Weekly Eating – 3/12/18

 

Hey y’all! Welcome to the series Weekly Eating.

Here is where I’ll talk about the week’s meal plan versus reality, what we ate for the week, and how we did budget-wise. I hope it gives readers a behind-the-scenes look into our life through the lens of food, and it’s also a way to keep us on track with meal planning and grocery budgeting.

Oh man, this week was ups and downs all over. First off, Sunday was my tea party! I had such a blast getting all dolled up, when I have a theme I go ALL IN. The group of women was a great mix of personalities and it led to some really great conversation. Maybe after a while I can convince them to talk finances? 😉

The downside of having the party hosting bug is that I go ALL IN. This means occasionally I over-do it, and I definitely over-did-it. I spent way too much on groceries, and it turned out we didn’t even use a good chunk of the food! I even tried to keep telling myself that it’s tea, not a full meal, but… I just can’t help myself!

I’m gonna blame this one on my mom, who is the world’s most awesome party planner, ask anyone who knows her (she planned my amazing destination wedding for <$10,000!). I grew up with lavish parties on a shoestring budget, and a big weakness for making sure when there are 10 guests, I have enough food to feed at least 25.

Monday:

Breakfast – Waffles with fresh berries. I made a batch of waffles on Saturday and stuck them in a ziplock for breakfasts this week. And I’m so glad it’s spring, and berries are on sale again! It is not quite blueberry or strawberry season, so I know they’re greenhouse grown or imported, but I’ve missed fresh berries!

Lunch – Leftover 5 Bean Chili with leftover koftes mixed in. The boy didn’t love these re-heated and honestly neither did I (most things are best fresh) so I just mixed them into the chili. I figured, hey, lentils and onion go great in chili! And it tasted just fine.

Dinner – Changed our minds from stuffed baked potatoes to mac n cheese! Two reasons: 1) we got a “wintry mix” of rain/sleet/snow which made for a yucky cold night and demanded comfort food and 2) I had soooo much cheese leftover from the tea party!

Made a big pot of “lazy black beans“, and then accidentally got caught up blogging and burnt the bottom. 🙁 I still put them in the fridge, we will see if they’re salvageable.

Tuesday:

Breakfast – Leftover biscuits from the tea party warmed up with some strawberry jam.

Lunch – I made this black rice and radish salad, with a few differences. I added lemon juice and zest to the dressing, laid it all over a bed of torn kale, and added thin sliced cucumbers.

Snack – Then after lunch I had a triple chocolate brownie (from last weekend’s 3/3 party) and it was heaven. If this isn’t your definition of heaven I don’t want to know how you define it, and probably don’t want to go there.

Dinner – I made some crispy baked tofu for myself and ground turkey for the boy, and we had Taco Tuesday! My tacos were a little smoky but I figured it was from the fire…

We lit up a fire in the backyard and ate outside. It was still super chilly, but really nice. I can’t wait for it to warm up so we can do this more often.

Wednesday:

Breakfast – Waffles with strawberry/OJ sauce. I just microwaved a cup of cut up berries in about 1/4 cup juice and poured it on.

Snack – Finished the beet hummus and some veggies

Dinner – Sooooooooo I made a big batch of black beans… and today I tried to eat them with stir fried veggies and rice.

I choked down part of a bowl because I’d already dished it out, but the burnt flavor was just too much. I had to throw out a whole pound of cooked black beans, and my heart broke a little  🙁

Thursday:

Breakfast –Roasted sweet potato with white beans. I loved this combo last week, but for whatever reason I took 2 bites and just could not…

Snack 1 – good thing I had a granola bar in my lunch bag

Lunch –The last bit of leftover chili mac, and leftover Black Rice & Radish Salad. I’m glad I had double the lunch since I had such a lackluster breakfast appetite.

