bread.

The Weekend

This will hopefully be a pretty chill weekend. We don’t have any real plans yet, besides several potential friend hangouts, weather permitting. I will probably do some sort of baking or sewing project, like trying a batch of tortillas or crepes, maybe some gnocchi. We are still slowly sifting through the freezer and pantry and cleaning it out, so I’m trying to come up with recipes to use what I have that the boy will also actually like and eat.

We also have a lot of yard work to do, and various housekeeping and cleaning. Vacuum, sweep, laundry, clean the bathrooms… you know, adulting things. I may make some time for relaxing, a new sewing project I have in mind, and/or taking my books back to the library too.

This is extra high because it includes the $100 membership fee to become an owner in the Durham Co-op. It is a one time fee, and without it I still only spent $90 on food this week! Yay!

Lessons Learned

Bulk shopping is super cheap, and not as hard as you may think. Any glass, or even plastic, container will do. I did learn that a wide-mouth jar is best, as the pour spouts for the bulk containers are very wide, and if your jar you’re pouring into is too narrow, you will fling pinto beans and dried rice all over the place. Don’t be that guy. Luckily my store had a handy wide mouth cup to use, to pour from the container into and then pour from the cup into my smaller containers. It’s like they’ve done this once or twice.

Having the in-laws in town was really great. I’m lucky that they are awesome and we enjoy spending time together. We explored the area, did some shopping, went for walks, cooked good food and went out a few times, and they helped us fix our fence that got smashed in a storm a few weeks ago.

I’ve also decided that I need to get back to my pre-cruise diet habits. I’ve gotten quite lazy about working out (i.e. I don’t…) and more generous in portion sizes, and it’s showing on the scale and in the fit of my pants lately. I hate it.

But it’s all my own doing.

Since I’m tracking other things anyways (like our trash) I started tracking calories on my Fitbit app again. And have been consistently over-shooting my target range by 300-500 calories… whoops. That explains a lot.

So, after we work our way through the silly amounts of leftovers (am I the only one that ends up with infinite leftovers when family comes to visit?) meals will get more boring for me.

 

Monday:

Breakfast – a peach Almond milk yogurt

Lunch – leftovers from the weekend

Dinner – shrimp garlic fettuccini with broccoli & cauliflower

Tuesday:

Breakfast – homemade wheat toast with raspberry jam

Lunch – leftover turkey gyro & fries

Snack – 1 peach, 2 matcha energy balls from a previous food trade

Dinner – Leftover sopas from the weekend. Sopas are a super easy corn pancake basically, then you top with whatever toppings you like. I had pinto beans, guac, tomato, a tiny bit of pulled pork, and lettuce.

Tonight was also a Bull City Food Swap, to which I took my pickled watermelon rind, and some fresh rosemary garlic bread.

In exchange, I brought home Cherry Rum Jam, 6 oz fresh smoked bacon, spicy and garlic dill pickles, gingersnaps, “British flapjacks” and the happy feeling of making several new friends. 🙂

Wednesday:

Breakfast – 2 slices of homemade wheat bread with 1 tbsp PB & jelly

Lunch – Big salad with avocado, cucumber, and tomato

Dinner – we went out with a couple from work to a Mexican place, and got some delicious fried things with beans and rice and all the fixings. I swear, my diet starts tomorrow…

Thursday:

Breakfast – fruit smoothie with watermelon, mango, banana, flax, and amla powder

Friday:

Breakfast – green tea matcha latte

Lunch – leftover tofu alfredo. Seriously some of the best alfredo I’ve ever had, ridiculously healthy, and tons of protein. This needs to be a staple in our meals. Also you can see the hand towel I brought to work peeking into the corner of the photo 🙂 This has been awesome to wipe my fingers after lunch, and dry my hands after washing.

Dinner – we had some people over for games, bonfire, and fun. I didn’t have time to eat dinner beforehand, so food ended up being all the snacks: pepper jelly cheese dip, chili cheese dip, raw veggies and hummus, and chips and my soon-to-be-famous Carolina Reaper Salsa! I made a new triple batch with fresh peppers, and a whole pint disappeared easily.

The Weekend

This weekend was supposed to have a food tour, but it ended up getting cancelled. That’s okay by me. We have a huuuuuuuge pile of mulch from cutting down some trees that we need to spread all around the various gardens, some weeding to do, watering, and hopefully some harvesting. And of course a big dose of relaxing.

This week we got our second delivery of a local produce box, and supplemented it with a trip to ALDI. I’m going to give it a few more weeks, and then I’ll tell you all about this service.

I adore ALDI so much for their low prices and no-frills shopping experience, but boy do they love packaging. The produce especially makes me sad now, all the things are individually wrapped.

I get that people want a sanitary food shopping experience, but why do I need peppers wrapped in plastic, apples in plastic, plastic boxes for the fruits and lettuce, styrofoam under my mushrooms and zucchini and jalapenos with more plastic wrapped around it?

I don’t.

Give me my produce naked! The way god intended.

Lessons Learned

The process of cutting down on grocery shopping waste is going to be a long one. Tortillas are a not-optional meal staple here, as the boy will wrap literally anything in one and call it dinner. And though I have made my own tortillas, both corn and flour, it is not an easy process. And without a tortilla press, I can’t get them thin enough without breaking or sticking to my counters.

Another part of the process will be having ‘convenience’ foods on hand at all times. We decided to have people over pretty last minute (like, barely 24 hours in advance last minute) so I did not have time to make things that require forethought, like homemade hummus which requires overnight soaking.

So perhaps I need to rethink the freezer situation. Once we work our way through all the things still waiting inside and empty it out more, I’m thinking a big batch cooking day is in order. That way I can stock it with pre-prepped things like rice, beans of all sorts, waffles, breads, cookies, granola bars, etc.