Snack 2 – I did also make a bunch of kale chips yesterday, so I packed up the half I didn’t immediately inhale for an afternoon snack

Dinner – I had no idea what to make, so I made refrigerator soup! It’s basically when you just pull everything out of the refrigerator and toss it together with some water to make soup. I added the sweet potato and white beans I couldn’t finish, plus some rice, some of the tofu, and other veggies.

It’s different every time, and a great way to use up bits of leftovers so you don’t have to throw them away. The boy said that with extra chilies and hot sauce it wasn’t even that bad!

Friday:

Breakfast – Great Grains cereal with Almond milk. Yet again, a cereal the boy requested, and I’m the one eating it. 😀

Lunch – In cleaning out the fridge, I found out that I’d hidden a few pieces of the spinach artichoke pizza! So I dug those out to finish it off. I also had 2 lonely beet veggie burgers hanging out, so I nommed those too.

Things came up at work, so by the time I got back to my desk it was after 3pm. I was ravenous, and never more happy I had double the lunch than this moment.

And now I can almost see the back wall of the refrigerator! Time to cook something…

Dinner – Stir Friday! I made my oven baked tofu and topped a stir fry of frozen veggies and extra odds and ends for a tasty, frugal meal.

The Weekend

My sister and her friends were in Florida this week for their spring break. Since I’m halfway-ish on the drive back to Ohio, they asked to stay at our place to save on a hotel. Of course I said sure! So we will have 5 20-somethings in our house on St. Patty’s Day! Hahaha we will see how us old folk fare, if we can still hang. 😉

Plans beyond Saturday morning? Sleep. Sit. Read. That’s pretty much it. 🙂 Well, maybe start some sweet potato slips.

Ugggggggghhhh… this was a death by a thousand cuts. No one thing was super expensive or put me over budget, I just went a little party planning crazy.

When I was looking up tea party recipes, I kept finding more and more sandwiches and sweets that I wanted to make! I ended up with five different kinds of finger sandwiches! FIVE!

But… you know… they were all delicious, and everyone seemed to really like trying one of each kind to see which was their favorite. So I can’t be too mad. At least I had plenty of tea so I didn’t have to buy any of that.

Harris Teeter has email coupons just for eVIC card holders. I always check because there is usually at least one free or very marked down item that we use. This week the Fage Greek yogurt and cream cheese were totally free. Which is great, because the finger sandwiches needed cream cheese.  🙂

I admit, the blue agave syrup was a total splurge. We have started using agave as our main sweetener for tea, oatmeal, etc, rather than sugar. This was a HUGE bottle, marked down $3. So I went for it.

At Kroger, they do Freebie Friday deals, and I usually wait a few weeks to get several at once. The tortilla chips and Clif bar were included, and I would not have bought them if not free, but they didn’t ring up.

I noticed once I got home and was filling in my spreadsheets… but is not quite $3 worth going back to the store to fight over? Probably not. Just very annoying.

 

Lessons Learned

More ugggggh… I hate food waste! Hate it. And having to toss a huge batch of my favorite frugal food (black beans) kills me. Plus it throws off my plan of eating black bean breakfast tacos, and beans and rice for lunch. So this week was a bit of a scramble. I plan to do better next week.

I’m considering doing intermittent fasting for a bit, due to my weird dislike of breakfast lately. I used to be a devoted fan of breakfast for many years. Now it seems like nothing sounds good, and even when it does, I take a few bites and then am over it. I don’t want to waste food, that’s for sure. So maybe my body’s just changing in my 30s, and trying out not eating until a little later in the day will help.

Monday:

Breakfast – I had a few applesauce muffins still left from making friends with the neighbors, and half a raspberry NOOSA yogurt

Lunch – the rest of a pasta salad I made from last weekend’s Triangle on FIRE Meetup, and a mason jar salad

Dinner – Minestrone Soup. I had this bag in the freezer from my batch freezer meal prep session a long time ago.  I defrosted it overnight, and then tonight just put it in a pot with the broth from the rib bones last week until boiling.

I was a little worried that the noodles would be mushy and gross from being frozen and then thawed, but it actually turned out to be the perfect consistency. This was a really tasty batch, I would use this recipe again.

Snack – I had a little packet of a nut butter sample in my desk drawer, combined with some pretzel crisps I keep as well it made a perfect little afternoon pick me up snack

Tuesday:

Breakfast – applesauce muffins 

Lunch – the last of the Buffalo Chicken Potato Bake leftovers

Dinner – I had a quick burrito before running off to the October Bull City Food Swap. This month’s swap was awesome, there were some really outstanding goodies. Especially the homemade smoked sausage made by my new best friend!  😉

I had brought several items for trade, including some marigold seeds from my yard, hickory nuts (we have 3 trees, and more nuts than we know what to do with) and some homemade garlic rosemary bread. The bread was a hit, as baked goods usually are. I think I found my niche, as you can trade for really good items with homemade bread.

I got lots of caramel corn, jerky, baked goods, fresh pasta, and some pesto. Luckily, pesto was already on the menu for tomorrow! I had also taken out a giant pack of chicken quarters I got on crazy clearance a few weeks ago.

It was $4.44 for 6 leg quarters! That is a lot of chicken for less than a buck a piece. I roasted them up on a sheet pan to keep in the fridge for the boy to snack on whenever he’s hungry this week.

Wednesday:

Breakfast – peanut butter granola bar

Lunch – leftover minestrone soup

Dinner – Pesto pasta, using up the fresh pasta from the Food Swap and the rest of some frozen blender pesto I’d made when the basil was done for the season. So garlicy and delicious!

Snack – a mini snicker bar at work

Thursday:

Breakfast – egg sandwich with 2 slices of my garlic rosemary bread

Lunch – a chicken quarter with some brown rice and edamame

Dinner – Beef roast in the slow cooker. I just chopped up some carrots, celery, and potatoes and tossed them in with a beef roast from the freezer. I paid about $10 for a ~3 lb roast, which is not bad

Luckily I have a programmable slow cooker, so I could set it on high for 4 hours, and then it automatically switches to “keep warm” setting so it doesn’t burn. It was a perfect meal for a chilly fall evening. I love that it is just starting to turn kind-of-cold now.

Friday:

Breakfast – I bought a pack of white corn tortillas with the idea to make quick breakfast burritos this week. They were delicious, but the tortillas fall apart and are way too flaky to eat in a car. Flour tortillas from now on.

Lunch – Beet and Goat Cheese Salad with a coworker. I did spend about $7, but this is my first lunch out all month, and the salad was really delicious. No regrets.

Dinner – Burritos, because there is never a bad day for a burrito.

Snack – chocolate peanut butter granola bar

The Weekend

This weekend is pretty exciting, we have a housewarming for a neighbor on Friday and will take a bottle of red wine over to say welcome to the ‘hood. They are about our age, so I’m hoping for a future friendship there. We got invited because I am the only one who has come to say hi since they moved in! It pays to be friendly.

Saturday is the NC Wine Festival in Raleigh! There will be 36 wineries, all from North Carolina, and all tasting is included. There will be food places too I believe, but you probably have to pay. We plan to have a big lunch, and hydrate well prior to going. The tickets were my 1-year ‘paper anniversary’ gift.  🙂

And then Sunday will be recovery and chores. Sleeping in, raking leaves, doing dishes and laundry. You know, all the fun adulting things you have to do. But probably a healthy dose of video games thrown in too.

Food Total: $63.85

This week I am quite pleased with groceries, especially since I was going for super healthy and lots of produce. Most people see winter as the time to gain a little “insulation”, but since we have plans for the holidays which may involve a swimsuit, I’m actually cracking down on my diet, meaning even more produce than normal, and hopefully lower volumes of carbs and dairy. We will see how the next few months go.

I did find some great deals, for example grass fed free range bison, which is absurdly expensive, was marked down nearly half off. It is still shockingly expensive to me, but we do love the flavor and so since I was far within my budget I picked it up to have as a treat at some point. Eggs were on super sale, at 79 cents per dozen, so that will likely be my go-to snack this month. And I found marked down crab meat for 0.99, so I’m going to try some new recipes.

Lessons Learned

This week really reinforced the benefits to eating leftovers. Every dollar spent on food is a sunk cost, so not eating leftovers and throwing away food is like throwing dollars in your trash can. I’m so glad hubs and I both don’t mind, and in some cases prefer, leftovers. I even plan many meals to make more than we can eat in one day, so that we have easily reheatable meals and snacks around.

I also am finding that I have way more food than I think we do! Just pulling most of our meals from the freezer this week, has helped tremendously in keeping overall cost down. And those stocked freezers come from picking up things on sale as I see them, then putting them away for future meals. The flexibility of being able to put together a meal from pieces picked up over time is a skill which can be developed by practicing over time. I’d highly encourage it!

I spent part of the weekend making ahead breakfasts and lunches by making a pitcher full of smoothie and putting it in mason jars, as well as mason jar salads. That way all I had to do was grab a jar from the fridge every day and lunch was ready to go! It is a great way to save money and time (buy in bulk, make 5 days lunch at once) and to get my daily greens & veggies.

My aunt and grandmother were also in town all weekend and through Wednesday, so we got to hang out a lot. We went to an Oktoberfest in downtown Durham, played games at the Atomic Fern, sampled all the things at the 10th Annual Pepper Festival, and explored Lafayette Village in Raleigh. It’s always fun spending time with family, but even moreso when ALL your family lives 1000 miles away, and you only get to see them a few times a year. 🙂

Side note, holy what it’s October?! Ok, Bye 2017…

Monday:

Breakfast – Toast with peanut butter. Not gonna lie, a cold smoothie just didn’t sound good, and whole grain toast with peanut butter is one of my top easy go-to breakfasts.

Lunch – Mason jar salad. Super delicious, healthy, and surprisingly filling. The trick is to put the ‘heartier’ things on the bottom, like cut carrots, broccoli, and olives, and then things like peppers/ cheese/ beets/ red cabbage and delicate greens on top. Come lunch time, just dump it all into a bowl!

Dinner – We were supposed to go to Myrtle Beach today, but my grandmother wasn’t feeling up to the long drive. So instead we took dinner to them! Hubs made some chicken thighs while I was driving home, then I fried up some chopped cauliflower and baked some biscuits. Paired with a simple salad, it was a perfect, relaxed dinner.

Tuesday:

Breakfast – oatmeal from my desk oatmeal jar, another easy breakfast go-to that’s healthy and frugal

Lunch –  I took a half day in lieu of Monday, and we went to CowFish in Raleigh! They were both amazed at the wacky decor, and the crazy fusion menu. This time I got The Big Squeal. With a bison patty, BBQ pulled pork, fried onion rings, bacon slaw, and chipotle aioli, this massive beast was a big, delicious mess!

The burger was basically bigger than my head, and those sweet potato fries are SO GOOD. My aunt got the Hamandegger, which features a burger layered with a fried egg, cheese, and sliced ham. It looked quite delicious, and there wasn’t much talking once the burgers showed up, so I’m thinking it was good! And Gram got the plain baby burger with Swiss & tomato. We had to pay extra for the cheese, by which she was outraged. It was kinda funny.

Dinner – We had a good time shopping all afternoon in Raleigh, and were too tuckered out to deal with going out again. Plus cooking at home is fun for me, and way cheaper! We stopped at a Kroger to get all the ingredients for our family’s famous Fettuccini with shrimp, broccoli & carrots.

Snack – Oh, and while we were out we found a place called Duck Donuts… and holy crap are they good! It might be worth driving the 30 minutes to get these made-fresh-when-you-order, totally customizable doughnuts! The maple bacon was AHmaZING.

Wednesday:

Breakfast – smoothie in a jar

Lunch – salad in a jar

Dinner – This was their last night in town, so we went big for seafood at Full Moon Oyster Bar. This was a fun spot, with open seating, you just walk up to the bar and pick a spot. They have dedicated “shuckers” to get your fresh oysters to you and take your order. We had a bunch of apps and dishes, plus Wednesday is half off wine bottles! The seafood pasta was oh so tasty.

Snack – peanut butter cookie

Thursday:

Breakfast – raisin oatmeal at my desk

Lunch – mason jar salad

Dinner – I had a great time making pepperoni rolls 3 ways! As rolls, as biscuits, and as sandwiches. I got most of the ingredients on sale, which made total ingredients cost about $8 for 2 rolls, 16 biscuits, and 10 sandwiches. With even more pepperoni leftover to freeze.

I made 4 big batches, so that we can take some extra with us this weekend, and freeze a few for later too. They make great snacks, and keep hubs full when its time for “second dinner”.

Snack – 2 tbsp Ranch & raw veggies

Friday:

Breakfast – Mango Peach Smoothie. We finished all the pre-made smoothie jars, so I just whipped this up in the morning with canned peaches and frozen mango and split it with hubs. It was quite delish!

Lunch – Mason jar salad. I was very pleased with how well these held up all week long. I was a little concerned that the salad greens would get wet and mushy, but they were still crisp by Friday after making the jars on Sunday. This is a weekly trend I plan to continue. The Green Goddess was probably my favorite dressing this week too.

Dinner – Leftovers buffet! We are headed out of town this weekend, so we need to finish up anything that won’t last until Monday.

The Weekend

This weekend we are heading to a friends’ cabin in the mountains! It will be a mix of people we know and people we don’t, with a dozen of us and five dogs in the mix. There will be mostly hiking and game playing, we are taking turns making meals by couple, and there will likely be no or spotty cell phone reception. All in all it should be a super fun, disconnect-from-the-world, very frugal weekend of making new friends and getting closer with friends we already have! I’m very much looking forward to it.

Total: $97

My goal is to keep this number under $100 all the time, and eventually get down to $75/week for food.

We spent a little more than usual this week due to family being in town and eating out more than normal, plus extra groceries to cook for 4 a few times. Totally worth it though, to spend time with family! Plus they paid for eating out far more often than we did, so it was an overall win for sure!

Lessons Learned

Make-ahead smoothies and salads are AMAZING! This is a super quick prep that saves me SO MUCH TIME in the mornings. I get together the jars and ingredients, toss them in layers, using about 15 minutes. Then all I do is grab a to-go jar in the morning and toss it in my work bag. Maybe I can actually get around to doing yoga in the mornings now with all this free time?!? (HaHa)

Also, eating out a lot makes me feel like blah… I don’t regret it, the time spent with family is totally worth it. But after so many years of cooking for myself at home, I can really feel the difference. First of all, the portions are insanely huge compared to what I eat at home, which is sort of a perk because I almost always have leftovers. But then that messes up the meal plan a little bit, by having ‘extra’ meals around.

And then the restaurant food is saltier, fattier, and generally lacking in vegetables compared to what I would cook. This makes me not feel my best for days afterwards. Good thing weeks like that are only occasional treats. It blows my mind that SO MANY Americans live like that, on a daily basis. I couldn’t do it.

Weekly Eating #4 – 7/10

Monday:

Breakfast – yogurt parfait with frozen strawberries & cherries & a crushed up Nature Valley Oats & Honey bar

Lunch – leftover stirfry

Dinner – BBQ pork ribs & leftover mashed potatoes. I grab boneless ribs anytime I see them on clearance, and keep some in the freezer as a special treat, these are one of hubby’s absolute favorite things. I defrost them overnight, then boil in some chicken stock, then sear them in the pan. We then eat them slathered in BBQ sauce, and ended up so messy by the end that I didn’t get a photo.  🙂

Tuesday:

Breakfast – KIND bar

Lunch – leftover salmon summer salad from the weekend’s dinner party. This stuff is so darn good I swear I could eat it almost daily.

Dinner – Pork & White Bean Soup in the slow cooker using the broth from yesterday’s ribs. It was so simple, but so tasty! Served with biscuits from the freezer.

Wednesday:

Breakfast – chocolate PB oatmeal: funny story. This was actually a rescued “Frugal Fail” to borrow a term from Mrs. Picky Pincher. I meant to try a recipe for no-bake energy bites. It called for oats, and PB and honey. But I only had honey PB (twofer, awesome!) and steel cut oats (They’re the same thing, right? Wrong.)

So I happily measure and mix, convinced this is a perfect quick breakfast choice. Oh, by the way, this is at 7am, and I need to leave at 7:30… Well, first, it wouldn’t all stick together. I tried using more PB, and got it wet enough to stick. But it still won’t form a ball, it was like, wet sand. Steel cut oats are cut into teeny tiny pieces, and evidently, do not make no-bake balls well.

So I tried baking it. I know, that defeats the purpose of a “no-bake” recipe. But I figured, maybe I could at least turn them into bars and salvage this. Now it is 7:20… And I try to cut a bar… and it falls apart instantly. Okay, clearly, this is not working. Do I throw out a whole 8×8 pan of oats and peanut butter and flax?

No way!

I think… well… it’s still oatmeal. May as well throw it in a jar, and pour some milk over it. Still warm from the oven, the chocolate was melty and quickly turned it into chocolate milk, with a slight peanutty flavor. Turns out, this was pretty great! Hooray!

Frugal fail turned into something edible.

Ahhhh, the sweet taste of success.

Thursday:

Breakfast – chocolate oatmeal creation

Lunch – black beans & rice with salsa

Snack –  These Amazing Date Cookies!

Dinner – baked potato soup. I used some leftover mashed potatoes with frozen chicken stock and we stirred in a tbsp plain Greek yogurt to make it creamy, with bacon and cheddar cheese on top. We ate it on the front porch while watching a heck of a thunderstorm.

Friday:

Lunch – last of my salmon & couscous salad. I used a small salad container and a leftover ranch dipper to be all cute too!

Dinner – leftover buffet!

The Weekend:

My plans for the weekend include rooftop yoga followed by the Farmers Market, then a quick healthy lunch of some kind of salad, and figuring out what to make for dinner. I’m sure we will have loads of fresh produce by then, so I’m thinking a vegetable lasagna, summer veggie pasta, or kebabs are imminent.

Then I will start a new batch of homemade yogurt, and homemade kombucha. I also think I will try to make ahead some mason jar meals like yogurt parfaits, overnight oatmeal, and salads in a jar too. I’m going to the beach next week to celebrate my mom’s birthday (SO EXCITED!) so I want easy meals to give me more time to pack and plan, and then I need to plan ahead some freezer meals for the hubble bubble so he doesn’t starve.

Total:  $77.60

My goal is to keep this number under $100 all the time, and eventually get down to $75/week for food.

2 trips to the store (Kroger & Harris Teeter) plus the local farmers market. The weekend Farmer Market trip will be included in next week’s total.

Lessons Learned

I did a great job at the store this week! Nearly to my $75/week goal, and that included all our staples, plus a few last-second items I asked the mister to grab prior to our dinner party last week, plus the farmers market splurge on Wednesday. Aw yeah!

And I learned that sometimes, recipe experiments don’t turn out the best. But that’s okay, we all make mistakes sometimes. Luckily, it wasn’t so bad of a fail, I could still eat the oatmeal. It was just… less than pleasing in texture, shall we say?  😉

Weekly eating #2 – 6/26

 

Hey y’all! Welcome to the series Weekly Eating. Here is where I’ll talk about the week’s meal plan versus reality, what we ate for the week, and how we did budget-wise. I hope it gives readers a behind-the-scenes look into our life through the lens of food, and it’s also a way to keep me on track with meal planning and grocery budgeting. Feel free to share your wins and lessons in the comments below!

Monday:

Breakfast – a piece of spinach/zucchini strata I made on Sunday, half an heirloom tomato with salt, and a handful of blueberries from the Farmers Market

Lunch – the last leftovers of the One Pan Buffalo Chicken Potato Bake

Dinner – Burgers (from the freezer) with fresh tomatoes, roasted cabbage quarters and zucchini/sweet potato fries

Snack – cut up honeydew and cantaloupe from Farmers Market

Tuesday:

Breakfast – homemade KIND nut bar

Snack – coconut almond yogurt flip

Lunch – free Margarita pizza at a work event!

Dinner – BBQ pulled pork sandwiches, roasted cabbage, & corn from the Durham Farmers Market

Wednesday:

Breakfast – homemade yogurt  with blueberries, walnuts, & agave

Lunch – leftover white fish over brown rice with homemade salsa on top & sauteed zucchini

Dinner – hamburger stew in the crockpot (freezer meal!)

Snacks – homemade KIND nut bar

Thursday:

Breakfast – homemade yogurt with a cut up fresh peach, walnuts, and agave

Lunch – black beans & rice with salsa from Farmers Market. It was so tasty last week, I had to make it again! This may be a new favorite.

Dinner -Stir Friday! (What?!) Chicken fried rice stir fry with zucchini, onion, and cabbage. We ended up planning dinner with friends for Friday, so today’s planned mac-n-cheese got the boot, and we moved Stir Friday to Stir Thursday! … Stirsday?

Friday:

Breakfast – smoothie: 2 bananas, 2 peaches, 1 cup of homemade yogurt, OJ, and protein powder. MAN, fresh peaches really make a smoothie sing! This may be my favorite breakfast all week. I slurped it down so fast I didn’t even get a picture  😉

Lunch – baked sweet potato with black beans and salsa, blueberries

Dinner – pasta & meatballs, with garlic bread & salad

Snack – hummus with carrots & cucumbers

The Weekend:

Breakfast – 1 egg + 2 egg white omelet with leftover zucchini & sweet potato from Monday & tomato

Brunch – Dim Sum! After Saturday morning rooftop yoga (yup, I’m totally hooked on this now), we went to Hong Kong Dim Sum in Durham. Cozy, quaint little place with deeeeelicious food!

Dinner – Leftover pasta & roast chicken. Will shred the rest of the meat for next week, and make stock in the crock pot overnight.

I’m also using the whey from making my own yogurt to attempt my first ciabatta bread! We will see how that goes…  Sunday will be something with the leftover chicken most likely, and depending on weather a soup or a big salad.

Total:  $33.62

Lessons Learned

We did stay pretty close to our meal plan this week, which is great! I see meal plans as a simple guideline, but we often switch things up, like on Thursday we had mac n cheese on the plan, but swapped stir fry to make room for a different dinner Friday. I also try to leave at least one night a week for a ‘leftover buffet’ or take-out meal.

I spent very little at the store this week, I was quite proud of myself for sticking to the list and the budget! I have a bad habit of being unable to help myself around sales and produce… but I did it! And at the farmers market, I did spend $5 on fresh heirloom tomatoes, but by golly that is a worthwhile expense. The little yellowgold cherry tomatoes were so sweet and perfect I nommed nearly half the container at my desk before I even got them home.

Although…. confession time. ALDI had a 3L box of summer sangria on sale for $9.99 this week! I couldn’t not buy it, so $20 of that total may have been wine. And I don’t regret it one smidge, it was DELICIOUS! I need like 20 more haha
